LEMON BELGIAN WAFFLES WITH BLUEBERRY SYRUP
Soft and tender waffles with a delicious bright lemon flavor. They're perfectly paired with the finishing touch of sweet blueberry syrup.

- Preheat a Belgian waffle iron (and butter if necessary). In a mixing bowl, whisk together flour, baking soda and salt. In a separate large mixing bowl, whisk together buttermilk, milk vegetable oil, applesauce, 2 egg yolks, sugar, lemon zest and lemon juice. In a small mixing bowl, using and electric hand mixer, beat 2 egg whites until soft peaks form.
- While whisking, slowly add flour mixture to buttermilk mixture and whisk just until combine (don't over-mix, batter should be slightly lumpy). Using a rubber spatula, gently fold egg whites into batter just until combine. Cook batter (mine fit about 3/4 cup) on waffle iron according to manufactures directions, until golden (cooking time will vary depending on brand and model of waffle iron). Slowly lift lid when removing waffle from iron so waffle doesn't split. Serve warm with Blueberry Syrup, Vanilla Cream Syrup, Maple Syrup or butter and powdered sugar.
- Lemon Poppy Seed Variation: simply mix in 3 Tbsp poppy seeds into flour mixture and prepare as directed. I would recommend serving them with Vanilla Cream Syrup and if you want to make it Lemon Vanilla Cream Syrup just add a little bit of lemon zest and a squeeze of lemon juice.
BELGIUM RASPBERRY WAFFLES WITH LEMON RASPBERRY SYRUP

- To make the waffles, place the the flour, baking powder, icing sugar, oil, milk, vanilla and egg yolks in a large bowl.
- Mix slowly until well blended.
- In a medium size bowl beat the egg whites and salt until they make soft peaks.
- Gently fold the egg white mixture into the batter, being careful not to over mix.
- Now for the last step gently fold the fresh raspberries into the batter.
- When your iron is heated, pour the batter onto the greased waffle iron and bake for 3 - 4 minutes, how long will depend on your waffle iron.
- The waffles should be crisp and golden brown when done.
- Keep the waffles warm in a low oven until ready to serve.
- To make the Raspberry Lemon Syrup, add the lemon juice, maple syrup, water, powdered sugar, cinnamon and allspice together in a small pot.
- Mix well and bring to a rapid boil, lower heat and simmer uncovered until ready to use. Stir occasionally.
- Just before serving the pancakes add the raspberries to the syrup.
- Plate the waffles, add some whipped cream if desired and drizzle with the raspberry lemon syrup.
LEMON WAFFLES
Waffles are definitely a weekend breakfast treat - this recipe comes from Christine Cushing. Adding the softly whipped egg whites to the batter will make the waffles nice and fluffy. - Sift together the flour, baking powder, baking soda and salt into a bowl.
- Stir in the lemon zest.
- In another bowl, whisk together the milk, melted butter and the egg yolks until smooth.
- Make a well in the dry ingredients and gradually stir in the wet until just combined.
- Do not continue to stir.
- Cover with plastic wrap.
- Let stand covered, about 30 minutes.
- Preheat waffle iron according to manufacturer's instructions.
- In a clean, dry bowl whisk the egg whites until fluffy.
- Gradually add the icing sugar while continuing to beat until whites hold soft peaks.
- Fold gently into batter.

- In a large mixing bowl, prepare your favorite waffle mix according to package directions.
- Preheat waffle iron according to manufacturer's guidelines. Lightly spray the waffle iron with nonstick spray. Using a 4-ounce ladle or 1/2 cup measure, ladle batter for waffle into the iron, spreading evenly. Close the waffle iron and cook for 2 minutes or until waffles are golden and the steaming stops. Repeat with remaining batter. Serve with Whipped Cream and Blueberry Syrup.
- In a small saucepan over medium heat, combine butter, blueberries, sugar and lemon. Stir gently until the berries break down and release their natural juice. The consistency should remain a bit chunky. Serve hot over waffles.
- Using a hand-held electric beater on high speed, beat the cream in a chilled stainless steel bowl until it begins to thicken.
- Add sugar and vanilla. Continue to beat until the cream forms stiff peaks. Refrigerate until ready to use.

- Combine flour, salt, baking powder, and nutmeg in a bowl; make well in center; set aside.
- In another bowl, combine buttermilk, lemon zest and juice, blend well.
- Add egg yolks to buttermilk mixture and mix until well incorporated.
- In a clean bowl (free of any grease) beat egg whites at low speed until they begin to froth.
- Add cream of tartar and beat at high speed until glossy, stiff peaks form; set aside.
