CREAMY LEMON PASTA FOR TWO

Creamy Lemon Pasta for Two image

Provided by Megan Mitchell

Categories     main-dish

Time 25m

Yield 2 servings

Number Of Ingredients 13

Kosher salt and freshly ground black pepper
8 ounces short pasta, such as Gragnano or rigatoni
8 ounces mascarpone cheese
2 tablespoons unsalted butter
1 large organic lemon, zested and halved
1/2 cup freshly grated Parmesan cheese, plus more for garnish
Basil leaves, for garnish
Crushed red pepper, optional
1 1/2 cups broccoli florets or 6 ounces baby spinach
1/2 cup pesto
5 to 6 slices prosciutto, torn into bite-size pieces
One 8-ounce ball burrata, torn into bite-size pieces
8 ounces grilled shrimp

Steps:

  • Bring a large pot of water to a boil. Season liberally with salt and cook the pasta per the package directions until al dente. If using broccoli, add to the pasta 2 minutes before it finishes cooking. Drain, reserving 1 cup of the cooking water.
  • While the pasta cooks, make the sauce: Heat a medium skillet over medium heat. Add the mascarpone, butter, lemon zest and a sprinkle of salt and black pepper. Stir together and once it simmers, reduce the heat to low to keep the sauce warm without reducing it. Add the spinach, if using, and cook until wilted, 1 to 2 minutes.
  • Add the pasta (and broccoli, if using) to the sauce but do not stir. Squeeze the lemon juice all over, then stir together and add in the 1/2 cup Parmesan. Cook until thick and creamy and all of the flavors absorb, 1 to 2 minutes. If the pasta looks too dry, stir in a little of the reserved cooking water.
  • Divide the pasta among bowls and drizzle with pesto, if using. Top with the prosciutto, burrata or shrimp, if using. Garnish with basil leaves and Parmesan, sprinkle with crushed red pepper, if desired, and serve immediately.

LIGHT LEMON BASIL PASTA

Light Lemon Basil Pasta image

Make and share this Light Lemon Basil Pasta recipe from Food.com.

Provided by sofie-a-toast

Categories     Lunch/Snacks

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 lb angel hair pasta
1/2 onion
4 garlic cloves
20 basil leaves
3/4 cup fresh parmesan cheese
2 (14 1/2 ounce) cans chicken broth or 2 (14 1/2 ounce) cans vegetable broth
1 tablespoon cornstarch
2 tablespoons olive oil
fresh pepper
3/4 cup white wine
1 lemon

Steps:

  • First, finely chop about half a large onion and mince or press about four large cloves of garlic (organic, of course).
  • Second, take about a handful of organic basil (I hate to admit I don't wash this because it is harder to mince) and then finely chop the basil.
  • Third, shred about half to three-quarters cup of parmesan reggiano.
  • Fourth, start a pot of boiling salted water.
  • Open two cans of chicken broth (I like Ralphs because it is less sodium than Stater Bros.).
  • Place about one large heaping tablespoon of cornstarch in a short water glass or coffee cup.
  • Saute onion only over medium heat in about 2 tablespoons of olive oil. Add about three or four shakes of ground white pepper (maybe a bit more if you like it spicy). After about two minutes of saute process, add garlic and continue to stir and heat for another one minute. This brings out flavor of garlic. Then add about 3/4 cup of white wine and raise heat to "high" to deglaze the pan. Boil to reduce the liquid until it is nearly gone.
  • Add one can of chicken stock, keeping heat at high. Stir the pan to make sure that all accumulated flavor on side of pan is combined with liquid. Boil this down by about half. Then add most of the second can and boil down again by about 1/3.
  • While the sauce is finishing, add pasta to boiling water.
  • Using the balance of the unused can of chicken stock, slowly pour into the glass of cornstarch stirring to blend the powder into a paste and then add more stock to make it a thick cornstarch liquid. Add this liquid slowly to the sauce, stirring in to incorporate about 15 seconds after pouring. Continue to heat on medium heat until sauce has thickened slightly (won't be much thicker than a heavy liquid) - this won't take much more than 45 seconds. Turn off heat. Add juice from about 1 lemon, more or less if desired. Stir to blend lemon. Set aside.
  • Drain pasta. Place in bowls. Add basil to each bowl of dry pasta. Mix. Add a bit of sauce. Mix. Then add a bit of cheese. Mix. Add more sauce and cheese and fresh ground black pepper on top.

85g frozen pea
85g frozen broad bean , podded if you like

3 tbsp light mascarpone
½ small bunch mint or basil leaves, shredded, plus a few whole leaves to serve

Steps:

  • Cook the pasta following pack instructions, adding the vegetables 4 mins before the end of the cooking time, and the prawns just as the cooking time is up. Reserve a mug of the water, then drain everything and tip back into the pan.
  • Tip in the lemon zest and juice, and the mascarpone, and heat through, adding enough of the pasta water to create a creamy sauce. Scatter in the shredded mint or basil, a good grinding of black pepper and a little salt. Divide between 2 warmed pasta bowls, scatter over the herb leaves and serve with lemon wedges.

PASTA WITH LEMON AND BASIL

Pasta With Lemon and Basil image

This recipe comes from Jamie Oliver by way of Blake Royer at Serious Eats. http://bit.ly/hM0LW9 You could add a touch of decadence with a little bit of marscapone cheese, if you liked. Long pasta shapes (spaghetti, linguine, fettucini, etc) are probably best for this sauce. Since the oil is barely cooked and a prime ingredient, use the best quality extra-virgin olive oil you can find.

BAKED LEMON-BASIL PASTA

Baked Lemon-Basil Pasta image

I was a little unsure about the idea behind this pasta when my wife ordered something similar in a restaurant. But we both loved it and knew that we had to go home and try to replicate it. Here is what we came up with!

Provided by Brennan Cartwright

Categories     Main Dish Recipes     Pasta     Chicken

Time 1h

Yield 6

Number Of Ingredients 14

3 cups bow tie pasta
1 skinless, boneless chicken breast half - cut into bite-size pieces
1 teaspoon lemon pepper
¼ cup margarine
2 tablespoons olive oil
2 cloves garlic, minced
¼ cup white wine
2 cups sour cream
1 tablespoon chopped fresh basil
1 lemon, zested and juiced
¼ cup grated Parmesan cheese
¼ cup grated mozzarella cheese
1 tablespoon chopped fresh parsley
½ cup torn fresh spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the bow tie pasta; return to a boil. Cook, uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 10 minutes. Drain.
  • Preheat oven to 375 degrees F (190 degrees C). Season chicken with lemon pepper.
  • Melt the margarine with the olive oil in a skillet over medium heat; cook and stir the chicken pieces until no longer pink in the center. Remove the chicken pieces, and place them in the bottom of a casserole dish.
  • To the same skillet, add the garlic, white wine, sour cream, basil, lemon zest, and 1/2 of the lemon juice. Bring the mixture to a boil, stirring constantly. Remove the skillet from the heat; stir in the pasta. Spoon the pasta and sauce mixture over the chicken. Cover with foil.
  • Bake in the preheated oven until heated through, about 15 minutes. Uncover, sprinkle evenly with Parmesan cheese, mozzarella cheese, parsley, spinach, and drizzle with the remaining lemon juice. Bake, uncovered, for 10 minutes.

RACHAEL RAY'S LEMON-BASIL PASTA

Rachael Ray's Lemon-Basil Pasta image

In her cookbook Express Lane Meals, Rachael Ray originally had this pasta paired with fillets of sole. Thinking it would be good just as a pasta dish, I posted this for safekeeping. I made a few very minor adjustments to make it a bit healthier. Enjoy.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

salt
black pepper
1 lb spaghetti
1 lemon, juice and zest of
1 tablespoon extra virgin olive oil
4 -5 garlic cloves, finely chopped
1/2 cup dry white wine
1 cup fresh basil, about 20 leaves, shredded

Steps:

  • Place a large pot of water on the stove to boil , for cooking the pasta. Add salt once water is boiling, then the pasta, and cook according to package directions. Note: you will need to use a ladleful (probably 1/4 to 1/2 cup) of the starchy pasta water to make the sauce, so gather that 1/4 to 1/2 cup before draining the water.
  • While pasta cooks, zest the lemon. Heat the oil in a deep skillet over medium-low heat. Add lemon zest and garlic to oil. Sweat the garlic for two minutes, then add wine.
  • Reduce the wine for 30 seconds, then add the reserved ladle of pasta water and the juice of the lemon. Reduce 30 more seconds. Turn the heat off.
  • Drain pasta and then transfer it to the skillet with the garlic-lemon-wine sauce. Add in the basil; toss pasta for a minute to absorb flavors. Season pasta with salt and pepper.

LEMON BASIL PASTA

My husband made this for me all the time before we were married and it is one of our favorites still. I love to throw some cooked chicken in it and serve it with a salad. It is a dry pasta that has a lot of flavor and takes just a few minutes to throw together.
