- Preheat oven to 325.
- Prepare the shortbread crust: Cream butter and sugar in medium bowl with electric mixer set on high speed. Add vanilla and mix until combined. Add flour and mix at low speed until fully incorporated.
- Press dough evenly into bottom of an 8- by 8-inch baking pan. Refrigerate until firm, approximately 30 minutes.
- Prick shortbread crust with fork and bake for 30 minutes or until crust turns golden brown. Cool on rack to room temperature.
- Prepare the cream cheese filling while the crust is baking: Beat the cream cheese and sugar until smooth in medium bowl with electric mixer set on high speed. Add egg and lemon extract and beat on medium speed until light and smooth. Cover bowl tightly and refrigerate.
- Prepare the lemon curd: Blend the egg yolks with cornstarch and sugar in medium non-aluminum saucepan. Place over low heat and slowly whisk in water and lemon juice. Increase heat to medium-low and cook, stirring constantly, until mixture thickens enough to coat the back of a spoon. Remove from heat. Add lemon peel and butter and cool for 10 minutes.
- Assemble the bars: Sread chilled cream cheese filling evenly over cooled shortbread crust with spatula. Spread lemon curd evenly over cream cheese filling. Place pan in center of oven. Bake 30 to 40 minutes or until edges begin to turn light golden brown. Cool to room temperature on rack. Chill in refrigerator 1 hour before cutting into bars. Dust top with confectioners' sugar.

- Preheat oven to 350°. To make the crust, cream the butter and powdered sugar.
- Add 2 cups flour to make a dough.
- Pat out in a 9 x 9" square pan.
- Bake for 15 mintues or until golden.
- Mix the eggs, salt, granulated sugar, lemon juice and rind and remaining 2 tbls flour and baking powder.
- Pour over the crust and bake for 20-25 minutes.
- When cool, dust with powdered sugar.
- Cut into small squares. Serve.

- Preheat oven to 325 degrees f.
- in a large skillet, fry the bacon over moderate heat till almost crisp and drain on paper towels, reserving grease in the skillet.
- crumble bacon, add the onions and bell peppers to the skillet and cook, stirring, till slightly brown, about 10 minutes.
- add the rice, tomatoes, plus the their juices, and tomatoe juice, salt and pepper, and tabasco sauce and cook,stirring,5 minutes longer.
- scrape the mixture into a greases 2- quart casserole dish and bake, covered, till the rice is slightly dry about 30 minutes -- and serve with your main dish.

I love to make biscuits when I crave hot bread, and this one is quite good and fast to prepare. Paula Deen says this recipe is from Famous Recipes from Mrs. Wilkes' Boarding House. I found it in The Lady & Sons Too! (Paula Deen). I threw a splash of vinegar in the milk instead of using buttermilk and used all butter instead of shortening.

Steps:
- Preheat oven to 450.
- Sift the flour and baking powder into a mixing bowl and make a well in the center.
- Cut in the shortening and margarine until mixture resembles coarse cornmeal.
- Pour the buttermilk and milk into a measuring cup and add enough water to make 3/4 cup.
- Pour this into the dry ingredients.
- Mix lightly and quickly with your hands to form a dough moist enough to leave the sides of the bowl.
- Turn the dough onto a lightly floured surface.
- Knead by turning the dough away from you, pressing down with palms of hands, and pushing the dough away.
- Repeat 6 or 7 times.
- Work the dough into a large ball while kneading. Keep your fingers dry by dipping them into dry flour regularly.
- Pinch off portions of dough and place them on a well-greased baking sheet.
- Press lightly to flatten the biscuits slightly.
- Bake for 12 to 15 minutes, or until golden brown on top.
