Want a quick way to use up leftovers that doesn't taste like it was made from leftovers? Give this simple chow mein recipe a try. It works with pork, beef, or chicken (or even seafood) and you can add more veggies like sliced carrots, bamboo shoots, or water chestnuts if desired.

2 cups chicken, beef, or vegetable broth
1 large onion, sliced thin
6 stalks celery, cut in diagonal slices
1 red bell pepper, seeded and cut in cubes
1 1/2 cup leftover cooked pork, beef or chicken
1 can (15 ounce size) bean sprouts, drained
soy sauce, to taste
1 tablespoon cornstarch, or as needed
1/4 cup cold water

Steps:

  • Bring the broth to a boil in a saucepan over medium-high heat. Add the onion, celery, and bell pepper. Let cook for 5 minutes or until softened. Add the meat and bean sprouts. Add soy sauce to taste. Combine the cornstarch and cold water in a small bowl and mix until smooth. Stir the cornstarch slurry into the saucepan and cook, stirring frequently, for a couple of minutes or until thickened. You can add more cornstarch if a thicker sauce is desired. Serve over chow mein noodles or cooked white rice.

3/4 pound lo mein noodles or spaghetti
4 teaspoons vegetable oil
9 garlic cloves, minced
2 tablespoons minced peeled fresh ginger (from a 3-inch piece)
1/2 pound cremini or button mushrooms, trimmed and thinly sliced (5 cups)
1 bell pepper (not green), stemmed, seeded, and thinly sliced
6 ounces snow peas, trimmed and thinly sliced lengthwise
Reserved pork tenderloin (from Pork Tenderloin with Roasted Fall Vegetables), cut into thin strips
3 tablespoons soy sauce
1 tablespoon toasted sesame oil

Steps:

  • Cook noodles, according to package instructions; drain. In a large skillet or wok, heat 3 teaspoons vegetable oil over medium-high. Add garlic and ginger and cook, stirring, until fragrant and golden, about 1 minute. Add 1 teaspoon vegetable oil and mushrooms and cook, stirring constantly, until beginning to soften, 4 minutes. Add bell pepper and cook until crisp-tender, 3 minutes. Add snow peas and cook until crisp and bright green, 2 minutes. Add noodles, pork, and soy sauce and cook, stirring constantly, until noodles are coated with sauce and pork is warmed through, 2 minutes. Drizzle with sesame oil before serving.
