I love chorizo and quite often whip up a stew like this for supper. It is very adaptable to whatever you happen to have around the house.

2 tablespoons oil
2 bay leaves
1 small onion, thinly sliced into half-moons
1 green pepper, seeded and sliced
2 fresh chorizo sausages, cut into 1 cm thick slices
1 potato, peeled and diced
1 (400 g) can white beans, drained and rinsed
2 (400 g) cans chopped tomatoes
1 tablespoon tomato paste
1 tablespoon paprika (preferably smoked paprika)
1 teaspoon chili powder
1 spring onion, sliced
salt and pepper, to taste

Steps:

  • Heat the oil in a large saucepan and add in the bay leaves, onion, green pepper and chorizo.
  • Saute for 2-3 minutes over a medium-high heat, then add the potato, beans, tomatoes, paste and spices.
  • Bring to a boil, then turn the heat down very low and let simmer covered for 20 minutes.
  • Stir the stew, then leave partially covered for another 20 minutes or until the stew is as thick as you like and the potatoes are cooked.
  • Season to taste.
  • Ladle into bowls and top with the spring onion.

Adapted from Cooking Light, Jan/Feb 2012. Their recipe was very good, but I felt that it needed a few things, so this is my take on it. Still fairly light, but more flavorful. Their recipe says 4 servings of 1 cup each, but I got far more than that so I'm calling it 6 servings.

2 cups low-fat chicken broth
2 cups water
1 bunch fresh flat-leaf parsley
3 garlic cloves, smashed and peeled
1 onion, quartered
1 medium carrot, chopped
12 ounces boneless skinless chicken breasts
6 ounces spanish chorizo, chopped (in the casings, precooked)
3 cups red potatoes, cubed
1 1/2 cups onions, chopped
1 red bell pepper, chopped
1 tablespoon minced garlic
1 teaspoon cumin
3/4 teaspoon kosher salt
1/4 teaspoon saffron, crushed
1/2 teaspoon smoked paprika
1 1/2 tablespoons sherry wine vinegar
2 tablespoons chopped parsley, to garnish

Steps:

  • Combine broth, water, parsley, garlic, onion, and carrot in a large saucepan over medium high heat. Add chicken breasts, bring to a boil. Reduce heat and simmer for about 12 minutes, or until chicken is just cooked through.
  • Remove chicken from the pot and set aside to cool. Strain the broth to remove the solids, and set aside.
  • Once chicken is cool enough to handle, shred into bite sized pieces.
  • In the same pan, saute the chorizo over medium high heat for 2 minutes. Add potato, onion, and bell pepper. Cook for 8 minutes, stirring occasionally.
  • Add garlic, cumin, salt, saffron, and paprika. Saute for 2 minutes, stirring constantly.
  • Add the reserved broth and bring to a simmer. Cook for 12 minutes, stirring occasionally.
  • Check the potatoes for doneness, if they are not tender enough, continue to simmer until they are tender.
  • Add the shredded chicken, cook until it is heated through.
  • Remove from the heat, and stir in the vinegar.
  • Ladle into serving bowls, topping with chopped parsley to garnish.

This Spanish-style dish is full of flavour and can be made ahead

2 tbsp olive oil
10 chicken leg pieces (or 10 each thighs and drumsticks)
4 fennel bulbs , trimmed, cut into wedges
200g chorizo , cut into chunks
5 leeks , trimmed and thickly sliced
6 garlic cloves , thinly sliced
2 tsp hot smoked paprika
150ml dry sherry
750g large or plum tomatoes , quartered
small bunch of coriander , leaves only

Steps:

  • On the hob, heat the olive oil in a large frying pan. Season the chicken pieces, then fry, in batches, until golden brown on both sides. Lift out and set aside.
  • Pour all but 3 tbsp fat from the pan, add fennel and chorizo, then cook, stirring, until the fennel is soft and lightly coloured. Add leeks, cook until soft. Add garlic and paprika, cook for 1 min more, then pour in the sherry. Let it bubble for 1 min, stirring well, taste, then season.
  • Heat oven to 180C/160C fan/gas 4. Pour the mix into 2 ovenproof dishes. Scatter tomatoes over, then arrange the chicken on top. Cover with foil, then cook for 20 mins, until the chicken is cooked through. During cooking, check and add a little water if it seems to be getting dry.
  • Turn the oven up to 200C/180C fan/gas 6. Uncover the chicken and season the skin with salt and pepper. Bake for 20-30 mins until the chicken is heated through and the skin is crisp. Rip the coriander leaves over the top and serve straight away.

  • Heat the olive oil in a large saucepan or heatproof casserole. Fry the chorizo slices until crisp then transfer to a large bowl with a slotted spoon. Season the chicken with salt, pepper and 1 teaspoon of the smoked paprika, then brown over a high heat in the fat remaining in the pan, then transfer to the same bowl. Add the onions and peppers to the pan with a little salt and cook for 8-10 minutes until softened.
  • Stir in the garlic, tomato purée, dried oregano, cumin and 1⁄2 teaspoon of smoked paprika and continue to cook for a further 2-3 minutes. Return the chicken and chorizo to the pan, pour in the sherry; simmer to reduce by half.
  • Add the stock and passata. Bring to the boil then simmer for 35-40 minutes, uncovered, until the sauce has thickened, adding the olives for the final 5 minutes. Season to taste, cool if prepping ahead and divide into portions; see Get Ahead tip at the top of this recipe. Serve piping hot, scattered with the parsley, with rice or some crusty bread.
