MUSHROOM LEEK FRITTATA

Mushroom Leek Frittata image

The rich yet subtle flavors of this frittata will have you coming back for seconds. The secret to this recipe is the pairing between the fluffy eggs, light onion flavor of the leeks, earthy mushrooms and nutty comte cheese. Just delightful.

Provided by Scott G

Categories     Breakfast

Time 20m

Number Of Ingredients 8

4 large Eggs, Beaten well
1/2 cup Mushrooms, Sauteed
1/2 cup Leeks, Sauteed
2 tbsp Bacon, Cooked & Sliced
1/2 cup Comte, Shredded + more to top
1/4 cup Cream
1 tbsp Butter
Salt & Pepper

Steps:

  • Preheat your oven to 350 degrees. While the oven is heating, mix all the ingredients together in a bowl except the butter. I add about 1/4 tsp of salt and just a pinch of pepper to the eggs.
  • Using a non-stick skillet or well seasoned cast iron skillet, heat over medium-high heat and add the butter. When the butter melts, make sure that the whole interior of the pan is coated in the butter.
  • Add the egg mixture to the hot pan. Allow it to cook on the stovetop for about 2 minutes or until the butter starts to bubble around the edges and you can see that the eggs are just starting to set.
  • Transfer to the oven and bake for 15 minutes or until set. Add some cheese to the top and broil for 1-2 minutes until golden brown. Remove from the oven and serve hot. Happy eating!

SPINACH AND FETA FRITTATA

Spinach and Feta Frittata image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 8

1 red bell pepper
4 tablespoons extra-virgin olive oil
1 bunch scallions, sliced
1 5 -ounce package baby spinach
Kosher salt and freshly ground pepper
8 large eggs
4 tablespoons whole-wheat breadcrumbs
1/2 cup crumbled feta cheese

Steps:

  • Preheat the oven to 450 degrees F. Place the bell pepper directly on a stovetop gas burner over high heat and char on all sides, turning with tongs, about 5 minutes. (If you don't have a gas stove, do this on a baking sheet under the broiler.) Transfer the pepper to a medium bowl, cover tightly with plastic wrap and let sit 10 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a medium nonstick ovenproof skillet over medium-high heat. Add the scallions and spinach and cook, stirring, until wilted, about 4 minutes. Stir in 1/2 teaspoon salt, and pepper to taste; remove from the heat. Whisk the eggs, 2 tablespoons breadcrumbs, 3/4 cup water and 1/2 teaspoon salt in a large bowl. Add the egg mixture and feta to the skillet and stir to combine. Sprinkle with the remaining 2 tablespoons breadcrumbs. Transfer the skillet to the oven and bake until the frittata is set and the top is golden, about 15 minutes.
  • While the frittata is cooking, peel off the skin from the roasted red pepper with your fingers. Cut the pepper in half, discard the seeds and slice into strips. Toss with the remaining 2 tablespoons olive oil, and salt and pepper to taste in a bowl. Slide the frittata onto a serving plate and cut into wedges. Serve with the roasted pepper.

SWEET POTATO, LEEK AND FETTA FRITTATA

Sweet Potato, Leek and Fetta Frittata image

A simple and light dinner or lunch option, very forgiving and you can add pretty much anything. Just choose the herbs you have or like best. Great hot or cold with salad, as with a lot of things it often tastes better the next day. You could also use 8 eggs but I tend to lighten it up by taking yolks out of a couple and using a low fat fetta.

Provided by RKC26

Categories     Lunch/Snacks

Time 30m

Yield 4 Large Slices, 4 serving(s)

Number Of Ingredients 11

6 large eggs
2 egg whites
2 tablespoons red Spanish onions (Chopped)
1 1/2 cups sliced leeks (White Part)
1 cup sweet potato (Sliced)
1/4 medium bell pepper (Red or Green)
1/2 cup water
90 g reduced fat greek feta
salt and pepper (To Taste)
1 teaspoon mixed herbs or 1 teaspoon oregano
2 -3 tablespoons chopped basil, Chives or 2 -3 tablespoons parsley

Steps:

  • Preheat fan forced oven to 180c (356f).
  • Whisk eggs with water and herbs; season with pepper and salt; set aside.
  • Layer sweet potato, red onion and leeks in a pyrex dish or similar (I find that a small square casserole dish works best) and either microwave or heat in oven until sweet potato is soft.
  • Pour over egg mixture, sprinkle crumbled fetta and capsicum over the frittata evenly.
  • Bake until set (should be around 10-15 mins).
