GERMAN LEBKUCHEN COOKIES

Steps:
- In a mixing bowl, combine the flour, nutmeg, cinnamon, baking soda, cloves, and allspice.
- In a separate mixing bowl, beat the egg and the brown sugar together for 3 minutes.
- Stir in the honey and molasses to the egg/sugar mixture.
- Add all the dry ingredients to the wet mixture. Beat until well blended. Your dough will be crumbled, but when pressed together will hold its shape.
- Transfer dough to waxed fabric, plastic wrap, or a storage container with a lid. Wrap it up or cover and chill for at least 3 hours.
- When you are ready to bake, preheat your oven to 350˚F and line baking sheets with parchment paper or silicone mats.
- Remove your dough from the refrigerator and turn out onto a lightly floured surface.
- Roll dough to a thickness of ¼" to ½". Use a 3" round cookie cutter to cut out circles or use a knife to cut 3" squares.
- Place the cookies an inch apart on a cookie sheet and top with a few sliced almonds. There is no need to press them down as they will stick to the cookie as it rises during baking.
- Bake for 9-10 minutes. They will be done when you can touch the cookie top without leaving an imprint.
- Remove cookies and immediately transfer to a wire cooling rack.
- While the cookies are cooling, combine the ingredients for the icing in a small bowl.
- When the cookies are almost completely cooled, dip the top of each cookie in the icing and spread with the back of a knife. You can also use a pastry brush and brush it on. Place the glazed cookie back on the wire rack to dry.
- After the icing has hardened, store in an airtight container.

- Prepare the Cookies: In a 1½ quart saucepan, combine the honey and muscovado sugar. Over medium-high heat, stir gently until the sugar begins to dissolve and the mixture just begins to come to a simmer. Remove the pan from the heat and stir in the butter. Let cool until warm to touch. Whisk in the egg and lemon zest and juice.
- In the bowl of a stand mixer fitted with a paddle attachment, stir together the flour, baking soda, salt, and spices.
- On low speed, stir in the wet ingredients until a smooth, sticky dough forms. Laura's Note: This will be slack and loose, don't worry! Scrape the dough into a lightly oiled ceramic bowl and cover with a plate - you want the dough to be able to breathe.
- Allow the dough to "ripen" at cool room temperature for 1 to 2 days - do not refrigerate. (The large amount of honey and sugar will keep bacteria at bay.)
- Position racks to the upper and lower thirds of the oven and preheat it to 350°F (180°C). Line two baking sheets with parchment paper.
- Turn out the dough onto a well-floured work surface. Roll it out to a ¼-inch/6 mm thickness. Use a bench scraper or thin spatula to get under the dough and scoot it around in the flour occasionaly to prevent sticking. Cut shapes with 2-inch/5 cm cutters and place 1 inch/2½ cm apart on the prepared baking sheets. Sweep away any excess flour with a pastry brush.
- Bake until fragrant and lightly browned, about 12 minutes, rotating the baking sheets from top to bottom and front to back halfway through the baking time. (Watch closely, as honey in the dough can make the edges catch and burn quickly.)
- Prepare the Glaze: In a medium bowl, whisk together the confectioner's sugar, egg white, lemon juice, and salt for a smooth, thin, runny glaze. (Add a few drops of lemon juice, as needed, to achieve this consistency).
- Let the cookies firm up and cool on the baking sheets for 5 minutes. Run an offset spatula under the cookies to gently looesn them from the parchment paper, leaving them on the sheets.
- While still warm, brush the cookies with glaze and transfer to wire racks. Allow the cookies to cool and the glaze to dry completely.
- The secret to a perfect lebkuchen texture is in the resting phase: place the cookies into airtight containers in layers, seperated by parchment or wax paper. Tuck a wedge of apple in the container before sealing. Store in a cool place for at least 3 days, or up to 2 weeks, to allow the cookies to ripen once more before serving.

- Measure the honey and sugar in a mixing bowl and heat in the microwave for 30 second bursts. Stir together vigorously with a wooden spoon until sugar dissolves.
- Add the cubed butter and zest and stir until the butter melts.
- Stir in the baking powder, soda, salt and spices and egg.
- Add the flour and ground almonds. Mix until you have a soft and slightly sticky dough, adding a little lemon juice as needed.
- Mist a spatula or your hands with oil and gather the dough into a ball. Cover the mixing bowl with a towel and leave to rest for at least an hour or even overnight at room temperature.
- Preheat the oven to 350°F (180°C). Prepare the glaze: mix together all the ingredients in a bowl until you have a thin and runny glaze.
- Divide the dough into thirds. Roll the dough on a silicone baking mat to a thickness of 2cm (just under an inch).
- Cut shapes using round, star or heart cookie cutters. Space the cookies out on the silicone mat and bake for 12 minutes. Repeat with remaining dough, gathering up any scraps and rolling out again and bake in batches.
- Transfer the cookies carefully to a wire rack and brush with the glaze while they are still a little warm.
- Leave the glaze to dry and add a second layer if desired. Add sanding sugar, sprinkles or slivered almonds to decorate if you like. Check the recipe notes if you want to cover the lebkuchen in chocolate.
- Put the cookies in a cake tin, separated by parchment paper so that they don't stick. Place a few strips of orange peel in the tin. Lebkuchen become more delicious the longer you keep them making them the ideal festive gift!

MOIST AND CHEWY LEBKUCHEN (GERMAN SPICED CHRISTMAS COOKIES) RECIPE

- If Making Individual Round Cookies: Chill dough until quite firm, about 4 hours. Working in 2 batches, line 2 large cookie sheets with parchment. Dip a 1 3/4-inch ice cream scoop (2 level tablespoons) into water, shake off excess water, and scoop level scoops of dough. Roll into balls and place 2 inches apart. Bake in the lower and middle thirds of the oven, shifting pans from top to bottom and front to back halfway through, until a toothpick inserted in center of cookies comes out clean, about 18 minutes. Slide parchment onto a wire rack to let cookies cool slightly while you bake the remaining cookies.

- In a large bowl, beat the egg, brown sugar and honey until smooth. Stir in the molasses. Combine the flour, baking soda, nutmeg, cinnamon, cloves and allspice; stir into the molasses mixture. Stir in the almonds and candied fruit peel. Cover or wrap dough, and chill overnight.
- Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into 2x3 inch rectangles. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until firm. While still warm, brush the cookies with the lemon glaze.
- To make the glaze: In a small bowl, stir together the egg white, lemon juice and lemon zest. Mix in the confectioners' sugar until smooth. Brush over cookies.

AUTHENTIC GERMAN LEBKUCHEN
This recipe is over 150 years old and has been baked by my family for many generations for Christmas. They are much easier to make than other lebkuchen and ingredients have been updated to what's available now. They are made with almond flour, hence are gluten free and also contain no dairy.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper and arrange backoblaten (German baking wafers) on top, leaving a 1-inch space between them.
- Combine almond flour, sugar, eggs, ground hazelnuts, candied lemon and orange peel, ground cinnamon, vanilla sugar, and ground cloves and mix into a firm dough.
- Shape mixture into balls. Arrange balls on the prepared wafers; press gently to flatten into 1/2-inch-high rounds.
- Bake in the preheated oven until light brown in color, 15 to 20 minutes. Cool completely, about 30 minutes.
- Place chocolate in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Cover the top of each lebkuchen with chocolate.

ELISENLEBKUCHEN (GERMAN CHRISTMAS COOKIES)
These are delicious soft & puffy cookies. The Oblaten wafers, which serve as the bottoms of these cookies, can be found in German markets - they look like Communion wafers, and are actually made in the same manner. Adapted from the great German classic cookbook, "Back Vergnuegen Wie Noch Nie." I have provided approximate measurements if you need to use American measuring cups. If you can find it, Lindt sells a large bar of chocolate that is excellent for melting and is roughly the correct amount you need - a little more won't be a problem. Or you may use Hershey bars - no problem. For the nuts - these are not to be confused with chopped nuts - they should be finely grouns into a meal. If you can't find them sold this way in your area, whirl them through a coffee grinder or food processor briefly (you don't want mush) until they are floury. The nuts are the "flour" in this recipe and cannot be omitted - however you may use hazelnuts or other nuts that you prefer.

- Preheat oven to 150°C (or 300°F).
- Place powdered sugar and egg whites in a mixing bowl and beat, using a whisk attachment on an electric mixer on high speed, until stiff (but not dry) peaks form- this may take while (up to 8 minutes- but may take less depending upon your mixer).
- Combine the lemon zest, the candied lemon peel, and the nuts, then gently fold in the egg whites mixture- do not overmix.
- Line a baking sheet with parchment paper, then set out the oblaten wafers.
- Place a 1 rounded Tbsp of cookie dough onto each oblaten in a mound.
- Bake about 20 minutes until light brown, in the center of the oven.
- If necessary, set a second (empty) cookie sheet in the rack directly above the cookies to help keep the tops from overbrowning.
- Remove from oven and let cool on wire racks.
- Melt chocolate in either a double boiler or in the microwave briefly until you can stir down the chocolate into a melted glaze (be careful not to burn if you use the microwave- chocolate tends to hold its shape even if it is melted inside when melted this way).
- Drizzle the tops of each cookie with the melted chocolate.
- If you prefer, you may melt even more chocolate and carefuly dip the cookies halfway.
- Let dipped cookies dry on a cooling rack.
- Pack into airtight containers.
- IF USING AMERICAN MEASUREMENTS: Use about 2 cups ground almonds, 2 1/3 cups powdered sugar, 1 cup candied lemon peel, and a couple of Hershey's milk chocolate bars (regular size)- or more.

LEBKUCHEN (GERMAN CHRISTMAS HONEY COOKIES)
This recipe is from an OLD betty crocker cookbook and is my absolute favorite Christmas cookie. My MIL sends a batch every year and is one of my favorite things of the season. DO NOT overbake these or they will become so hard that you might need to have dental work done (lol) If the cookies are too hard she suggests placing them in an airtight container with an apple slice. I did not include chilling time in the recipe.

- Mix honey and molasses and bring to a boil. Remove from heat and cool completely.
- Stir in brown sugar, egg, lemon juice and lemon rind.
- Sift together flour, baking soda and spices, then stir into the honey-molasses mix.
- Mix in the citron and chopped nuts, place the dough in the refrigerator and chill overnight.
- Roll out a small amount of dough at a time to 1/4 inch thick, keeping the rest in the fridge. You can either cut out oblong shapes about 1 1/2" x 2 1/2" or just cut out circle shapes about 2" in diameter.
- Place on a GREASED baking sheet about 1" apart.
- Place 3 almonds on top of each cookie in a flower shape, and place in a 400 deg oven for 10-12 min or until no imprint remains when touched lightly.
- While cookies bake, make glaze by boiling the water and sugar to 230 degrees - until it just barely begins to thread.
- Remove from heat and stir in confectioners sugar.
- Brush the hot glaze lightly over the cookies (if it gets grainy reheat slightly with a little water to thin again).

- Cover almonds with boiling water in a bowl. Let stand for 1 to 2 minutes and drain. Rinse with cold water and drain again. Pat almonds dry and remove skin. Allow almonds to dry on paper towels.
- Place half the almonds in a food processor; pulse until finely chopped. Add apricots and dates; pulse until fruit is chopped. Reserve remaining 1 cup almonds.
- Combine flour, cinnamon, ginger, baking powder, cloves, cardamom, and salt in bowl. Beat eggs, brown sugar, honey, molasses, water, almond extract, orange zest, and 1 teaspoon lemon zest in a large bowl with an electric mixer until smooth. Add apricot mixture, blending until evenly distributed. Gradually stir in flour mixture on medium speed until dough comes together. Cover dough with plastic wrap and refrigerate for 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Turn dough onto a lightly floured surface and roll out to about 1/2-inch thick. Cut out cookies with a 2 1/2 to 3-inch diameter cookie cutter. Arrange cookies about 1 inch apart on ungreased baking sheets.
- Lightly press 3 almonds into each cookie with tips towards the center to create a star pattern.
- Bake in preheated oven until cookies begin to brown, about 12 minutes. Cool in the pans for 10 minutes before removing to cool on a wire rack.
- Meanwhile, whisk confectioners' sugar, milk, and 1 teaspoon lemon zest in a bowl until glaze is smooth. Brush warm cookies with glaze and allow cookies to cool completely.
