LEAN GREEN TUNA MAC SALAD
This is a healthy twist on a family classic. A perfect addition to any cookout or get-together! I use celery seeds because I like the faint flavor but generally despise celery (weird, I know!)

Steps:
- Cook pasta until al dente, adding edamame and peas during last minute of cooking.
- Drain and cool pasta, edamame, and peas.
- Mix remaining ingredients in large bowl.
- Add cooled pasta and peas and mix well.
- Cover and refrigerate for flavors to blend.
- To serve, line gently sloped bowl with lettuce leaves, pile on salad, and garnish with chopped parsley and whole parsley sprigs.

MACARONI TUNA SALAD
This macaroni salad is great for lunch on its own, if you don't feel like cooking on those hot summer days. It's also a wonderful side for grilled food. I have perfected it -- after making many different types of macaroni salad, this one is my favorite. Enjoy!!

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Transfer the macaroni to a bowl, and cool in the refrigerator.
- In a large bowl, lightly toss the tuna with celery, onion, and about 1 cup mayonnaise until combined, then stir in the remaining mayonnaise, macaroni, olives, and grape tomatoes. Season to taste with salt and pepper. Let the salad chill in refrigerator 1 hour.

BIG MAC SALAD
Yep. Inspired by the McDonald's Big Mac. A Parsley original. Just because it's a salad, doesn't mean it's diet food. ;)

Steps:
- Toast all eight pieces of bread until just lightly golden-brown. Let cool and cut into cubes; set aside.
- Brown and drain the extra lean ground beef. Let cool.
- In a large bowl, combine the cooked and cooled ground beef, toasted bread cubes,finely chopped onions, shredded lettuce and cheese; toss well. Place in a large salad/serving bowl.
- In a seperate small bowl, stir together the mayonnaise, ketchup, relish, salt and pepper.
- Drizzle the dressing over the salad. You can either leave it drizzled or toss everything to evenly coat salad.
- Sprinkle with sesame seeds.
TUNA-MACARONI SALAD
If there is such a thing as comfort salad, then this is it: A cold and creamy, mayonnaise-laden pasta that evokes your grandma's "tuna mac," but made a touch more sophisticated with the addition of cornichons and scallions. Amanda Hesser picked up the recipe, in 2006, from Clementine, a bakery and cafe in Los Angeles known for "its stylish take on home-style cooking." They were selling it for about 9 bucks a quart, but you can make it at home for about a quarter of that. Thankfully, it's no more difficult to make than Grandma's. Just boil up some macaroni and drain. Combine with two cans of tuna (if you're feeling flush, you can add chunks of cooked fresh tuna like we did for the photo) one cup of mayonnaise, chopped celery, cubed Cheddar cheese, sliced scallions and cornichons and two spoonfuls of chowchow, a green tomato relish that's an optional addition. Season well with freshly ground black pepper and serve cold.
