LAZY GAL'S SMOKY CHICKEN

Lazy Gal's Smoky Chicken image

I highly recommend Lapsang Souchong tea as a great way to add that smoky flavor to almost any dish. This recipe is healthy. Low cal, low fat, high in flavor. YAY.

Sixteen Spice Smoked Chicken image

Categories     main-dish

Time 3h10m

Yield 2 to 4 servings

Number Of Ingredients 18

1 tablespoon ground cinnamon
1 tablespoon ancho chili powder
1 tablespoon pasilla chili powder
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon ground fennel seed
1 teaspoon ground allspice
1 teaspoon chili de arbol powder
2 tablespoons brown sugar
1 tablespoon kosher salt
1 tablespoon coarsely ground black pepper
1/2 teaspoon cayenne pepper
1 (3 to 4-pound) chicken
1 cup applewood or hickory wood chips, soaked in water for 10 minutes

Steps:

  • Combine all spices in a bowl. Rub the entire chicken with the spice rub, including the cavity, and set aside while you prepare the grill.
  • Set up a charcoal grill for indirect grilling. Throw the soaked wood chips on the hot coals. Place the cover on the grill and adjust the vents holes on the top and bottom to obtain the desired temperature (in this case it should be about 350 degrees F).
  • Place the chicken on the rack of the grill opposite the coals and smoke until the chicken reaches an internal temperature of 160 degrees F, using an instant-read thermometer, about 2 to 2 1/2 hours. Remove from the grill, tent loosely with foil, and let rest 10 minutes before carving.

SMOKED GLAZED CHICKEN

Smoked Glazed Chicken image

This recipe is a lot of work if you are not "the more ingredients/steps the better" kind of cook. Even if you are not, you'll find it worth it; especially if you are cooking for a large group. In the end, the chicken will taste better than any chicken has a right to--your guests will be speechless. I recommend doing a several whole chickens cut in half, or 1/4 chickens (big thigh/drumstick pieces), and/or whole breasts. The idea is big pieces are best, and all about the same size/thickness. Prep time does not include time spent in the brine, prepping the smoker, the grill, etc. I got the brine recipe off the internet. It's called Don's Poultry Brine and is the best I've ever come across. I use it for brining turkeys as well. You may well ask "why brine at all?" Poultry will get very dry during the smoking process. Brining the poultry will result in tasty, moist meat.

Time 3h

Yield 12-15 serving(s)

Number Of Ingredients 21

2 gallons water
2 tablespoons pickling spices
2 tablespoons cayenne pepper (ground)
1 teaspoon allspice
2 teaspoons black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons celery salt
3 cups kosher salt
1/2 cup brown sugar
2 tablespoons maple extract
2 teaspoons liquid smoke
1/2 cup olive oil
1/4 cup cajun seasoning
2 cups apple cider vinegar
2 cups water
2 tablespoons salt
2 tablespoons black pepper
6 tablespoons butter
2 tablespoons honey
8 lbs chicken

Steps:

  • For the brine: Combine the first 10 ingredients, bring to a boil, then let cool.
  • Add maple extract and liquid smoke.
  • Rinse chicken and pat dry.
  • Brine chicken for at least 4 hours. Overnight is fine, but no more than 12 hours.
  • Remove pieces, rinse in cold water and pat dry.
  • Coat with oil and season with Cajun seasoning.
  • Prepare smoker and smoke chicken at 230 degrees for about two hours, basting with mop every 30 minutes.
  • For the mop: Combine vinegar, water, salt, and pepper in a pot and bring to a boil. Remove as set aside.
  • When chicken is nearly done, coat with glaze and move pieces to a hot grill to finish cooking and crisp the skin. This will only take a few minutes per side.
  • For the glaze: Combine 3 parts butter to one part honey. Make as much as you need to finish the job.
  • Remove and serve immediately.
  • Have copies of the recipe available, because you will be asked.

8 INGREDIENTS THAT ADD SMOKY FLAVOR WITHOUT A FLAME

From thekitchn.com
Estimated Reading Time 4 mins
  • Smoked Paprika. There’s a whole slew of paprika varieties out there, from the standard, sweet kind you sprinkle over deviled eggs to the hot stuff that adds a punch to any dish.
  • Smoked Olive Oil. Made by infusing natural smoke from a mix of oak, beech, and birch wood into the oil, smoked olive oil is seriously incredible stuff.
  • Black Cardamom. When most people think about cardamom, they are likely thinking of green cardamom, which is found in pod and ground form and whose warming flavor enhances everything from chai to baked goods.
  • Chipotle Peppers. Chipotles are dried and smoked jalapeño peppers, so they’re both spicy and smoky. You’ll most commonly find them ground into a powder, or whole in a spicy, tomato-based sauce called adobe.
  • Smoked Cheese. Practically every kind of cheese has a smoked counterpart, be it cheddar, mozzarella, chevre, ricotta, blue, or Gouda. While wonderful on their own, when cooked their smoky flavor turns into melty goodness.
  • Lapsang Souchong. This Chinese tea is made by drying the leaves over pinewood fires, which gives it an incredibly smoky flavor. Brew the tea and use it as a poaching liquid, or cook your grains or beans in it.
  • Smoked Salt. Like smoked olive oil, smoked salt is best used to finish a dish. Add a pinch to scrambled eggs or mac and cheese right before digging in, toss a little with popcorn, or use a bit on top of homemade caramels for an unexpected twist.
  • Liquid Smoke. Somehow liquid smoke got a bad culinary reputation, but despite what you might think it isn’t too high in sodium or bad for you — and it packs a punch of smoky flavor with just a few drops.
