A healthy one pot dish with summer vegetables and chicken. Serve this lazy chicken right from the pan!

1 lb chicken breasts, cut into one-inch cubes
2 red potatoes, sliced thinly
1 small white onion, thinly sliced
1 small zucchini, thinly sliced into disks
1 -2 teaspoons steak seasoning
1/2 cup chicken broth
1 can (14.5 oz) Muir Glen™ Organic Crushed Tomatoes Fire Roasted
10 basil leaves, coarsely chopped
1 teaspoon dried oregano
1/2 cup shredded mozzarella
Salt and pepper

Steps:

  • In an oven safe skillet, sprinkle chicken with salt and pepper and brown on medium high heat for a couple of minutes. Remove the chicken from the pan and set aside.
  • Add olive oil to the pan. Layer the sliced potatoes and onions in the pan and sprinkle with half of the steak seasoning. Cook potatoes and onions in a thin layer until brown, turning as little as possible to get a nice sear.
  • Add chicken broth to the pan. Spread zucchini in a thin layer on top of the potatoes and onion. Sprinkle zucchini with the remaining steak seasoning.
  • Place chicken in an even layer over the zucchini. Pour tomatoes evenly over the chicken. Sprinkle tomatoes with the oregano and basil. Cover and cook until the veggies and chicken are completely done.
  • Sprinkle with cheese and place under the broiler until cheese melts or starts to brown. You could also just cover the pan with a lid on the stove to melt the cheese.
  • Serve right away.

2 -3 lbs chicken pieces (legs, thighs and breasts)
1 tablespoon sugar
1/4 cup white vinegar
1/2 cup soy sauce (low sodium works well)
4 garlic cloves, minced1 tsp garlic powder
3/4 teaspoon pepper

Steps:

  • Mix sugar, vinegar, soy sauce, garlic and pepper in a skillet.
  • Add chicken and simmer covered until chicken is cooked through and tender. About 30-45 minutes.
  • Serve over rice and enjoy.
  • **If making this to freeze, put the ingredients from step one into a ziploc bag and mix well. Add chicken and freeze. When ready to cook, dump frozen ingredients into a pan and simmer on low to med heat until cooked through. It will take a little longer to cook this way but it is still a quick and easy.

1 jar sliced mushroom

Steps:

  • Rinse chicken breasts.
  • Put salt, pepper and paprika on both sides.
  • Place in crock pot.
  • Mix other ingredients together.
  • Add to crock pot.
  • Cook on LOW all day.
  • Serve over noodles, rice, or mashed potatoes.

I love fried chicken but I REALLY love simple recipes that can be prepared in minutes with few ingredients. Best of all, the grease left in the pan after cooking is all from the chicken. I have made this for years and my grown children do it this way for their children

2 -3 lbs chicken pieces, whatever you like, I prefer thighs
1 1/2 cups flour
1 tablespoon seasoning salt
2 teaspoons garlic powder
2 teaspoons paprika
1 teaspoon ground red pepper

Steps:

  • Preheat oven to 425.
  • spray a 9x13 inch metal pan with no stick spray. Rinse chicken and drain but do not dry. Put flour and seasonings in a paper or plastic bag and shake to blend. put 2-3 pieces of chicken in bag and shake. arrange chicken in pan. Bake 30 min then turn chicken over for another 20 minute.
  • If using white meat reduce cooking time to not over cook and dry out.

4 (4 ounce) chicken breasts, boneless, skinless, not too thick
8 slices swiss cheese (or whatever you like but it should be 2 per breast)
4 slices ham, I used Virginia, use whatever type makes you happy
1 egg
1/4 cup breadcrumbs, I use unseasoned
1/2 teaspoon seasoning salt, I usually eyeball it
1 teaspoon butter, melted, optional (I think it will make the coating less dry)

Steps:

  • Preheat oven to 350. Line a baking sheet with a silicon liner or whatever you like to use.
  • Rinse and pat dry breasts. Layout breast, 1 slice of cheese, 1 slice of ham, then roll from larger end towards pointy end and close with one toothpick. Set aside until all chicken is done up to this point.
  • In a small dish or bowl, slightly beat an egg and set aside.
  • In another small dish or bowl, mix together breadcrumbs, seasoned salt and butter.
  • Dip rolled up chicken in egg, then breadcrumb mixture and place on baking sheet - repeat with rest of chicken.
  • Lay one slice of cheese over each coated chicken breast.
  • Bake approx 20 min, use a thermometer to measure internal temp to be safe.

2 boneless skinless chicken breasts
3/4 cup long grain rice
1 (40 g) package onion soup mix
1 (10 ounce) can mushroom soup
1 (10 ounce) can sliced mushroom stems and pieces
1 (10 ounce) can milk

Steps:

  • In a bowl, mix can of mushroom soup, onion soup mix, can of sliced mushrooms& stems (including the liquid contained in the mushroom& stems can), one can (10 oz.) of milk and the rice.
  • Mix all the ingredients together well.
  • In a greased casserole dish, pour half of the mixture into the dish.
  • Place the chicken breasts on top of the mixture then pour the remaining mixture over the breasts.
  • Cover the casserole and place in a pre-heated 375 degree oven.
  • Bake for 1 hour, then uncover casserole and bake for an additional 15 minutes.
  • Serve with your favorite steamed veggies.
