This is practically a one-bowl recipe. It's so easy you'll have this ready to put in the oven in minutes and it's delicious, moist, and beautiful.

2 cups sugar
4 eggs
1/2 cup milk
1/2 cup water
2 teaspoons vanilla extract
3 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/3 cups oil
1/2 teaspoon salt
1/4 cup chocolate syrup
1 (4 ounce) package chocolate pudding mix
1/4 cup water
2 tablespoons oil

Steps:

  • Mix all ingredients except chocolate ingredients in one large bowl until smooth.
  • Pour 2/3 of the batter into a large greased bundt pan.
  • Add the chocolate ingredients to the remaining batter and mix well.
  • Pour in a circular line the chocolate ingredients and slighly swirl with a fork to give a marbelized look.
  • Bake in a pre-heated 350 oven for approximately one hour or until a toothpick inserted in the center comes out clean (do not overbake so check every so often).

1 large carrot, finely grated (about 1/2 cup)
3/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 pinch salt
3/4 cup butter or 3/4 cup margarine, softened
3/4 cup sugar
1 teaspoon vanilla
3 large eggs
1/4 cup finely chopped walnuts (optional)
1 (8 ounce) can crushed pineapple in juice, drained
powdered sugar

Steps:

  • Preheat oven to 350. Grease and flour a 6-cup bundt,k tube or fluted cale pan.
  • In a medium bowl, mix together the grated carrot, ginger and cinnamon and set aside.
  • In another bowl, whisk the flour, baking powder and salt together and set aside.
  • In a large bowl, at medium speed, beat together the butter, sugar and vanilla well until light and fluffy. Add the eggs, one at a time,beating well after each addition. (Don't worry if the batter appears curdled.).
  • At low speed, gradually beat in the flour mixture until the batter is smooth.
  • Fold half the batter into the carrot mixture, then fold in the chopped nuts if using. Set aside.
  • Fold the drained crushed pineapple into the remaining batter.
  • Spread the pineapple batter in the prepared pan, then spread the carrot batter on top. Using a knife, swirl gently through the batter to create a marble effect.
  • Bake for about 35 to 40 minutes or until top is golden and a toothpick inserted in the center comes out clean.
  • Transfer the pan to a rack to cool for about 10 to 15 minutes, then invert cake to the rack, remove the pan, and let cool completely.
  • When cool, dust with powdered sugar.

1 cup butter (melted)

3 teaspoons vanilla
3 teaspoons baking powder

16 ounces sour cream
1/4 cup sugar
1 tablespoon cinnamon
12 ounces semi-sweet chocolate chips
1/2-1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Grease and flour 9x12 baking dish. Mix all ingredients together in large bowl. Pour mixture into baking dish.
  • For topping:
  • Blend all topping ingredients together in bowl. Sprinkle on cake, then swirl once with knife. Bake 45 minutes to 1 hour.

This recipe took on a life of its own; I have not made it in years and years. My sister-in-law, to whom I gave it decades ago, just told me her grandchildren request it regularly! So I tried it again in my quest for the perfect marble cake, and sure enough, I was sitting on it all along! I use trans-fat free margarine, in tubs, suitable for baking.

1 cup margarine
2 cups sugar
3 eggs
1 cup milk
1 1/2 teaspoons vanilla
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup chocolate syrup
1/4 teaspoon baking soda
1/4 teaspoon vanilla

Steps:

  • Cream margarine and sugar very well.
  • Add the eggs, one at a time.
  • Combine milk and 1 1/2 teaspoons vanilla; add alternating with flour, baking powder and salt, sifted together. Beat well after each addition.
  • Grease and flour 10" tube pan (or two large loaf pans).
  • Turn 2/3 of the batter into the pan.
  • To the remaining 1/3, add chocolate syrup mixed with baking soda and salt. Blend well and pour over batter in pan.
  • Bake at 350 F for one hour or until done.
