LAYERED WATERMELON ICE POPS
Nothing says summer quite like slices of watermelon and frozen ice pops, so put the two together for a summery, layered treat. When avocado is sweetened and pureed, it freezes up just like ice cream, making it the perfect ingredient for the green watermelon rind layer.

Steps:
- Puree the watermelon with 1/4 cup of the sugar in a blender. Pour into a medium bowl and freeze, stirring every 30 minutes, until the puree resembles a slushy mixture, about 2 hours.
- Fold the chocolate chips into the watermelon slush and pour into six 3- to 4-ounce ice-pop molds, filling them about three-quarters full. Insert wooden or plastic (without guards) ice-pop sticks. Freeze until the mixture is just slightly set, about 30 minutes.
- Meanwhile, mix the coconut milk and 2 tablespoons of sugar in a small bowl and refrigerate.
- After 30 minutes, pour the coconut milk mixture on top of the watermelon mixture, leaving a 1/4-inch headspace at the top. Freeze until the mixture is just slightly set, about 30 minutes.
- Right before the coconut milk mixture is just set, puree the avocado, lime juice, 1/4 cup of water and the remaining 2 tablespoons sugar in a blender until smooth and creamy. Top the coconut layer with the avocado mixture and freeze until solid, about 4 hours.
- Let sit at room temperature for about 5 minutes before unmolding.

- Cut the feta into 24 cubes that are a little smaller than the melon cubes.

- Add 1/2 cup boiling water to lime gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in 1/4 cup cold water. Pour into 9-inch square pan sprayed with cooking spray. Refrigerate 20 to 25 min. or until gelatin is set but not firm.
- Meanwhile, add 1/2 cup of the remaining boiling water to unflavored gelatine in medium bowl; stir until completely dissolved. Stir in milk. Cool until ready to use.
- Pour unflavored gelatine over lime gelatin layer. Refrigerate 25 to 30 min. or until gelatine is set but not firm. Meanwhile, add remaining boiling water to watermelon gelatin mixes in separate medium bowl; stir 2 min. until completely dissolved. Stir in remaining cold water. Cool until ready to use.
- Pour watermelon gelatin slowly over gelatine layer in dish. Refrigerate 2 hours or until firm.
- Cut dessert into 36 squares; top with chocolate chips to resemble watermelon pieces as shown in photo.

- Line a baking sheet or large plate with wax paper. Arrange the watermelon cubes on the wax paper so that they aren't touching one another. Stick a toothpick atop each piece of watermelon then place the baking sheet in the freezer for 30 minutes.
- Melt the chopped chocolate in a double boiler or in the microwave. Dip each frozen piece of watermelon into the melted chocolate. Shake off any excess chocolate then immediately sprinkle the chocolate with sea salt. (The chocolate will harden very quickly.) Return the dipped watermelon pieces to the wax paper to set fully. Serve immediately or store in the freezer until ready to serve.
- Do not use chocolate chips in this recipe, as they have a waxy coating that makes it more difficult for the chocolate to adhere to the watermelon.
