LAYERED TUNA SALAD
It's a tuna salad! A green bean salad! No, wait-it's an egg salad! Just when you thought this super layered salad couldn't be improved...we added bacon.

Steps:
- Spread lettuce onto bottom of 8- or 9-inch square glass dish; top with tuna.
- Add layers of green beans, eggs, olives, bacon bits and cheese.
- Combine dressing and sour cream; spread evenly over cheese. Cover and refrigerate 3 hours or until chilled.

THE BEST TUNA SALAD
While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

- Cook the pasta until it is still a little al dente (2 mins less than the pack instructions) and drain well. Cook the green beans in simmering water for 2 mins, then rinse in cold water and drain well. Mix the tuna with the mayonnaise and yogurt. Add the chives, if using.
- Tip the pasta into a large glass bowl or four small ones, or four wide-necked jars (useful for taking on picnics). Spoon the tuna dressing over the top of the pasta. Add a layer of green beans, followed by a layer of cherry tomatoes, then the pepper and sweetcorn. Cover and chill until you're ready to eat.

Steps:
- Boil the potatoes in salted water until tender, about 20 to 30 minutes; peel and mash while still hot.
- Let potatoes cool and mix with aji amarillo paste, vegetable oil, and lime juice; season with salt.
- Drain and combine tuna with onions and mayonnaise; set aside.
- To assemble, layer 1/3 of potato mixture on a serving dish; spread with a thin layer of mayonnaise.
- Spread avocado slices on top; spread second 1/3 of potato mash over avocados.
