Lemonade gets an extra burst of flavor from a few springs of fresh lavender.

3 cups granulated sugar
3 cups water
1/4 cup dried lavender
4 cups fresh lemon juice (from 16 to 20 lemons)
Ice, for serving
Lemon slices and fresh lavender sprigs, for garnish

Steps:

  • Bring sugar and water to a boil in a saucepan, stirring until sugar has dissolved. Stir in lavender. Remove from heat, and let stand for 10 minutes. Strain, discarding lavender. Let cool. Stir in lemon juice. Serve over ice, and garnish with lemon slices and fresh lavender sprigs.

Butterfly pea flower tea is the secret ingredient that naturally dyes this lemonade purple (lavender itself does not impart much color), but if you don't have it, simply replace the tea with 2 cups of cold water. The tea has no flavor so the lemonade will be delicious either way!

3 tablespoons dried culinary lavender
1 cup sugar
1 cup water
zest of one lemon
1 cup lavender syrup
1 cup freshly-squeezed lemon juice, strained of pulp (8 small lemons or 4 large lemons)
2 cups brewed butterfly pea flower tea, cooled
1 -2 cup ice
lavender, sprigs (for garnish)

Steps:

  • For the lavender syrup: Combine dried lavender, sugar and water in a small pot and bring to a boil, stirring until sugar is completely dissolved. Remove from heat and stir in lemon zest. Let lavender steep for 1 hour before straining syrup through a sieve lined with cheesecloth. Allow to cool completely and store in refrigerator until ready to use.
  • For the lemonade: In a large pitcher, combine lavender syrup, lemon juice and cooled butterfly pea flower tea. As you stir, you'll notice the blue tea turns purple when mixed with lemon juice. When ready to serve, add 1-2 cups of ice. Garnish individual glasses with lavender sprigs.

1/2 cup honey
1 tablespoon dried lavender buds
3 sprigs fresh lavender
1 cup fresh lemon juice
4 ounces ice cold vodka, optional
Frozen grapes, for serving

Steps:

  • Combine the honey, lavender buds and 3 cups water in a saucepan over medium heat. Bring just to a boil, stirring to dissolve the honey. Set aside and allow to cool completely, then cover and refrigerate overnight.
  • Add the lavender sprigs and the lemon juice to a large measuring cup and muddle to release the lavender oils. Strain the honey-lavender water and combine it with the muddled lemon juice. Let sit for 15 minutes before removing the lavender sprigs. Divide the lemonade between two 2-cup to-go containers. Refrigerate until ready to serve.
  • Divide the vodka, if using, between the containers. Add some frozen grapes to keep the drink cold! Serve.

1 1/2 cups sugar
12 sprigs lavender (with open flowers)
2 1/2 cups lemon juice, freshly squeezed (about 15 lemons)
1 cup vodka
4 lemon slices, for garnish

Steps:

  • Bring 2 1/2 cups water to a boil in a 2-qt saucepan. Reduce heat to medium and add sugar, stirring until dissolved. Add lavender stems and remove from heat.
  • Cover the pot and allow mixture to cool about 10 minutes.
  • Remove lavender stems from syrup and strain syrup to remove small pieces of flower.
  • In a large pitcher, combine lemon juice, remaining water and lavender syrup and stir well. Chill for about 1 hour in refrigerator.
  • Add vodka and stir. Serve over ice in tall glasses, garnished with lemon slices.
