- Grate peel of oranges and set aside. Peel and discard white membrane. Separate orange into sections and place half in a food processor or blender. Add half of the cranberries, apples and celery. Process until coarsely chopped. , Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery. Stir in sugar and reserved orange peel. Cover and refrigerate overnight.

CRAB APPLE AND CRANBERRY RELISH
If you bring cranberry relish to the Thanksgiving table this year, you'll be eating a food that long predates the holiday. Members of the Wampanoag Tribe of Gay Head (Aquinnah) have been harvesting sasumuneash (sour berries) on Martha's Vineyard, MA, for thousands of years, using them to flavor and preserve meat, dye textiles and prevent illnesses. Today the berries are still central to Aquinnah Wampanoag culture: Tribe members celebrate Cranberry Day in the fall with traditional foods like chowder, quahogs, venison and, of course, cranberries. Stay true to the berry's native roots this year and try a relish recipe from the National Museum of the American Indian.

- Dice 8 ounces unpeeled crab apples or Granny Smith apples and cook in a medium saucepan over medium heat, stirring frequently, until soft, 8 to 10 minutes. Add 1 cup fresh or frozen cranberries and cook until they start releasing their liquid, 8 to 10 minutes. Add 1/2 cup sugar and stir to dissolve. Add 1/4 cup cranberry juice, taste and add more sugar if necessary. Refrigerate, covered, for up to 3 days.
APPLE-ORANGE-CRANBERRY RELISH

- Grate the zest from the whole orange and set aside. Cut off any remaining pith from the orange. Cut the orange into chunks. Peel the apple and remove the core; cut into large pieces.
- In a food processor, combine the orange zest and chunks, apples, cranberries and celery and process until finely chopped; be careful not to process too long because the mixture will become mushy. Add the walnuts and pulse until chopped. Stir in the sugar and orange liqueur. Refrigerate until serving time, at least 2 hours and up to overnight.

I got this recipe a good 20 years ago from a woman I worked with. I've been making it at holiday time ever since because, 1) the simmering spices make for a symphony of aroma that takes me back to my favorite spot in grandma's kitchen, and 2) with my arthritis, it's a simple, tart-y way for me to say, "you're special." - Preheat the oven to 350ºF. Wash the cranberries and place them in a large 8x13-inch casserole dish (2-3 quart dish). Peel, core, and cut the apples into cubes roughly the same size as the cranberries. Place the cubed apples in the dish with the cranberries.
