LAMB WITH LENTILS (CROCK POT)

Lamb With Lentils (Crock Pot) image

This simple hearty stew needs a 5 -quart slow cooker/crock pot. One change I made when I made this recipe was to add a lamb bone (leftover from Easter dinner) and some leftover lamb (I think if you have enough leftover lamb this will work very well, but I also added 1 1/2 pounds or so of uncooked lamb - following the directions below) in the crock pot; then when I came home from work I took out the lamb bone (the meat from the bone already fell off the bone into the soup) and added the swiss chard, went out and dinner was done! The other change I made was instead of a whole can of tomatoes (which I didn't have) I used one can of broth, 1/2 can of tomatoes and 2 small cans of tomato juice. Very hearty and filling -- you would never even guess that this was a "healthy" recipe. Recipe source: The Healthy Slow Cooker

Time 9h

Yield 8-10 serving(s)

Number Of Ingredients 14

2 tablespoons olive oil, divided
2 lbs lamb, cut into 1-inch cubes
2 onions, chopped
8 carrots, peeled and sliced
4 stalks celery, sliced
4 garlic cloves, minced
2 teaspoons herbes de provence
1 teaspoon salt
1/2 teaspoon peppercorn, cracked
2 bay leaves
1 cup vegetable broth
1 (28 ounce) can tomatoes, chopped
2 cups lentils, rinsed
8 cups swiss chard, stemmed and chopped

Steps:

  • In a skillet over medium high heat heat 1 tablespoon oil for about 30 seconds or so.
  • Add lamb to skillet, cook until browned (3-5 minutes) in batches if necessary. Transfer lamb to slow cooker as it is cooked.
  • Reduce heat to medium and drain all but 1 tablespoon of the fat from the skillet.
  • Add onions, carrots and celery to skillet and cook stirring until vegetables are soft (5-10 minutes).
  • Stir in garlic, herbes de Provence, salt and peppercorns and cook another minute or so.
  • Stir in bay leaves, broth and tomatoes (with the juice) and bring mixture to a boil and then transfer mixture to slow cooker. (see my note in description - I also added a lamb bone chopped into two pieces so it would fit in my crock pot).
  • Stir in lentils.
  • Cover and cook on low for 8 hours or on High for 4 hours or until mixture is bubbly and lamb and lentils are tender.
  • (Remove bone from crock pot - see note in description) Stir in chard in batches, stirring into the stew. Cover and cook on High for 20-30 minutes or until chard is tender. Discard bay leaves.

BAKED LAMB CHOPS AND LENTILS

Baked Lamb Chops and Lentils image

I developed this based on a French pot roast recipe. I wanted a way to cook chump chops - my least favourite cut of lamb. It is pretty garlicky so some may want to reduce the quantity by 1/3-1/2. Serve with green beans and mashed potato... and the rest of the wine!

Provided by auntchelle

Categories     Lamb/Sheep

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 11

4 lamb chops, chump
1/2 teaspoon dried rosemary
4 teaspoons minced garlic
1 brown onion, halved and thinly sliced
1 1/3 cups water
1/2 cup dry white wine
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon chili powder
1/2 cup brown lentils
1 (400 g) can crushed tomatoes

Steps:

  • Preheat oven to 220 deg Celsius.
  • Trim chops of excess fat, leaving a small amount for browning. Heat a non-stick pan to high and brown chops well on both sides. Remove to a lidded casserole big enough so the chops are crowded but in 1 layer.
  • Sprinkle chops with rosemary and then top with the garlic.
  • Drain fat from pan and wipe clean. Return pan to heat and dry fry onions, adding a small amount of water if needed. Once soft and translucent transfer from pan to casserole, layering over garlic. Place casserole in oven.
  • Return pan to heat and add water, wine, oregano, thyme and chilli and bring to the boil. Add lentils and return to the boil. Cover and lower heat to simmer. Cook for five minutes.
  • Add canned tomatoes to lentils and return to boil. Taste and season with salt and fresh ground black pepper, as preferred. Remove casserole from oven. Transfer lentils and tomatos to casserole being careful of spatter. Push chops around so liquid goes to bottom but do not mix. Cover and return to oven for approximately 1 hour (depending on thickness of chops). Meat should almost fall off the bone.
  • Remove from oven, stir and let sit, covered, for 10 minutes before adjusting the seasoning and serving.

LAMB IN THE SLOW COOKER

Lamb in the Slow Cooker image

We adore Australian or New Zealand lamb, which has more flavor than the blander US lamb. So I was happy to have been given this simple recipe using a Crock-Pot®. Great served with mashed potatoes.

Provided by Carol Foster

Categories     Meat and Poultry Recipes     Lamb

Time 8h55m

Yield 16

Number Of Ingredients 9

1 tablespoon extra-virgin olive oil
1 (4 pound) leg of lamb
1 large sweet onion, sliced
5 cups water
½ cup soy sauce
2 cloves garlic, minced
1 (1 ounce) package dry onion soup mix
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Heat oil in a large skillet over medium-high heat. Add lamb and cook until outside is browned, about 5 minutes per side. Remove to a plate and add onion to the oil in the skillet. Saute until lightly browned, about 5 minutes.
  • Place onion in the bottom of a slow cooker pot and place the lamb roast on top. Mix water, soy sauce, garlic, and onion soup mix together and pour over the roast. Cook on Low for 8 to 10 hours.
  • Remove roast, cover lightly with foil, and let rest for 20 minutes before carving. Mix butter and flour into a paste. Add small pieces of this paste to the hot cooking liquid, mixing well to incorporate. Cook until sauce reaches desired thickness, 5 to 6 minutes.

MEDITERRANEAN LAMB AND LENTIL STEW

Mediterranean Lamb and Lentil Stew image

This light and delicious stew makes a perfect springtime meal, especially when served over rice pilaf. It's a favorite of my children.

Provided by carina

Categories     Soups, Stews and Chili Recipes     Stews

Time 55m

Yield 4

Number Of Ingredients 16

1 tablespoon olive oil
1 ½ pounds lamb shoulder arm chops, cubed, round bones reserved
1 teaspoon salt
½ teaspoon ground black pepper
1 onion, chopped
4 cloves garlic, minced
1 cup lentils, picked over and rinsed
2 cups chicken broth, or more as needed
1 (14 ounce) can diced tomatoes
3 carrots, peeled and sliced
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon dried basil
2 cups coarsely chopped fresh spinach
1 lemon, juiced and zested
½ cup ricotta salata cheese, crumbled

Steps:

  • Heat oil in a heavy pot over medium-high heat. Add the lamb cubes and bones and brown on all sides, about 3 minutes. Sprinkle with salt and pepper. Add onion and garlic and continue cooking about 2 minutes, stirring frequently.
  • Stir in the lentils, 2 cups of the chicken broth, tomatoes, carrots and the thyme, sage and basil. Bring to a boil, reduce the heat to low and simmer, covered, until the lentils are tender but not quite done, stirring occasionally. Depending on the type and freshness of the lentils, this will take from 15 to 30 minutes. If the stew seems dry, add more broth (up to one cup additional). Discard the lamb bones.
  • Add the spinach and cook 5 minutes more. Stir in the lemon zest and juice. Garnish individual servings with some of the crumbled cheese.

LAMB FOR LEARNERS! REDCURRANT AND HONEY GLAZED LAMB (CROCK POT)

Lamb for Learners! Redcurrant and Honey Glazed Lamb (Crock Pot) image

This is the name that my daughter came up with, for my most requested lamb dish! She did not realise how easy it was to cook, as the results are so sophisticated and special! I have never made it other than in the crock-pot, but I am sure it would cook very well in an AGA or wood burning range......long and slow. This is an ALL YEAR around recipe, as we have cooked this in the summer and served this meltingly tender lamb with salads and crusty bread - as well as in the winter with mountains of mashed potatoes! The redcurrant and honey glaze is sensational, and makes the most divine gravy or sauce. Do not be tempted to use a cheap and low fruit content redcurrant jelly, it gives nowhere near the same taste and results as a high fruit jelly. I always use a leg of lamb for this dish - but I suspect that shoulder of lamb would work extremely well. Be warned......this is a fall off the bone, moist and very succulent way of cooking lamb!!

Provided by French Tart

Categories     Lamb/Sheep

Time 8h10m

Yield 8 serving(s)

Number Of Ingredients 7

4 -5 lbs leg of lamb
4 -5 tablespoons red currant jelly
3 tablespoons honey
2 tablespoons Dijon mustard
2 -4 garlic cloves, peeled and crushed or 3 teaspoons garlic powder
salt
black pepper

Steps:

  • If the leg of lamb is too big for your crock-pot, cut through the joint between the main leg and shank.
  • Put 2 tablespoons water into the crock-pot and place the lamb inside.
  • Spoon the honey, Dijon mustard and redcurrant jelly over the top of the lamb.
  • Sprinkle the crushed garlic/powdered garlic, salt & black pepper over the top of the lamb.
  • Cook on high for at least 6 hours and up to 8 hours - YES, on high! If it is a 4lb to 5 lb leg of lamb, these are the perfect timings - it falls off the bone and is moist and tender.
  • About 30 minutes before serving, carefully ladle most of the juices out of the crock pot and into a large mixing jug. Allow the juices to cool and skim the fat that rises to the surface.
  • Place the juices into a saucepan and bring to the boil, boil vigorously until it has reduced by about a half - you now have the most wonderful gravy or sauce to serve alongside the lamb!
  • Take the lamb out and allow to "rest" for about 10-15 minutes before carving and falling in love!
