LAMB SHANK AND BARLEY SOUP WITH LOTS OF VEGIES



Lamb shank and barley soup with lots of vegies image

Ask your butcher for some large hindquarter shanks, perfect for this soup.

2 tbsp olive oil
2 large meaty lamb shanks
50g butter
2 large onions, finely sliced
2 large cloves garlic, sliced
4 medium carrots, halved lengthways and sliced
1 leek, halved lengthways and sliced
2 sticks celery, sliced
1 parsnip, peeled, cut in half lengthways and thinly sliced
Sprig thyme
2 large waxy potatoes, peeled and diced
2 litres water
½ cup pearl barley
Fresh bayleaf
Sea salt and freshly ground pepper
1 cup fresh parsley sprigs

Steps:

  • Heat oil in a large heavy-based pot. Brown shanks on all sides, remove from pot and set aside. Melt butter, then add onions, garlic, carrots, leek, celery, parsnip and thyme. Cook over low heat for 15 minutes until softened. Add potatoes and cook for five minutes. Add water, pearl barley, shanks and bay leaf. Bring to the boil, then reduce heat and simmer for 60 minutes, until shanks are tender and meat is falling off the bone. Remove shanks and shred meat with your fingers or a fork. Discard bones. Return lamb to the pot. Season with salt and pepper, add chopped parsley and serve.

This is my mum's recipe, which I made just recently. My son's girlfriend wanted the recipe, so I figure this is the easiest way to give it to her! If you like hearty old-fashioned soup, this is a good stick-to-your-ribs one! Cook time includes making the stock, then next day, the soup, but not the sitting overnight!

Number Of Ingredients 16

3 lamb shanks
1 onion, roughly chopped
2 stalks celery
2 carrots, peeled and roughly chopped
1 teaspoon black peppercorns, lightly crushed
1 clove garlic, crushed
3 -5 stalks parsley
3 -5 sprigs fresh thyme (optional)
3 stalks celery, diced finely
2 large carrots, cut into tiny dice
2 medium onions, diced
1 small swede turnip, grated
1 (40 g) packet dry onion soup mix
1 (500 g) packet dried soup mix (a mix of dried pearl barley, lentils and dried vegetables)
9 cups water
salt & freshly ground black pepper

Steps:

  • STOCK: Place all the ingredients for the stock in a large saucepan and cover with water.
  • Bring to the boil, then reduce to a very low simmer and cook for about 2 hours, or until the meat is tender enough to fall off the bones.
  • Strain, reserving the liquid and meat and discarding the vegetables.
  • Shred the meat and refrigerate.
  • Cool overnight, refrigerate, then remove the fat from the top of the stock and discard the following day.
  • SOUP: Place all the ingredients (except the shredded, reserved meat) for the soup in a large stockpot.
  • Bring to the boil, then reduce to a simmer and cook for about 1 hour, or until the soup mix is tender, stirring occasionally.
  • Season well to taste, add the reserved meat and heat through well.
  • Serve with crusty buttered bread!

A beautifully balanced, rich yet light, warming soup recipe. This lamb shank soup celebrates the flavours of North Africa and is too easy to make!

1 tbsp extra virgin olive oil
2 lamb shanks (bone in or out)
1 brown/yellow onion (finely diced)
1 medium sized carrot (finely diced)
2 celery sticks (finely diced)
2 garlic cloves (peeled and mashed/finely diced)
1 bulb of fennel (sliced )
400 g tin tomatoes (14.5 oz can)
4 cups chicken stock (use good quality)
1/2 cup pearl barley
2 tsp harissa paste
1 tbsp lemon juice (about juice of half a lemon)
2 tsp lemon zest (zest of a lemon)
greek yogurt, mint or parsley, pomegranate (for serving )

Steps:

  • Heat 2 tbs evoo in a dutch oven over medium heat.
  • Add lamb and sear each side for 1-2 minutes until browned. Remove from pan.
  • Add onion, carrot and celery and cook for 3-5 mins until soft. Add a dash more olive oil if it's sticking.
  • Add garlic, and fennel and cook a further 3 minutes.
  • Stir through harissa paste.
  • Add tomatoes and chicken stock. Bring to a simmer.
  • Once simmering, add in the pearl barley, and lemon zest.
  • Return the lamb shank meat back to the dutch oven.
  • Simmer for 1 hour - 1 30 minutes, or until soup is thick. Lamb should be falling off the bone, or easily shredded with a fork.
  • To serve, stir through the lemon juice.
  • Spoon into bowl, then top with greek yogurt (optional), mint or parsley, extra lemon zest and pomegranate.

1 onion, diced

1 (8 ounce) packet chicken noodle soup
1/2 teaspoon black pepper, fresh ground
2 beef bouillon cubes
1 bay leaf

Steps:

  • Place all the prepared ingredients into a large saucepan and cover with water, simmer for 2 hours, then remove the shanks and strip the meat from the bone and return the meat to the soup and simmer for 30 minutes.
  • Crusty bread or damper go well with this soup.

I love this recipe because I can make it the day before, it uses traditional and easy to grow herbs fresh from the garden and the vegetables are not exotic. Everyone seems to have their own version of this dish, but I think mine is special. I make for Sunday when we have neighbours round for a bottle ( or two) of wine and a casual lunch, so I can cook it slowly the day before and reheat it on the day. Because of slow cooking the vegetables melt and create a wonderful sauce. The meat falls off the bones. Keep it topped up with liquid while slow cooking. A real favourite on a winters day.

6 meaty lean lamb shanks
1 tablespoon olive oil
3 red onions, chopped
3 carrots, sliced in rings
3 parsnips, sliced in rings
3 stalks celery, sliced
1/4 cup plain flour
6 -8 sprigs fresh rosemary
1/2 cup mint leaf
6 bay leaves
1 liter stock or 1 liter water
500 ml red wine, to taste
1 teaspoon white pepper
2 teaspoons mild paprika

Steps:

  • Sweat the onions in oil an ovenproof casserole or crockpot.
  • Add carrot, parsnip, celery and mix.
  • Put flour, pepper, paprika in a paper or plastic bag and add lamb shanks one at a time, shake to coat.
  • Place the coated shanks in the casserole or pot on top of the vegetables.
  • Combine stock and wine and pour around the shanks covering them completely.
  • Place Rosemary, Bay and Mint on top of the meat.
  • Cook slowly in the oven for at least 3 hours at a temperature of about 160C the longer the better.
  • Top up with stock or wine if necessary.
  • To serve, remove the herbs and discard; serve on a plate with mashed potato and a good bottle of wine.

1 tablespoon olive oil
6 garlic cloves, peeled
1 large onion, chopped
1 large carrot, peeled and roughly chopped
1 (440 g) can peeled tomatoes, chopped, juice reserved
4 lamb shanks
250 ml red wine, good drinking quality
4 bay leaves
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 liter beef stock (approximately) or 1 liter water (approximately)

Steps:

  • Pre-heat oven to 160c.
  • Heat the oil in a big, heavy-based, oven-proof pan.
  • Brown the shanks well on all sides, remove, fry the garlic, onions and carrot until they are softened.
  • Add the tinned tomatoes and their juice to the pan, sit the shanks on top, then add the remaining ingredients.
  • Use enough stock to just barely cover the shanks.
  • Put the un-covered pan in the oven.
  • Braise for about 2 hours, checking it every 30 minutes or so.
  • Turn the shanks each time you check, and replace the liquid (some will evaporate during cooking) to bring it to half-way up the shanks.
  • The shanks are done when the meat is beginning to fall of the bone.
  • Remove them and place on a warmed serving dish Strain the liquid, pressing with a spoon to get all the juices out.
  • Skim and discard as much fat as you can, then reduce the remaining liquid to a nice gravy consistency.
  • Pour over the shanks and serve.
