8 ounces double-bone rack of lamb
Salt
Black pepper
1/4 cup olive oil
1 cup panko
1 teaspoon sea salt
Artichoke Puree (recipe follows)
Crispy Baby Artichokes (recipe follows)
Black Cerignola Olive, pitted and sliced
Savory herb leaves, for serving
1 cup chopped large artichoke hearts
1/2 cup water
1/2 cup olive oil
1/2 green Thai chili
2 teaspoons salt
2 teaspoons lemon juice
5 baby artichokes
Soya Oil
Salt
Pepper

Steps:

  • Season the lamb with salt and pepper and place it fat side down on a grill for about 12 minutes, turning while it cooks for an even sear all around.
  • Combine the olive oil, panko and sea salt in a large saute pan and stir until golden. Remove from the heat and let cool.
  • Place the Artichoke Puree on a plate and arrange the Crispy Baby Artichokes to one side of the puree. Sprinkle the sliced olive and leaves over the artichokes. Slice the lamb in half and arrange it on top.
  • Serve with the panko mixture on the side.
  • Place the artichoke hearts in a medium saucepan with the water and olive oil. Add the chili and salt, cover and cook until tender, but with no color. Pour the mixture in a blender and blend until completely smooth. Add the lemon juice and cool the puree in a pan set over ice.
  • Remove the leaves from the artichokes and quarter the hearts. Deep fry the artichoke hearts in soya oil until tender and golden. Drain, and season with salt and pepper.

4 shoulder lamb chops (1/2 inch thick each)
Coarse salt and freshly ground pepper
1 or 2 tablespoons extra-virgin olive oil
1 medium onion, halved crosswise and cut into 1/4-inch-thick slices
4 artichoke hearts (water-packed, from one 14-ounce can), rinsed, drained, and each cut into 6 wedges
1/4 cup fruity white wine, such as a New Zealand Marlborough Valley Sauvignon Blanc
1 cup homemade or low-sodium store-bought chicken stock
1/2 cup cherry tomatoes, halved
1/2 cup pitted Kalamata olives, halved
1 tablespoon lemon-zest strips

Steps:

  • Rinse chops; pat dry. Season with salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat until hot but not smoking. Cook lamb in two batches, turning once, 4 to 5 minutes per side for medium-rare. Transfer to a platter; loosely cover with foil.
  • Add onion and artichoke hearts to same skillet (add 1 tablespoon oil if skillet is dry). Cook over medium heat until softened and golden (do not brown), 3 to 5 minutes. Add wine; cook until almost all liquid is evaporated, about 3 minutes. Add stock and tomatoes; cover, and cook 3 minutes. Uncover; cook until sauce is reduced by half, 3 to 5 minutes. Stir in olives and zest. Season with salt and pepper.
  • Spoon vegetables and sauce over lamb, and serve.

4 loin lamb chops, trimmed of excess fat
Flour for dusting
1/2 cup pitted sliced olives (cured or Kalamata or good green ones), coarsely chopped
Dried or fresh oregano to taste
About 2 tablespoons fresh lemon juice or to taste
Salt and crushed red pepper

Steps:

  • Heat olive oil in a large skillet. Lightly dust loin chops in flour; when hot, sear chops on both sides for a minute. Lower the heat and cook, uncovered, turning frequently, for 5 to 10 minutes depending on how rare you like them. Remove chops to a plate and pour out most of the fat from the skillet. Add olives, oregano and fresh lemon juice to the skillet, deglaze and reduce. Season with salt and crushed red pepper.

1/4 cup olive oil
1 5-7-pound bone-in lamb shoulder
Kosher salt, freshly ground pepper
2 cups dry white wine
1 14-ounces can whole peeled tomatoes
1 head garlic, halved crosswise
1/4 teaspoon crushed red pepper flakes
2 lemons, halved crosswise
6 baby artichokes
Anchovy-Herb oil and assembly:
1/2 cup olive oil
4 anchovy fillets, packed in oil, drained
1 garlic clove, finely chopped
1/4 cup fresh flat-leaf parsley leaves
2 tablespoons fresh mint leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt

Steps:

  • Lamb and artichokes:
  • Preheat oven to 325°. Heat oil in a large skillet over medium high heat. Generously season lamb on all sides with salt and pepper and cook, turning often, until well browned, 12-15 minutes. Transfer lamb and oil to a roasting pan.
  • Carefully add wine to skillet, scraping up browned bits. Bring to a simmer and cook until reduced by one-third, about 5 minutes. Add tomatoes, crushing with your hands, garlic, red pepper flakes, and 2 cups water and pour into roasting pan. Squeeze lemons over lamb; add to pan. Roast 3 hours.
  • Meanwhile, remove tough dark outer leaves from artichokes. Using a serrated knife, trim 1" from top. Trim stems and remove tough outer layer with a vegetable peeler. Halve artichokes lengthwise. Toss to coat with pan juices and tuck under and around lamb. Roast, turning artichokes occasionally, until artichokes are tender and meat is falling off the bone, 1 1/2-2 hours. (Remove artichokes if they become too soft before meat is done.)
  • Anchovy-herb oil and assembly:
  • Pulse oil, anchovies, garlic, parsley, mint, and red pepper flakes in a food processor until smooth; season with salt.
  • When done, place lamb in a large bowl and transfer artichokes, lemons, and garlic with a slotted spoon to bowl. Pour anchovy-herb oil over; tent with foil. Transfer pan juices to a glass measuring cup. Let sit a few minutes, then spoon off fat from surface. Serve lamb with artichoke mixture and pan juices.

One of my favourite cooking styles is Italian. Many years ago, I had the privilege of becoming acquainted with, and lived among Italians families from the region of Calabria. I was therefore delighted when, upon reading this recipe, (as it appeared in "Saveur Magazine"), I recognized it as one which was created by Marcella Hazen "the acknowledged godmother of Italian cooking in America". Marcella has very quickly become my personal "Maven of Italian Cuisine". I do confess, however to "tweeking" blends of seasonings and ingredients to suit personal taste, but that is the essence of proficient cooking, isn't it? I believe that is the goal to which we all aspire to achieve; I am sure Marcella would agree. Marcella says "This is a recipe that starts out as two before becoming one. The chops and sauce... are cooked separately. Small rib chops should be cooked very briefly to a moist, flaming pink. Cook them too long, and they will turn gray and lose all their juice." I concur.

1 large red bell peppers or 2 small red bell peppers
8 lamb rib chops, about 1 inch thick
fine sea salt
2 tablespoons extra virgin olive oil
1/2 cup chopped onion
2 cups peeled ripe fresh plum tomatoes
3 tablespoons chopped flat-leaf Italian parsley
1/4 cup pitted green olives in brine
black pepper, ground fresh from the mill

Steps:

  • Cut each pepper lengthwise along the creases, remove the stem, seeds, and pithy core, and skin with a swivel-blade vegetable peeler. Cut into approximately 1-1/2" squares.
  • Sprinkle the chops on both sides with a little salt.
  • Put the olive oil into a 12" skillet and turn on the heat to high. When oil is hot, slide in the lamb chops. Brown them throughly on one side, turn over, and brown thoroughly on the other side. Remove from the pan to a plate and set aside.
  • Put the chopped onion into the pan and cook it over lively heat, stirring frequently, until it becomes a rich gold colour. Add tomatoes with their juice, turning them over in the pan once or twice, and cook for 5 minutes.
  • Add the cut up peppers, parsley, olives, salt and generous grindings of black pepper. Turn heat down to medium; cook, stirring occasionally, for about 8 minutes, until the peppers are tender but firm.
  • Sprinkle the chops with pepper and return them to the pan with the sauce. Turn the chops over several times to coat well and after about a minute or so, empty the full contents of the skillet onto a warm serving platter and promptly serve to hungry diners.

3 large russet potatoes, peeled and each cut into 8 wedges
2 tablespoons olive oil
1 tablespoon chopped fresh rosemary, divided
1 tablespoon chopped garlic
8 lamb loin chops (1-inch thick)

1/3 cup crumbled feta cheese
1/3 cup chopped pitted kalamata olive

  • Preheat oven to 450°F.

  • Roast until potatoes are almost tender, about 30 minutes.

Lamb Chops with Olives image

This is a lovely, careful way to prepare thick lamb chops-quite different from the usual fast grilling approach-and it makes them extraordinarily flavorful and tender. The chops brown gradually in a heavy skillet over relatively low heat, steadily building the flavors of caramelization, and then cook covered with a small amount of liquid and seasoning elements. This short period of moist cooking doesn't draw the meat juices into the liquid (as it would in long stewing or braising) but instead brings the seasoning flavors more intensely into the meat itself. Here, lemon, olives, and oregano give the chops the tangy taste of Abruzzo. For a great winter meal, accompany them with something cozy, like polenta, mashed potatoes, or smothered cabbage or cauliflower. In summer, a tossed green salad is all you need. Either rib chops or loin chops are suited for this recipe, though my choice is the loin chop, which offers portions of both the loin and the tenderloin muscles (like a T-bone steak). You could use lamb shoulder chops, too, but they'd need nearly twice as much time to cook covered. They wouldn't be as amazingly tender as loin or rib chops, but they would be delicious (and cost a lot less). With any kind of chop, a heavy cast-iron pan is perfect here, because of its steady heat-retaining qualities, but it must be well seasoned, so the meaty caramelization is not lost on the pan bottom.

2 tablespoons extra-virgin olive oil
6 bone-in lamb loin chops, about 1 1/2 inches thick (about 5 ounces each, trimmed of fat)
1 teaspoon kosher salt
1/4 cup all-purpose flour
4 plump garlic cloves, crushed and peeled
Juice of 1 lemon (about 2 tablespoons)
1 cup pitted black olives, preferably taggiasca or Gaeta (see Sources, page 387)
1 teaspoon dried oregano
1/4 teaspoon peperoncino flakes, or to taste
A large well-seasoned cast-iron frying pan or other heavy-bottomed skillet or sauté pan, preferably 12-inch diameter, with a cover

Steps:

  • Pour the olive oil into the cast-iron skillet, and set over medium-low flame to heat slowly. Salt the chops lightly all over, using 1/2 teaspoon salt in all. Spread the flour on a plate, dredge the chops on both sides, and shake off excess flour.
  • When the pan and oil are hot, lay in the chops-they should all fit snugly in one layer. Let them cook gently for 3 minutes or longer, until lightly browned on the first side, then flip them over and brown the second side gradually. As they cook, drop the crushed garlic cloves in the spaces between them, to sizzle and caramelize in the pan bottom-turn the cloves as they darken (and don't let them burn). Turn the chops again a couple of times, giving both sides another 2 or 3 minutes of browning, until well browned all over-about 10 minutes in all.
  • Pour the lemon juice and 1/2 cup water into the pan, around the chops, and sprinkle the remaining salt over them. When the liquid is bubbling, drop the olives in between the chops, and shake the pan to distribute them. Sprinkle the oregano and peperoncino over the olives, then cover the pan.
  • Adjust the heat to keep the juices bubbling gently and slowly concentrating. Cook, covered, turning the chops a couple of times, until the pan juices have thickened and adhere to the meat like a moist glaze-about 10 minutes or longer, depending on thickness.
  • Remove the pan from the heat, and let the chops rest for a couple of minutes, taking in the moisture. Serve right from the skillet, with the olives and pan juices spooned over the chops.

8 1-inch-thick loin lamb chops

Steps:

  • Heat 2 tablespoons oil in large skillet over medium-high heat. Add 2 minced garlic cloves, 2 teaspoons rosemary, and 1/2 teaspoon orange peel; stir 30 seconds. Add artichoke hearts and broth; bring to boil. Cover; boil 5 minutes. Uncover; cook until sauce thickens, stirring occasionally, about 4 minutes. Remove from heat.
  • Sprinkle lamb with remaining garlic and rosemary, then salt and pepper. Heat remaining oil in another large skillet over medium-high heat. Add lamb; sauté until cooked to desired doneness, about 4 minutes per side for medium-rare. Transfer lamb to platter.
  • Spoon off fat from skillet with lamb. Add artichoke mixture; boil 2 minutes, scraping up browned bits. Season with salt and pepper. Spoon artichoke mixture around lamb. Sprinkle with remaining orange peel and serve.

1/2 cup (packed) fresh oregano leaves (about 3 bunches)
8 large garlic cloves
1 tablespoon coarse salt
1 tablespoon ground black pepper
1 4-pound semi-boneless leg of lamb, fat trimmed
4 tablespoons olive oil
5 tablespoons fresh lemon juice
4 medium artichokes, stems and tops trimmed
1 lemon, halved
24 brine-cured black olives (such as Kalamata)
6 8-ounce white potatoes, each cut lengthwise into 6 wedges
Fresh oregano sprigs

Steps:

  • Finely mince 1/2 cup oregano, garlic, salt and pepper in processor. Place lamb in large roasting pan. Rub lamb with 2 tablespoons olive oil. Spread 4 tablespoons oregano mixture over lamb, reserving remainder. Arrange lamb so that fat side is up. Let stand at room temperature 1 hour.
  • Meanwhile, fill large pot with cold water. Add 4 tablespoons lemon juice to water. Cut 1 artichoke lengthwise into 8 wedges. Rub cut surfaces of artichoke with lemon half to prevent discoloring. Cut away choke and discard, leaving artichoke wedges intact. Place artichokes in pot with water . Repeat with remaining artichokes. Boil artichokes until almost tender, about 15 minutes. Drain. Transfer to large bowl. Add olives, 1 tablespoon lemon juice and 1 teaspoon oregano mixture to artichokes; toss to coat. Set aside.
  • Preheat oven to 450°F. Roast lamb 10 minutes. Reduce temperature to 350°F.
  • Meanwhile, mix potatoes, 2 tablespoons oil and oregano mixture in bowl.
  • Arrange potatoes around lamb in roasting pan. Roast until thermometer inserted into thickest part of lamb registers 140°F, about 50 minutes.
  • Transfer lamb to large platter. Add artichoke mixture to roasting pan with potatoes; mix well. Continue roasting vegetables until tender, about 20 minutes. Surround lamb with vegetables. Garnish with oregano sprigs and carve roast at table.

1 teaspoon cornstarch

Steps:

  • Preheat oven to 300°F.
  • Rub shanks with 1 tbsp lemon juice and season. In a skillet, saute shanks in olive oil and sear, turning to brown all sides.
  • Transfer shanks to a casserole dish and sprinkle with remaining lemon juice, garlic, and oregano. Add onion and bake covered, for 2 1/2 hours.
  • Add beef broth, wine, and artichoke hearts. raise heat to 350°F and bake covered for 30 minutes more.
  • Transfer lamb and chokes to a platter to keep warm. Mix cornstarch and water in a cup. On stovetop, Add cornstarch mixture to the casserole dish and cook with the lamb juice on med-high heat to thicken.
