One Pot Curry Chicken and Rice image

Mild Indian Spiced Curry Chicken cooked in one pot with flavorful Basmati Rice! Friends, this one pot dinner comes with promise of a comforting and easy weekday meal and NO huge pile of dishes to wash! Sounds perfect?! Isn't it? Curry Chicken being special favorite of everyone in my family..... Often, this one pot is my favorite to serve over weekdays! Where everyone loves the kitchen filled with Curry Chicken aroma, my secret favorite is: far less dishes to clean..... Start to end, you need ONE pot! Plus flavor!? Like eating, Chicken Curry and Rice in your favorite Indian restaurant!All component of Curry Chicken Pot help boost each other's flavor! Since chicken cooks in same pot and in same spices, rice absorbs a LOT of flavor from chicken and masala. Amazingly, I almost never have to use chicken stock for such one pot rice since chicken itself releases a lot of juices and flavor in the pot.No Need to Pre-Marinate Chicken:For similar reason, I never have to pre-marinate chicken for one pot or casserole recipes. All I do is: coat chicken in lemon and salt, then sprinkle with spices, mix and leave aside while I prepare rest of ingredients. A flavor-explosion happens when that spice coated chicken is seared in pan, before going for a flavor-bath with ginger-garlic masala basmati rice!Chicken Curry or Curry Chicken:In my home, we don't address this dish as "curry" at all! We call it, "Chicken Chawal (Rice)". For blog, I was really wondering if I should call this, Curry Chicken and Chicken Curry? Really, just by shuffling these two words, dish gets entirely new meaning. I did not want to confuse any one thinking, this is: "Chicken Curry that is chicken with curry gravy served over rice". Rather, it is: "Curry Chicken and Rice that is curry spiced chicken cooked in one pot with rice". Do you too treat these two separately, or only I was overthinking? ;-)You know what?! At the end, no matter how we shuffle these words....... result is a flavorful Indian Chicken Dinner, all prepared in one pot. I would rate this curry mild spicy yet with very distinct flavor of Indian Masalas(spices). If same curry was prepared without rice, it may be little strong for some people. But, rice act as neutral flavor-absorbent base and hence overall taste is: a mild, delicious, savor-every-bite kinda curry. Serve some yogurt on side and you don't need anything else for dinner!Diet Info: This Curry Chicken dinner is Gluten Free and also dairy free. 1.5 lbs Chicken, bone-in chicken thighs, 3-4 count
1 tsp Curry Powder
1.5 Cup Basmati Rice, or Jasmine Long Grain Rice, washed
1/2 tsp Garam Masala
1/2 tsp Cumin Seeds
1 Cup Red Onion, 1/2 red onion, coarse choped
1/2 Cup Tomatoes, grated
1 tbsp Ginger Garlic Paste, or fresh 1 inch ginger and 2-3 garlic cloves
2 tbsp Canola Oil, or use grapeseed oil, per preference
3 tbsp Lemon, juice
1 Mace (Javitri), 1 blade
1/2 tsp Cayenne Pepper
1 Star Anise, optional
6 tbsp Cilantro, fresh leave and stems, small chopped
1 tsp Salt, adjust per taste
3 Cup Water

Steps:

  • In a bowl, add lemon juice and 1/2 tsp salt. Add chicken, coat in lemon, sprinkle 1/2 tsp of curry powder and 1/4 tsp garam masala and set aside while we prep rest of ingredients.
  • In a food processor, add onion, garlic, ginger (if not using paste) and process or grate to coarse texture mix. Set aside. Also, wash rice under running water, soak in fresh clean water and set aside.
  • Heat oil in heavy bottom pan, add chicken seasoned skin side down. Reserve lemon juice of bowl. Sear chicken on high heat for 3 minutes each side or until skin is crisp caramelized. Drain on paper towel and set aside.
  • In the same hot oil, add onion mixture and saute until onions are soft and started to change color (amber), just caramelize at the edges. (about 4 minutes) Don't let them too brown.
  • Now, add remaining 1/4 tsp garam masala, 1/2 tsp curry powder, cumin seeds and cook for 30 seconds. Then add mace, star anise, cayenne, with 1/2 tsp of salt, reserved lemon juice, and grated tomatoes. Cook until tomatoes are soft, cooked, and oil starts to show on edges. (about 4 minutes)
  • Add in rice (drain soaking water) and fresh 3 cups of water with half of chopped cilantro (3 tbsp), and mix well. Return chicken on top of rice, and bring to boil. Cover with tight lid, and cook for 12 minutes on medium heat.
  • After 12 minutes, switch-off heat and leave pot covered for 5 minutes. Now, remove chicken, fold in remaining cilantro, return chicken to pan and cover to keep warm until ready to serve!

1 1/2 teaspoons cumin seed
1 1/2 teaspoons coriander seed
1 1/2 teaspoons yellow mustard seed
1 teaspoon fennel seed
1 teaspoon fenugreek
1 teaspoon black peppercorns
1-inch piece cinnamon stick
A few curry leaves, fresh or dried, if available
4 to 5 cardamom pods
1 tablespoon turmeric
1 teaspoon ground red pepper flake or red chili powder
1 leek
1 small onion
1 to 2 red finger chile peppers, optional
4 cloves garlic
1 inch ginger root
1 apple, large Gala or Honeycrisp
4 tablespoons butter
A few curry leaves, if available
3 tablespoons flour
4 cups chicken stock
1 1/4 cups basmati rice
1 rotisserie chicken, 3 to 4 pounds
About 1/3 cup mango chutney, Patak's preferred brand
Salt
2 store-bought garlic naan bread
Cilantro leaves and 2 scallions, to serve

Steps:

  • Gather your ingredients.
  • For the curry spice: Add to a small skillet: cumin, coriander, mustard seed, fennel seed, fenugreek, black peppercorns, cinnamon stick, curry leaves and cardamom. Heat and toast about 2 minutes over medium heat. Transfer to a spice mill, zap it up and grind spices. Add turmeric and red pepper flake or powder and zap again. Reserve any extra in an airtight container.
  • For the chicken and vegetables: Place a medium pot on stove with 2 quarts water and bring to boil.
  • Heat a griddle pan or large cast-iron skillet over medium-high heat for bread.
  • Place a bowl on the counter. As you work, transfer your ingredients to a bowl. Trim the top and roots of leek and split it lengthwise. Fan it under cold running water to release grit. Leave on cloth to dry. Peel and chop onion. Slice chile peppers if using. Peel garlic. Rub skin off the ginger with the tip of a spoon. Peel apple then cut 1/4-inch slices around the core in slabs. Stack and chop into about 1/4-inch dice. Split the halved leek again lengthwise and slice 1/4 inch.
  • Place a deep skillet over medium to medium-high heat and melt butter. Add the vegetables and stir. Grate garlic and ginger and add along with curry spice and curry leaves if using. Cover and cook 5 minutes, stirring occasionally. Add the flour and stir a minute or so. Whisk in broth, bring to a boil and reduce, 5 to 8 minutes.
  • Add rice to the boiling water. Boil 12 minutes, then rinse in a strainer under HOT water to serve.
  • While the curry thickens, peel chicken of the skin and cut away meat. Pull into bite-size pieces.
  • Stir chutney into sauce to combine, then add chicken. Adjust salt if necessary.
  • Add a splash of water to griddle pan or skillet and place naan bread on to char both sides, 1 to 2 minutes. Remove bread from griddle and cut into quarters.
  • Pull cilantro and chop scallions, whites and greens.
  • Serve curry in shallow bowls or dishes with a lip on or beside rice, with naan strips alongside. Garnish with scallions and cilantro.

1 medium onion, chopped
2 large cloves garlic, minced
1 (1-inch) piece fresh ginger, grated
1 tablespoon curry powder
½ teaspoon ground turmeric

⅛ teaspoon ground cardamom
1 (14 ounce) can diced fire-roasted tomatoes
1 (14 ounce) can full-fat coconut milk
1 medium carrot, chopped
1 medium red bell pepper, chopped
1 ½ cups bite-sized cauliflower or broccoli florets
1 pound boneless skinless chicken thighs, cut into 1 inch chunks
½ teaspoon fine sea salt
¼ teaspoon pepper
2 cups lightly packed baby spinach leaves
cooked rice*
chopped fresh cilantro
raw cashews

Steps:

  • Add the olive oil to a large stockpot or dutch oven set over medium heat. When hot, add in the onion and cook for about 5 minutes, until tender. Add in the garlic, ginger, curry powder, turmeric, cumin and cardamom. Cook, stirring frequently, for about 1 minute, until toasted and fragrant.
  • Stir in the tomatoes, coconut milk, carrot, bell pepper, cauliflower / broccoli, chicken pieces, salt and pepper.
  • Increase the heat and bring to a simmer. Continue to simmer, reducing the heat as needed and stirring occasionally, for about 15 minutes, until the veggies are tender and the chicken is cooked through (165ºF on an instant read thermometer).
  • Turn the heat down to low and stir in the spinach until wilted. Remove from the heat.
  • Taste and season with additional salt / pepper if needed, then serve as desired.

Raid the fridge and rustle up this hearty yet healthy salad with pulses, nuts, tikka chicken and a mango curry dressing

500g bag long grain rice
1 tsp turmeric
small bunch coriander , leaves roughly chopped, stalks reserved
100g bag toasted cashew , ½ very roughly chopped
1 cucumber , deseeded and cut into chunks
1 large red onion , finely chopped
about 110g pack pomegranate seeds
400g can black bean , drained and rinsed
2 x roughly 130g packs cooked chicken tikka pieces, chopped
natural yogurt and mini poppadum crisps, to serve (optional)
4 tbsp mango chutney
1 tbsp sunflower oil
1 tbsp brown sugar
1 tbsp medium curry powder , plus 1 tsp for the rice
juice 1½-2 lemon , depending on size

Steps:

  • Cook the rice following pack instructions but add the turmeric and 1 tsp curry powder to the cooking water. Drain well and spread on a tray lined with kitchen paper to cool.
  • Meanwhile, finely chop the coriander stalks and whisk with all the other dressing ingredients, plus seasoning.
  • Tip the rice into a big mixing bowl. Using a fork, break up any large lumps, then mix in the cashews, cucumber, onion, coriander leaves, pomegranate seeds, beans and chicken. Pour over the dressing and lightly stir in, then cover and keep in the fridge. Eat over the next 2 days (as long as it's within the chicken use-by date). Keep a big spoon in the bowl so kids can easily help themselves. Top with a dollop of yogurt and add a handful of poppadum crisps, if you like.

2 tbsp vegetable oil or ghee
2 large onions, finely sliced
4 large garlic cloves, crushed
thumb-sized piece of ginger, peeled and finely chopped
4 heaped tbsp mild curry paste
1 tsp turmeric
4 cardamom pods, bashed
1 cinnamon stick
4 small skinless chicken breasts or 8 skinless and boneless chicken thighs (about 600g), cut into bite-sized chunks
250g basmati rice, rinsed
600ml chicken stock
200ml coconut milk
75g frozen peas
150g green beans, rimmed and halved
½ cauliflower (about 225g) broken into small florets
50g raisins or sultanas
coriander leaves, flaked almonds, plain yogurt and mango chutney, to serve

Steps:

  • Heat the oil in a a large casserole dish (that has a lid) over a medium heat, then fry the onion, garlic and ginger until brown and fragrant, about 10 mins. Stir in the curry paste, turmeric, cardamom and cinnamon, and stir for a few minutes. Add the chicken and cook for another couple of minutes, stirring to colour on all sides.
  • Add the rice, stir well, then stir in the stock, coconut milk, a generous pinch of seasoning, the veg and raisins. Bring to the boil, then reduce to a simmer, pop the lid on and cook for about 25-30 mins until the water has been absorbed, the chicken and rice are cooked through, and the veg is tender. Season to taste. Remove the cardamom and cinnamon stick, then scatter over the almonds and coriander. Serve with yogurt and mango chutney on the side.

For those who keep Kosher, there is no dairy in soy products, and that takes the worry out of mixing meat and dairy, which is otherwise a big no-no.

1 tablespoon olive oil
4 chicken drumsticks, deboned and cubed
1 cup soy yogurt, plain
3 whole allspice
2 teaspoons gingerroot, grated
2 teaspoons curry
1 teaspoon red pepper flakes

1/2 cup water
1 tablespoon cornstarch

Steps:

  • Heat olive oil, in a skillet, on medium high heat. Once hot, brown the drumstick meat in it, until it's properly cooked, about 5 minutes.
  • In a small bowl mix the plain soy yogurt with the seasonings, then slowly add it to the skillet, making sure the chicken is properly coated in it, as it is cooking. Stir occasionally for 3 minutes.
  • In another small bowl, mix water and cornstarch, until there it is smooth and there are no lumps. Add this to the chicken mixture, stirring occasionally for about 5 minutes or until sauce thickens.
  • Serve warm and over basmati rice.

CHICKPEA CURRY (INDIAN STYLE) OVER BASMATI RICE

This recipe was inspired by a dish I received in my "Meatless Monday" weekly emails. I changed it around ALOT by adding a few more interesting spices and served it over basmati rice simmered with turmeric. I often make Indian curries using chickpeas, but this recipe added a couple tsp of peanut butter, which I thought sounded really interesting. Please adjust the heat according to your tastes. One small red chili can be substituted for the red chili powder (please note the red chili powder is like cayenne pepper, not the spice blend for making Mexican chilli!)

1 vidalia onion, chopped (or any large sweet onion)
4 garlic cloves, minced
1/4 teaspoon red chili powder, to taste
3/4 teaspoon cumin
1 1/2 teaspoons curry powder (I like the brand Madras)
1/2 teaspoon coriander
2 (14 1/2 ounce) cans chickpeas, half the liquid reserved
1/2 lemon, juice of
3 tablespoons tomato paste
2 teaspoons peanut butter
salt
1/2 cup cilantro leaf
1 1/2 cups basmati rice
1 tablespoon butter
1/2 teaspoon salt
3/4 teaspoon turmeric
3 cups water

Steps:

  • For the rice:.
  • Rinse 1 1/2 cups basmati rice in cold water until the rinsing water is no longer cloudy.
  • Add 1 tbsp butter to a skillet over medium heat.
  • Add rice to skillet and toast in butter for a minute or two until fragrant.
  • Add 1/2 tsp salt and 3/4 tsp turmeric and mix into rice.
  • Next add 3 cups of water and cover.
  • Bring to a slight boil then reduce heat to low and simmer for about 10-12 minutes.
  • Remove from heat and let sit a minute or two.
  • Fluff rice with fork, and keep covered until ready to serve.
  • For the curry:.
  • Saute onion and garlic over medium heat until softened and slighty browned.
  • Add chili powder or chilli if using and cook for another minute or so.
  • Next add the cumin, curry powder and corriander into the onions and garlic and cook for another minute or until fragrant.
  • Add chickpeas and reserved liquid, stir to coat evenly with all the spices.
  • Next add the lemon juice and tomato paste, cook on medium heat for about 5 more minutes until all is heated through.
  • If pan seems try, please add a little water, 1/4 cup at a time.
  • Place about 1/3 of the chickpea mixture into a blender and blend for about 20 seconds (here as well, please feel free to add a little water if mixture is too thick to blend).
  • Add blended chickpeas back to the pan and cook for another 5 or so minutes.
  • Finally, add the 2 tsp of peanut butter, until melted into the curry.
  • Stir in 1/2 of the cilantro leaves.
  • Season with salt and pepper to taste.
  • Serve over the basmati rice and top with remaining cilantro leaves.
