KYLE'S CHEESY CHICKEN
This is a classy dish and easy to make! It includes boneless chicken breast, lemon juice, black pepper and some salt. To top it with some style, I throw on some ready cut tomatoes and shredded Monterey Jack cheese and toasted sunflower seeds.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Place the sunflower seeds on a baking sheet in a single layer. Place them into the oven to toast while the oven is preheating. This should take only about 10 minutes. Keep an eye on them, they burn easily.
- In a small bowl, mix together the lemon juice, pepper and salt. Place the chicken into an 11x7 inch baking dish, and sprinkle with the lemon juice mixture. Cover with a lid or aluminum foil.
- Bake for 25 to 30 minutes in the preheated oven, or until chicken is no longer pink, and the juices run clear. Remove the dish from the oven, and drain off any liquid. Spoon the tomatoes over the chicken. Sprinkle the toasted sunflower seeds and Monterey Jack cheese evenly over the top. Switch the oven to Broil.
- Place the dish with the chicken back into the oven uncovered, and broil for about 1 or 2 minutes, until the cheese is melted. There you have it!

CHEESY CHICKEN BREASTS
Boneless chicken breasts coated in a Ritz cracker crumb coating, pan-fried until crispy, and served with a cheddar cheese sauce.

Steps:
- Preheat oven to 350 degrees and lightly grease a baking dish.
- Season chicken with salt and pepper.
- In a shallow bowl, whisk together egg yolks and water.
- Pulse crackers in food processor until fairly fine crumbs are formed.
- In a pie plate combine cracker crumbs, 1/3 cup flour, paprika, and Parmesan cheese.
- Coat chicken in egg mixture and then dredge in cracker crumb mixture.
- Melt 2 tablespoons butter over medium heat in a large nonstick pan. Add chicken, turn heat to medium-high and cook until golden brown on both sides, about 2 minutes per side.
- Place in baking dish and bake for approximately 25 minutes, or until cooked through.
- Meanwhile, melt 2 tablespoons butter in a medium saucepan. Stir in flour and cook for about 30 seconds. Gradually whisk in milk and cook until sauce simmers and thickens.
- Whisk in Worcestershire sauce. Remove from heat and whisk in cheddar cheese.
- Serve chicken topped with cheese sauce.

- *I have used different kinds of soups and canned vegetables to match, i.e. mushroom, potato, broccoli--whatever you have on hand, but I like asparagus the best*.
- Combine first four ingredients in a bag.
- Shake chicken pieces in flour mix.
- Melt butter in skillet.
- Brown chicken on all sides.
- Place in 13x9-inch baking dish.
- Combine soup, sour cream, and asparagus; mix well.
- Pour over chicken.
- Bake at 350° for 1 hour.
- Sprinkle with cheese and return to oven till it melts.

EASY CHEESY CHILI CHICKEN
Steps:
- Preheat oven to 400 degrees F.
- Whisk together the oil, chopped cilantro, chili powder, cumin, salt, garlic, pepper, and cayenne in a bowl; add the chicken and toss to coat.
- Transfer chicken to a foil-lined baking sheet and arrange the green pepper, onion, and tomato over each. Roast until the largest piece is just cooked through, and an instant-read thermometer inserted in the thickest part reads 165 degrees F, about 20 minutes.
- Remove the chicken from oven and immediately top with the cheese and serve as the cheese melts. Transfer the chicken to a platter or among plates and garnish with fresh cilantro leaves.
