This is a local breakfast favorite with over easy eggs and some steaming white rice. The mix can be made a day ahead to allow the flavors to blend. The patties will also be easier to make once the mixture has chilled.

1 (12 ounce) can corned beef
2 stalks green onions, finely sliced
1 medium carrot, grated
1 large potato, cubed
1 large egg, beaten
2 teaspoons garlic powder
freshly grated black pepper, to taste
panko breadcrumbs (for dredging) or flour (for dredging)
oil (for frying)

Steps:

  • Boil cubed potato in salted water till tender, drain and allow to cool.
  • Combine the rest of the ingredients and mix well, mashing the potato into small chunks throughout the mixture.
  • Chill for 2-3 hours or overnight.
  • Heat enough oil in pan to evenly coat the bottom. (we are not deep frying these!).
  • Form the mixture into patties dredge in panko or flour, shake off excess and fry on both sides till golden brown. Add more oil to frying pan as needed.
  • Note: Prep and cook time does not include refrigeration time. This step is optional, patties can be formed and fried as soon as mixture is combined. It may be a little loose and not as easy to work with. End result will be just as yummy!

750 g kumara, peeled and chopped
1 small onion, peeled and finely sliced
1 tablespoon oil
1 cup sliced cabbage
1 teaspoon curry powder
227 g crushed pineapple in juice, very well drained
1 egg
3 -4 tablespoons Worcestershire sauce
340 g corned beef

Steps:

  • Cook the kumala in boiling salted water until tender, drain and mash.
  • Cook the onion in the oil in a frying pan until soft but not coloured. Add the cabbage and curry powder and cook only until the cabbage is wilted.
  • Add the onions to the kumala with the pineapple, egg and Lea and Perrins Worcestershire Sauce. Mix well.
  • Flake in the Corned Beef and mix gently.
  • Shape into 6-8 even sized patties and pan fry in a little oil until hot and golden on both sides.
  • Serve topped with sliced tomato and a few lettuce greens and a drizzling of your favourite vinaigrette.

A traditional storecupboard supper of fried potatoes with thrifty corned beef. Serve with baked beans for a simple lunch or supper.

500g potato, peeled and chopped
2 tbsp vegetable oil
1 onion, roughly chopped
340g can corned beef, cut into cubes
2 tbsp Worcestershire sauce
baked beans and a little curly parsley, roughly chopped, to serve (optional)

Steps:

  • Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.
  • Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.

1 small onion, chopped
4 teaspoons butter, divided
1 lb potato, peeled and quartered (about 4 medium)
1/2 cup milk
1 cup beef broth
10 ounces corned beef, diced
1 (10 ounce) can pickled beets, in slices (small can)
1 tablespoon pickled beet juice
4 eggs
salt & freshly ground black pepper

Steps:

  • In saucepan, cook potatoes in salted water until tender; drain, add milk and mash with a potato masher, leaving them somewhat chunky.
  • Add enough broth so the potatoes are wet, but not runny.
  • Meanwhile, in a skillet, brown the onions in 2 teaspoons butter for about 3 minutes; remove and set aside.
  • Brown the corned beef until warmed through; set aside.
  • Chop 5 of the beet slices into small dice, reserving the remainder.
  • Combine the potatoes, browned onions, corned beef, chopped beets and one tablespoon beet juice; season with salt and pepper.
  • In a clean skillet, fry the eggs in 2 teaspoon butter; season with salt and pepper.
  • Divide the potato/corned beef/beet mixture between 4 plates.
  • Top each with a fried egg and serve with remaining sliced beets, rollmops, and pickles.

1 deep dish pie shell (frozen and thawed)
3 eggs
1/4 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon pepper
5 cups o'brien frozen hash browns with onions and peppers (thawed)
1 (12 ounce) corned beef, crumbled
1 cup shredded cheddar cheese

Steps:

  • Heat oven to 425'.
  • Place pie crust in oven on the lowest rack; bake 7 minutes. Remove from oven. Reduce temperature to 375'.
  • In a large bowl beat the eggs, add mayonnnaise, salt and pepper, blend well. Add the potatoes and corned beef to egg mixture, mix well.
  • Spoon potato mixture into partially baked crust. Cover the crust with a pie crust shield or aluminum foil strips.
  • Place pie on the lowest rack in the oven. Bake 55 minutes or until potatoes are tender.
  • Turn off oven, remove pie from oven.
  • Sprinkle with 1 cup of shredded cheddar.
  • Place back in oven for 5 minutes, or until cheese is melted. Remove from oven and let set a few minutes before slicing.

  • Heat 2 tbsp oil in pan, add onion, garlic and potatoes, stirring, for 8 minutes until softened.

Easy Corned Beef Patties image

Everyone's starving and you're crunched for time? This is super easy, it's fast, and will please ANYONE!

1 (16 ounce) can corned beef (any brand)
5 eggs
vegetable oil
2 cups jasmine rice
4 cups water
ketchup

Steps:

  • Put rice in med pan with water. Heat until boiling. Cover and reduce heat to low. Or, if you have a rice cooker, that would work!
  • While rice is cooking -- In mixing bowl, smash corned beef and eggs until blended. I just use a fork.
  • Pour a few Tbsp of oil in nonstick frying pan on med-hi.
  • When oil is hot, lower heat to medium and drop beef and egg mixture in pan. Fit as many patties in pan at a time. It is ok if they touch a little bit.
  • When patties appear to have a liquid plane, flip over and fry until oil becomes foamy for a minute or so. Basically when egg is fully cooked!
  • Then move cooked patties to plate lined with paper towel or napkin to soak excess oil.
  • Serve over steamed rice and top with ketchup!
