K's Crustless Broccoli Quiche Recipe - (4/5) image

Number Of Ingredients 10

12 ounces fresh Broccoli, steamed for 3-4 minutes
1 medium onion, chopped
2 tablespoon butter
1 cup Colby-Jack, Cheddar, grated or whatever cheese you prefer
2/3 cup low fat milk
1/4 cup half and half
1 egg, plus 1 cup egg substitute
1/2 teaspoon kosher salt
1/2 teaspoon pepper
Pinch nutmeg

Steps:

  • Preheat oven to 350°F. Spray a pie dish with cooking spray. Steam the broccoli in about 1/3 cup water 3 to 4 minutes in microwave. Saute the onion in 2 tablespoons butter. Mix steamed broccoli and onion together and spread into prepared pie plate. Sprinkle with grated cheese. Whisk egg, egg substitute, milk and cream together and stir in spices. Pour over broccoli/cheese mixture. Bake about 45 to 50 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes before cutting into pieces. FABULOUS!

Steps:

  • Heat oven to 350°F.
  • Whisk eggs and milk in medium bowl until blended. Add bread; mix lightly. Stir in remaining ingredients.
  • Pour into 9-inch square baking dish sprayed with cooking spray.
  • Bake 45 min. or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.

1 (10 ounce) package frozen broccoli florets
6 large eggs
1/2 cup half-and-half
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Butter four 8-ounce ramekins (or a 9-inch pie dish); set aside. Bring a medium pot of salted water to a boil. Add broccoli; cook 1 minute. Drain well; transfer to a cutting board, and blot dry with paper towels. Chop coarsely.
  • In a large bowl, whisk together eggs, half-and-half, 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg. Stir in broccoli and cheese.
  • Place ramekins on a rimmed baking sheet. Ladle broccoli mixture into ramekins, dividing evenly. Bake until golden brown, 35 to 40 minutes. Serve with crusty bread and a mixed-green salad, if desired.

8 ounces monterey jack cheese (grated)
1 small onion, chopped finely
3/4 cup heavy whipping cream
3/4 cup water
20 ounces frozen chopped broccoli (thawed and drained)

Steps:

  • Preheat oven to 375.
  • Combine all ingredients in a large mixing bowl
  • Stir until blended well.
  • Pour into a greased 9 in pie dish.
  • Bake 30 minutes.
  • Cover tightly with aluminum foil to avoid over browning.
  • Bake an additional 30 minutes or until toothpick inserted in cenyer comes out clean.

1 bunch broccoli
2 onions
1 clove garlic
2 tablespoons butter
1 cup grated swiss cheese or 1 cup cheddar cheese
1/4 cup fresh dill
4 eggs
1 1/2 cups cottage cheese
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon nutmeg

Steps:

  • Trim most of the stem of broccili and steam.
  • Cut up in small pieces.
  • Butter a 10 inch plate and put steamed broccoli on bottom.
  • Cook onions and garlic in butter 5 mins.
  • ,put over broccoli.
  • Sprinkle with cheese.
  • Beat the eggs, and add to eggs cottage cheese, salt, pepper, nutmeg and dill and pour over top.
  • Bake at 375 30-40 mins.
  • Cool 10 mins.

1/8 teaspoon black pepper

Steps:

  • Preheat oven to 350. Heat oil in small nonstick skillet on medium-high heat. Add onions; cook 5 minutes or until onions are tender, stirring occasionally. Add broccoli; mix well. Spoon into 9-inch pie plate sprayed with cooking spray.

4 large egg whites, lightly beaten
2 large eggs, lightly beaten
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon ground nutmeg
1 tablespoon parmesan cheese, freshly grated

Steps:

  • Preheat oven to 350°F Spray 9-inch pie pan with cooking spray.
  • Heat oil in large non-stick skillet over medium-high heat. Add onion and garlic, and cook, stirring often, 1 1/2 minutes. Add broccoli and cook, stirring often, 1 minute. Spread mixture into pie pan.

6 large eggs
3/4 cup heavy cream
8 ounces shredded cheddar cheese
4 slices deli ham, shredded (more to taste)
1 small broccoli, crown cooked and chopped (or 1 sm. box frozen broccoli)
3 green onions
salt & pepper
2 tablespoons olive oil

Steps:

  • Heat olive oil in a medium sized heavy skillet.
  • Saute green onions until soft and add the shredded ham and stir until slightly browned.
  • In a large bowl, beat the eggs and heavy cream together by hand; stir in the onions& ham, broccoli,cheese and seasonings.
  • Pour into a buttered deep-dish pie plate.
  • Bake at 375degrees for 45-50 minutes, or until a knife inserted in the center comes out clean.
  • NOTE: You will have to tent the quiche with aluminum foil to prevent over-browning.
  • Start checking it halfway through the cooking time.
  • Let stand 10 minutes and cut into wedges to serve.
