KOREAN MARINATED HARD-BOILED EGGS
Spicy, salty, and just a hint of sweet... Korean marinated eggs. These make a great snack but also work nicely as a side dish to Asian food. For extra spicy eggs, add some Sriracha or crushed red pepper flakes to the mixture.

Steps:
- Combine soy sauce, water, sugar, green onions, jalapeno, garlic, and sesame seeds together in a large bowl. Add eggs to the bowl, cover, and refrigerate for 8 hours to overnight.
- Remove eggs from the refrigerator. Slice in half and place on a serving platter. Spoon some of the marinade over top and drizzle with sesame oil to serve.

- In a pot, add in water (enough to cover all the eggs) and add salt and vinegar. Turn the heat up to medium-high and bring the water to a simmer. Once the water is boiling, carefully egg in the eggs and let ti eggs cook for 6 minutes. After 6 minutes, remove the egg and let it rest in a bowl of ice water for at least 10 minutes. Peel the eggs carefully and set them aside.
- In a container, add garlic, chopped green pepper, red chili, green onion, soy sauce, honey, sesame oil, and water. Mix till everything is combined. Add in the peel eggs and making sure the eggs are covered in the marinade. Let the eggs rest in the fridge for at least 2 hours or better overnight.

- Add vinegar and salt to a pot of boiling water. Reduce the heat and gently place each egg into the water. Simmer for 6 minutes (or 10 minutes for hard-boiled eggs). Prepare a large bowl of ice water.
- When the timer goes off, immediately transfer the eggs to the ice water bath. Allow the eggs to cool completely, for at least 5-10 minutes.
- Gently peel the eggs (detailed tips above) and place them in a container. Pour the marinade on top, cover, and store in the refrigerator overnight, or at least 6 hours.
