1 tablespoon olive oil
2 tablespoons tamari soy sauce (or regular soy)
2 tablespoons honey
2 tablespoons Korean Gochujang
1 tablespoon lemon juice
1 teaspoon minced garlic
Red pepper flakes to taste (optional)
2 pounds (907g) peeled and cleaned shrimp, tails still on

Steps:

  • Soak bamboo skewers in water for 30 minutes before using.
  • Mix together olive oil, soy sauce, honey, Korean Gochujang, lemon juice, garlic and red pepper flakes if using, in a mixing bowl.
  • Add the shrimp to the bowl and mix until coated.
  • You can cook straight away or leave to marinate the shrimp. If marinating, marinate for 30 minutes up to 2 hours ahead. Thread about 5 shrimp to each skewer.
  • Preheat the grill (or charcoal grill), broiler or grill pan to medium heat, oil the grates and grill the shrimp for 2-3 minutes per side or until opaque.
  • Transfer skewers to a plate and serve.

Wooden skewers (4-inch)
24 large shrimp
1/2 cup light soy sauce
2 cloves garlic, finely chopped
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
2 tablespoons white wine vinegar
1 tablespoon fresh lime juice
1/4 cup peanut oil, plus extra for drizzling
Salt and pepper
2 tablespoons toasted sesame seeds

Steps:

  • Soak 4-inch wooden skewers in cold water for 1 hour. Thread 1 shrimp onto each skewer so that the shrimp lie flat.
  • Whisk together the soy, garlic, ginger, sesame oil, white wine vinegar, lime juice and peanut oil together in a small bowl. Place shrimp skewers onto a plate and drizzle with peanut oil to lightly coat. Season with salt and pepper.
  • Heat grill. Grill shrimp 2 minutes per side or until just cooked through. Place shrimp on a platter, drizzle with vinaigrette and sprinkle with sesame seeds.

1/2 cup olive oil
3 cloves garlic, crushed
1 tablespoon Calabrian chile flakes
1 tablespoon fresh oregano leaves, plus for garnish
Kosher salt and freshly ground black pepper

1 pound extra-large (16 to 20 per pound) shrimp, shelled and deveined, tail-on

Steps:

  • Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
  • Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

Lots of flavor, I have made this also using pork tenderloin. Soak the wooden skewers in water for half an hour to prevent them burning. Marinating time not included. Freezing the meat slightly makes it easier to slice it thin.

1 1/2 lbs boneless sirloin beef (or other good beef)
1 tablespoon toasted sesame seeds
1 -2 cloves crushed garlic
1/2 tablespoon grated fresh ginger
3 -4 green onions, finely chopped
1/3 cup soy sauce
2 tablespoons dry sherry
2 tablespoons sesame oil
2 teaspoons sugar
1/2 teaspoon crushed red pepper flakes, to taste

Steps:

  • Toast the sesame seeds in a frying pan over medium heat until brown, let them cool.
  • Cut the beef in thin slices.
  • Mix all marinade ingredients together, add also the sesame seeds, and to this add the beef.
  • Leave to marinate at least 30 minutes, a few hours is preferred.
  • Thread the meat on wooden skewers, grill or barbecue a few minutes on each side, using the remaining marinade for basting.

1 1/2 cups soy sauce
1/4 cup packed brown sugar
2 tablespoons dark sesame oil
1 tablespoon maple syrup
1 tablespoon granulated sugar
5 cloves garlic, finely chopped
3 tablespoons sliced green onions
2 teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
1/2 teaspoon cracked black pepper

Steps:

  • Combine all ingredients in a small bowl until well blended.
  • Marinade shrimp for 1 hour in the refrigerator.
  • Thread shrimp and green onion strips on metal or bamboo skewers, alternating.
  • Grill, turning once, basting 5 minutes until tender.
  • Boil remaining marinade in saucepan for 1 minute.
  • Serve with shrimp.
