I am pretty sure that Korean Bulgogi is supposed to be meat strips, marinated and cooked. I just used 6 small steaks and marinated them whole. So maybe it would be more accurate to say this is a recipe that is INFLUENCED from Korean Bulgogi. I'd so hate to offend.

1 1/2 lbs steak
1 onion, rough chopped
2 tablespoons sesame oil
2 tablespoons cooking sherry
2 tablespoons sugar
1/3 cup soy sauce
3 garlic cloves
1 teaspoon ginger
1 teaspoon ground pepper

Steps:

  • Mince garlic & mix all ingredients with the steak strips.
  • Let marinate for 2 hours refrigerated or overnight.
  • Pan fry or grill steaks until done.

1 lb sliced beef rib eye (korean stores sell the right cut)
1/2 cup soy sauce
1/3 cup sesame oil
2 tablespoons sugar
3 sliced garlic cloves
black pepper
toasted sesame seeds
sliced spring onion
lettuce leaf, large pieces to roll meat and rice in
cooked rice

Steps:

  • Mix soy sauce, sesame oil, sugar and garlic together. Taste and adjust for seasonings. Add black pepper, sesame seeds and sliced green onions.
  • Marinate beef at least one hour.
  • Grill a few miniutes on each side. It should be cooked through thoroughly but not dry.
  • Serve with rice, sam (large lettuce leaves) and kochujang (hot bean paste).
  • In each lettue leaf, put a little bit of rice, some bulgogi and some hot bean paste. Roll like a little taco.

KOREAN BULGOGI TACO RECIPE

3 pounds beef short ribs, off the bone
1 cup soy sauce
1/2 cup mirin
1/2 cup dark brown sugar
1/4 cup sesame oil
6 cloves garlic
6 scallions
2 teaspoons peeled and grated fresh ginger
3 cups roughly chopped Napa cabbage
1 cup matchstick-size daikon slices
3 tablespoons chopped fresh cilantro
6 scallions, diced
2 limes, juiced
1/4 cup soy sauce
2 tablespoons mirin
2 tablespoons Sriracha
2 tablespoons extra-virgin olive oil
Twelve to fifteen 6-inch yellow corn tortillas or flour tortillas
Sriracha, for serving

Steps:

  • Cut off any excess fat from the short ribs then thinly slice the beef and cut into 1 1/2-inch pieces. Place in a large bowl or in a plastic resealable bag.
  • In a blender or food processor, blend the soy sauce, mirin, sugar, sesame oil, garlic, scallions and ginger. Pour half of the sauce over the short ribs, ensuring all the beef is covered. Seal tightly and marinate the short ribs in the refrigerator for at least 3 hours and up to 24 hours.
  • Place the other half of the marinade in a pan and reduce over medium heat, stirring occasionally, until the mixture is thick. Place in a serving bowl and reserve to drizzle on the tacos.
  • For the slaw: Place the cabbage, daikon, cilantro and scallions together in a medium to large bowl.
  • For the dressing: In a small bowl, whisk together the lime juice, soy sauce, mirin and Sriracha. Slowly whisk in the olive oil. Place the dressing in the fridge until ready to use.
  • For the taco assembly: Heat your griddle to high. Flash cook the meat while simultaneously caramelizing the marinade. Place your short ribs on the griddle. Cook for 2 to 3 minutes and flip. Cook an additional 3 minutes, then wrap the meat in foil and set aside.
  • Grill up your tortillas. Flip after 45 seconds. Grill for another 45 seconds and remove.
  • On the grilled tortillas, pile some Korean slaw, dressing, beef, reserved and reduced marinade and extra Sriracha to taste. Then, chow down.

2 pounds sirloin or flank steak
1/4 cup soy sauce
2 tablespoons sugar
2 tablespoons Asian (dark) sesame oil
2 tablespoons rice wine or sherry
4 cloves garlic, finely chopped
4 scallions, minced
1-inch piece of fresh ginger, peeled, crushed and finely chopped
1 tablespoon sesame seeds, toasted
Freshly ground black pepper
1 head red leaf lettuce, separated into leaves, washed and dried
Sliced green chilies
Whole peeled and sliced garlic cloves
Bean paste
Pepper paste
White rice

Steps:

  • Score the meat, if necessary, and place between two pieces of plastic wrap, pound lightly with meat pounder, lightly, to tenderize. Slice the meat on the diagonal into thin strips. Place the meat in a shallow non-reactive baking dish. In a large bowl combine the marinade ingredients and pour them over the meat, mixing well. Cover and marinate in the refrigerator for 1 to 2 hours. Preheat the grill. Remove the meat from the marinade. Over high heat grill for 1 to 2 minutes on each side, until meat is nicely browned. Alternately, the meat may be cooked in a very hot frying pan. Wrap a few pieces of beef in a lettuce leaf and all or any of the garnishes. Eat at once.;
  • Julienned scallions mixed with chopped red leaf lettuce, red pepper flakes, sesame oil, soy sauce, rice vinegar, black pepper .
  • Daikon julienned with vinegar, pickled radish, carrot, julienned .

1 1/2 lbs boneless rib eye steaks, cut into very thin slices 5-6" long x 2" wide (I use Black Angus)
4 teaspoons sugar
1/4 cup soy sauce
3 cloves garlic, crushed/chopped fine
3 scallions, cut into 1-inch pieces
1/4 teaspoon pepper
1 teaspoon korean sesame oil

Steps:

  • Mix beef& sugar, let rest 2 minutes, then add remaining ingredients.
  • Toss well and let stand 1 hr at room temp or overnight in the refrigerator to allow the meat to mature- better the longer it marinates!
  • Preheat a large, heavy skillet over moderate heat for 2 minutes.
  • Add beef, a few slices at a time, and sear without oil for 2-3 minutes at most.
  • Or, grill beef in very hot gas or electric broiler.
  • Serve immediately with white sticky rice and an assortment of side dishes.

1 1/4 lbs beef (thinly sliced, less than 1/8-inch)
1 medium onion
5 tablespoons soy sauce
2 1/2 tablespoons sugar
4 tablespoons chopped green onions
2 tablespoons minced garlic
2 tablespoons sesame seeds
2 tablespoons sesame oil
1/2 teaspoon black pepper
1 kiwi fruit, minced (optional)

Steps:

  • Slice onion.
  • Mix all sauce ingredients in a large bowl.
  • Put beef, onion and mix well.
  • Let stand 1-2 hours in refrigerator to marinate.
  • Adjust sweetness and saltiness with more or less sugar and soy sauce.
  • The best taste is achieved when it is grilled on a charcoal.
  • You can also cook it on frying pan or broiler.

Steps:

  • Cut the meat into thin bit-size 1" x 2" wide strips.
  • Combine the remaining ingredients in a separate bowl.
  • Add the meat to the marinade, one slice at a time; blend thoroughly.
  • Let stand for at least one hour (preferably overnight) in the refrigerator.
  • Barbecue beef over hot coals (or in an electric skillet) until done, but do not overcook.
  • Serve hot by placing a piece of meat and some"Sticky-Rice" in a lettuce leaf-- roll up the lettuce leaf and eat.
