1/4 cup butter, cubed
1 teaspoon chicken bouillon granules
2 tablespoons finely grated onion
1/4 cup cornstarch
4 cups half-and-half cream
1 pound jumbo lump crabmeat, drained
1 tablespoon grated Parmesan cheese
2 teaspoons seafood seasoning
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon pepper
3 tablespoons sherry
Additional nutmeg

Steps:

  • In a large saucepan, heat butter and bouillon over medium heat. Add onion; cook and stir until tender, 1-2 minutes. Stir in cornstarch until blended; gradually whisk in cream. Bring just to a boil, stirring constantly. Stir in crab, cheese and seasonings. Reduce heat; simmer, uncovered, to allow flavors to blend, about 20 minutes, stirring occasionally., Stir in sherry; heat 1-2 minutes longer. Sprinkle servings with additional nutmeg.

As a Maryland native growing up, crab was always plentiful, available and fresh - usually caught that day. Today I buy fresh lump or jumbo lump crab for this soup, depending on the audience. Using a lesser grade of crab won't give you the premium results you are probably seeking.

1 lb backfin crab meat
1/4 cup butter
2 tablespoons onions, chopped very fine
1/3 cup flour
1 (14 ounce) can chicken broth (don't use a heavy stock)
1/2 cup dry sherry (very dry sherry should be pale yellow in color)
1/4 teaspoon pepper
1 teaspoon salt (to taste)
3 cups whole milk
1 cup heavy cream
8 -9 dashes Tabasco sauce
8 -9 dashes of a less vinegary hot sauce (such as Texas Pete's or Frank's)
1 pinch cayenne (just a very light shake!)
1 teaspoon sugar
1 tablespoon tomato paste (use concentrated, it comes in a tube)

Steps:

  • Gently remove cartilage from crab meat.
  • Melt butter in a 2-3 quart sauce pan.
  • Add the onion and cook 3-4 minutes - until translucent.
  • Blend in flour and cook as a roux on medium-low heat until the flour-butter mixture "loosens", which indicates the flour is cooked (about 5 minutes).
  • Off the heat, stir in chicken broth and sherry, return to the heat and simmer for 3 minutes.
  • Add salt, pepper, milk and cream, then stir in Tabasco, cayenne and sugar.
  • Use a little of the liquid to thin the tomato paste and stir it back into the soup.
  • Cook on med-low heat until thickened, but do not let it boil.
  • Taste it, and when the cream base is cooked and seasoned to your liking, add the crab.
  • Heat gently another 5 minutes and serve.
  • Serving suggestion: make a lightly sweetened whipped cream to dollop on top and serve with a small pitcher of the sherry to add at the table.
  • A small amount of fresh chopped parsley around the edge of a soup plate is attractive, but don't use too much because you don't want to affect the flavor of the soup.

1 to 2 tablespoons seafood seasoning
1 teaspoon salt
1/2 teaspoon curry powder
4 cups milk
1 pound fresh crabmeat or 3 cans (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons minced fresh parsley
Additional milk and parsley, optional

Steps:

  • Melt butter in a 3-qt. saucepan; stir in flour, seafood seasoning, salt and curry powder. Cook until thickened and bubbly. Gradually add milk; cook and stir until mixture is hot (do not boil). , Remove cartilage from crab if necessary. Add crab and parsley to soup; cook and stir just until crab is heated. If desired, thin soup with additional milk; garnish with parsley.

1 lb lump crabmeat
1/4 teaspoon celery salt
1 chicken bouillon cube, or 1 teaspoon chicken bouillon granules (which I prefer)
1 cup boiling water
1 dash white pepper, to taste
1/4 cup chopped onion
1 quart whole milk ((2% is okay, if you must, but don't go any lower))
3/4 cup butter
chopped parsley
3 tablespoons flour

Steps:

  • Dissolve bouillon cube in water.
  • Cook onion in butter until tender, blend in flour and seasonings.
  • Add milk and bouillon gradually; cook until thick, stirring constantly.
  • Add crabmeat, heat.
  • Garnish with parsley.
  • Note: you can saute a clove of garlic along with the onion, too.

I got this recipe from my grandmother, who was one of my main inspirations for cooking, I think it's hard to find a good cream of crab soup that is fairly simple to make. Anyone from Maryland will appreciate this recipe.

1 large onion, finely chopped
1 medium green pepper, finely chopped
2 tablespoons butter
2 garlic cloves, minced
3 pints half-and-half cream
2 cups frozen shredded hash brown potatoes, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of asparagus soup, undiluted
2 cans (6 ounces each) lump crabmeat, drained
1 package (8 ounces) imitation crabmeat, chopped
1-1/2 cups frozen corn, thawed
1 tablespoon dried parsley flakes
1-1/2 teaspoons dill weed
1-1/2 teaspoons seafood seasoning
1 teaspoon pepper

Steps:

  • In a Dutch oven, saute onion and green pepper in butter until tender. Add garlic; saute 1 minute longer. Stir in the remaining ingredients. Cook and stir over medium-low heat until heated through (do not boil).

4 cups half-and-half, divided

1 cup whipping cream
1 tablespoon cooking sherry
1 pound fresh crabmeat

Steps:

  • In a medium bowl, blend flour and hollandaise sauce mix with 2 cups half-and-half.
  • Melt butter in a medium, heavy saucepan over medium heat. Slowly add hollandaise mixture, stirring constantly until thickened. 1 pint crabmeat
1/2 cup butter
1 (13 ounce) can evaporated milk
6 cups milk
1 teaspoon sugar
8 teaspoons Old Bay Seasoning
2 1/2 teaspoons dry mustard
3 teaspoons salt
pepper, to taste
6 tablespoons flour, divided
water

Steps:

  • Bring milk almost to a boil and add the rest of the ingredients except flour and water.
  • Make a paste of the flour, using just enough water added to it to get a paste texture and blend paste into the soup.
  • Bring this mixture to almost a boil and repeat the paste blend made now from the last 3 tablespoons flour and blend in again.
  • Stir to blend and serve.

2 small potatoes, peeled and cut into medium dice
1 small onion, finely diced
1 tablespoon dry mustard
1 teaspoon salt
2 tablespoons Old Bay Seasoning
1/4 cup flour
1/4 teaspoon pepper
4 cups half-and-half
2 cups milk
1 lb crabmeat (picked over for shells)
2 tablespoons dry sherry (optional)
1 tablespoon parsley

Steps:

  • In soup pot, melt the butter over medium heat.
  • Add onion, saute for 2-3 minutes.
  • Add potatoes, old bay, and mustard.
  • Decrease heat to low, cook, stirring often until potatoes are barely tender (30 minutes). Remove from heat.
  • Whisk in flour, salt and pepper. Return to medium heat and stir constantly about 2 minutes.
  • Slowly pour in half and half and milk, stirring constantly.
  • Cook over med-low heat, stirring often until thickened.
  • Add the crabmeat, simmer about 15-20 minutes.
  • When ready to serve, stir in sherry and parsley.

Like the sound of this variation of classic crab soup (something we love here) - the milk rather than cream will lighten it up a bit & the curry provides a nice complement to the crab. Of course we'll be using our "home grown" blue crab (- the best in the world IMAO LOL!) so I will be stashing this recipe to try later in the year when our own crabs are plentiful & heavy (so the picking won't be so arduous). A fresh green salad and crusty bread together with the soup makes a nice meal. Thanks David.

4 tablespoons flour
1 onion, peeled and chopped
3/4 cup celery, chopped

  • 5 Tbs. butter.
  • 4 Tbs flour.
  • 1 medium onion peeled and chopped.
  • 3 stalks of celery chopped.
  • 1 1/2 Tbs mild yellow curry powder.
  • 1 Tbs dried minced shallots or 2 Tbs fresh shallots peeled and minced.
  • 1 cup heavy cream.
  • 2 cups milk.
  • 2 cups chicken or vegetable stock.
  • juice of half a lemon.
  • 1 lb fresh crab meat (preferably half shreds and half lump or claw meat).
  • salt and pepper to taste.
  • 4 Tbs dry sherry.
  • Make a roux by melting 3 Tbs butter in a large sauce pan. Add the flour and cook over medium heat stirring constantly until it just begins to brown a little. Do not let it burn.
  • Add the other 2 Tbs of butter and the chopped celery and onions and fresh shallots (if using them) and continue to stir and cook until the vegetables are wilted (about 5 minutes). Add the curry powder, stir and cook for a minute more. Lower the heat.
  • Meanwhile heat the cream, milk and stock in another pan. If using dried shallots add them to to the liquid and bring to a low simmer. Do not let it come to a full boil or it may curdle.
  • Pour the hot liquid into the roux slowly stirring constantly as you pour. Raise the heat to medium and continue to stir while it thickens and comes to a simmer. Again do not boil. Simmer 10 minutes.
  • Add the lemon juice and crab meat meat and continue to heat and stir until it again is simmering. Taste and add salt and pepper if you think it needs it.
  • Pour into bowls and top each bowl with a spoonful of sherry. Serve hot.
