1 pint yogurt, plain (low-fat or nonfat) or 1 pint vanilla (low-fat or nonfat)
1 cup crushed graham cracker
1/2 cup diced tropical fruit or 1/2 cup kiwi, etc
1/2 cup blackberry, raspberries, strawberries, blueberries, etc
1/4 cup shredded coconut, toasted

Steps:

In a martini glass (or other festive vessel), spoon a dollop of the yogurt into the base of the glass, then top with a sprinkling of graham crackers, a layer of diced fruit, then a few berries. Then start again with the yogurt, continuing the pattern until the glass is filled. Garnish by sprinkling 1 tablespoon of the toasted coconut on top. Repeat with the remaining 3 glasses and serve immediately.

Making your own granola is easier than it looks, and it will add a nice touch to this quick and easy parfait.

1/3 cup low-fat plain yogurt
1/3 cup fresh or frozen mixed berries
1 tablespoon maple syrup
1 tablespoon Easy Homemade Granola, recipe below
2 tablespoons maple syrup
1 teaspoon extra-virgin raw coconut oil
1/2 cup old-fashioned oats
1/4 cup sliced raw almonds
1/4 cup raw sunflower seeds
Kosher salt
Nonstick cooking spray

Steps:

Fill a small single-serving (6 ounce) container with a third of the yogurt. Top with a third of the berries. Drizzle 1 teaspoon of maple syrup over the berries. Repeat two more times with the rest of the yogurt, berries and maple syrup. Pack the granola separately so that it can be mixed into the parfait when ready to eat. Pack the parfait with an ice pack or frozen juice box so that it stays cold until lunchtime.
Heat an oven to 350 degrees F.
Heat the maple syrup with the coconut oil in a small skillet over medium-low heat, just to melt the oil. While still warm, toss the maple syrup mixture together with the oats, almonds, sunflower seeds and a pinch of salt in a medium bowl. Spray a baking sheet with the nonstick cooking spray. Spread the granola on the sheet tray in a thin layer. Bake for a total of 20 minutes, tossing the granola halfway through. Let cool to room temperature and store in an air-tight container in the refrigerator for up to 1 month.

Ingredients

1 cup plain yogurt
1 cup prepared vanilla pudding (I use cook and serve)
3/4 cup rolled oats
2 tablespoons honey (I use raw)
1/4 teaspoon ground cinnamon
1 cup raspberries
1 cup sliced strawberry
1 cup blueberries

Steps:

In a small bowl, stir together the yogurt and vanilla pudding. Set aside.
Heat a dry skillet over medium heat. Pour in the oats, and toast for about 1 minute, or until hot.
Drizzle honey and sprinkle the cinnamon over the oats and continue to stir over medium heat until the oats are crispy and aromatic.
Remove the oats from the heat, and spoon most of them into the bottom of 4 glasses or small bowls. Reserve the rest for topping.
Using about half of the fruit, place a layer of fruit over the oats in each glass.
Pour the yogurt pudding mixture over the fruit.
Top with the rest of the fruit, and sprinkle with the rest of the toasted oats.
