Super Easy: Creamy Cucumber Salad image

This is actually the creamy version of my other recipe Recipe #382231. My DH actually prefers the creamy version more, but it totally depends on what type of Italian dressing I have on hand as to which one I make.

1/2 cup creamy Italian salad dressing
3 cucumbers (medium sized)
2 tablespoons chives
1 cup onion

Steps:

  • Peel and slice cucumbers and onions very thinly (I use a mandolin for this).
  • Place cucumbers, onion slices and salad dressing in a container that has a tight fitting lid.
  • Place the lid on and give the container a couple of shakes which will coat the cucumbers, chives and onions with the dressing and toss the salad.
  • Place container in the refrigerator for 24 hours. Enjoy!

Two medium regular cucumbers may be used in place of one large English cucumber, I prefer the taste and texture of English and has less water in it ---plan ahead there is a 75 minute draining time for the cucumber slices to remove excess moisture, this is a crucial step to prevent a watery salad, the onion is only optional, I like to add it in, this is a great recipe for garden fresh cucumbers :)

1 large English cucumber (peeled, halved lengthwise, seeds removed then sliced)
1 teaspoon kosher salt
1 1/2 teaspoons white vinegar
1/2 cup Hellmann's mayonnaise
1/3 cup sour cream
1 pinch sugar
2 -4 teaspoons chopped fresh dill
1/2 teaspoon fresh ground black pepper (or to taste)
1 small red onion, thinly sliced (optional)

Steps:

  • Place the cucumber slices into a glass bowl, sprinkle with vinegar and kosher salt; toss using hands.
  • Allow to sit for about 45 minutes.
  • Pour out any liquid from the bowl and drain in a colander; allow to sit for another 30 minutes to allow any excess drainage.
  • In a bowl mix together the mayonnaise with sour cream, sugar, fresh dill and black pepper.
  • Place the cucumbers in a bowl; pour the dressing over and toss to coat.
  • Mix in red onion slices (if using).
  • Cover and refrigerate until serving.

4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
  • Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
  • Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
  • To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

KITTENCAL'S FAMOUS CAESAR SALAD

I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is *that* good! --- although I do think the dressing is better with the anchovy it can certainly be made without them. In a pinch I have even substituted buttermilk for the half and half cream, just use about the same amount --- this dressing gets stronger with refrigeration time so a small amount of fresh garlic goes a long way! ---- usually one recipe without doubling is perfect for one large romaine lettuce, if you are serving a large crowd of people you might want to double -- salad dressing will not work for this use *only* mayonnaise, I find Hellman's brand mayonnaise works the best and for the perfect companion to this salad see my recipe#125034-------------LOWER-FAT OPTION use reduced fat mayonnaise and fat-free half and half or low-fat milk --- also see my recipe#66596

1 large head romaine lettuce (washed over and thoroughly dried)
1 1/2 cups garlic-flavored croutons (or to taste, see Kittencal's Garlic Croutons)
parmesan cheese
freshly grated black pepper (to taste)
2 anchovy fillets (or to taste)
2 fresh garlic cloves (or to taste)
1 cup mayonnaise (not salad dressing Hellman's is best)
1/4 cup half-and-half cream or 1/4 cup milk
1/3 cup grated parmesan cheese
2 tablespoons fresh squeezed lemon juice
1 tablespoon Dijon mustard (Hellman's Dijonnaise is best!)
salt and pepper
2 teaspoons Worcestershire sauce (or to taste) (optional)
buttermilk or half-and-half, for thinning

Steps:

  • In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
  • Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
  • Adjust seasonings to taste.
  • Thin with buttermilk (or milk) for a thinner consistency if desired.
  • Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
  • Toss desired amount of dressing with Romaine lettuce and croutons.
  • Sprinkle with more grated Parmesan cheese if desired.

  • Toss cucumber with salt in a colander and let drain 15 minutes.
  • Whisk together sour cream, vinegar, sugar, and pepper in a medium bowl until just combined.

1 cup olive oil (can reduce to 3/4 cup)
1 extra large lemon, juice of (can use 2 lemons ( make certain that the lemon is at room temperature before squeezing)
2 -4 teaspoons dried oregano (start with 2 teaspoons)
3 teaspoons fresh minced garlic (about 2 medium cloves)
1 teaspoon dried basil
2 tablespoons red wine vinegar
1/2 teaspoon salt (or to taste)
1 teaspoon sugar
1/2 teaspoon fresh ground black pepper (or to taste)
1 large romaine lettuce, chopped (or use 2 small)
2 -3 plum tomatoes, cut in wedges (use Roma tomatoes)
1 English cucumber (peeled, seeded and chopped)
1 red onion, cut in slices
1 green bell pepper (seeded and cut into rings or sliced) (optional)
1/2 lb feta cheese, crumbled (or to taste)
1 cup kalamata olive

Steps:

  • For the dressing; in a processor or use a wire whisk process/whisk the olive oil with lemon juice, 2 teaspoons dried oregano, garlic, dried, basil, red wine vinegar, salt and sugar until smooth (add in more oregano and lemon juice if needed).
  • Season with black pepper.
  • Chill in fridge for a couple of hours before using to blend flavors.
  • Place the salad ingredients in a large bowl.
  • Pour dressing over; toss to combine.
  • If desired allow the salad to sit at room temperature for 20 minutes before serving, or you can refrigerate for 1 hour (tossing a few time during sitting time).

(As a matter of fact, my daughter is the one who named this recipe when she was 7...she requests this almost weekly, and whenever we do make it, she will eat 2 or 3 helpings in one sitting!)

2 large cucumbers, peeled and diced
1 cup onion, chopped fine
1 tablespoon salt
2 tablespoons tarragon vinegar
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 teaspoons dried dill
1 teaspoon onion powder
1 tablespoon sugar
1/4 cup sour cream
3/4 cup mayonnaise
1/4 cup parmesan cheese, grated
1 medium tomatoes, chopped (optional)

Steps:

  • Place cucumbers in a colandar (over a bowl) and sprinkle with the salt. (Don't be scared of the amount of salt, it really doesn't make the cucumbers salty). It will help draw the water out and make your end result less watery. Let that sit for at least 2 hours in the fridge.
  • Meanwhile, dice the onions very fine.
  • After the cucumbers are drained, place them in a large bowl. Add the onions. Pour the vinegar over this mixture, then add the sugar. Let it sit for another hour in the fridge. After this, you will want to taste it to make sure it's not too tangy or too sweet. You'll want a perfect blend of both flavors, combined with the saltiness that's already there.
  • After you're happy with that result, add the rest of the ingredients, ending with the cheese.
  • Adjust all seasonings to taste!
  • Chill for one hour before serving.
  • Some things to note:.
  • * I wouldn't add more salt to this salad other than what you salted the cucumbers with in the beginning. The parmesan adds a bit of saltiness anyway.
  • * You can cut back on the onion if 1 cup seems too much, but I will tell you that once the other flavors are combined, you will NOT taste any overpowering onion flavor. It's just perfect!
  • * Try to use Kosher salt for this as well as the Tarragon vinegar. I think the Tarragon flavor is a must for this salad.
  • * Personally, I've been known to drain the cucumbers over night, and add all of the other ingredients the next day. But that's just me. :-).
  • * Actually, I add a bit more of the garlic powder, onion, powder, and pepper. I play around with the dill measurement as well. ADJUST TO YOUR LIKING.
  • * The "cooking" time is actually the waiting/draining time.
  • * I promise this is worth it! :-) ENJOY!

This is wonderful either scooped on a bed of lettuce, stuffed in between a pita or slices of whole wheat bread --- plan ahead the mixture needs to chill for 4 hours before serving, don't even bother tasting before that time, the grapes or chopped apple must be added in just before serving --- *note* see bottom of recipe for poaching chicken breasts, I also sometimes like to add in 1/2 teaspoon curry powder, but that is only optional, recipe may be doubled :)

3 large chicken breasts, cooked and finely chopped (or use 4 small breasts preferably poached)
1 stalk celery, finely diced
2 green onions, chopped
3/4-1 cup dried cranberries (you may chop in half or leave whole) or 3/4-1 cup raisins (you may chop in half or leave whole)
1/2 cup red seedless grapes, halved (measure 1/2 cup halved or use 1 small apple, chopped)
1/2 teaspoon fresh ground black pepper (or to taste)
3/4 cup salad dressing (use Miracle Whip salad dressing)
2 tablespoons coleslaw dressing (Kraft coleslaw dressing works well)
1 teaspoon seasoning salt
1/2 teaspoon paprika (can use up to 3/4 teaspoon)
1/4-1/2 teaspoon garlic powder

Steps:

  • In a medium bowl toss together chicken with celery, onions and cranberries.
  • In another bowl mix all dressing ingredients until well blended; add to the chicken mixture and toss to combine.
  • Cover and chill for a minumum of 4-24 hours.
  • Just before serving mix in grape halves then season with black pepper.
  • POACHING CHICKEN-------.
  • Place the chicken breasts in a saucepan.
  • Cover with water and 1/2 teaspoon salt (and 1 bay leaf optional) bring to a simmer.
  • Lightly simmer over low heat for about 15 minutes.
  • Remove from heat and let sit in the water for about 10 minutes.
  • Cool and chop.

When I arrived in Iceland, this was my DH's 1st food request & I went thru a lot of RZ cucumber salad recipes to be sure it wasn't a duplicate. Siggi & my sister named this because it was original w/me & because of my twissis internet identity. For best results, don't make this a dy ahead, but do allow at least 2 hrs for the flavors to blend & the "cream" to develop from the finished ingredient mix. I promise you'll like this. (Stated time does not include refrigeration time)

2 medium cucumbers (peeled, sliced 1/2 in thick & halved)
1 medium red onion (roughly diced)
2 large tomatoes (seeds removed & diced)
1/2 green pepper (thinly sliced & cut in 1 in strips)
1/2 cup mayonnaise
2 tablespoons white vinegar
4 tablespoons granulated sugar
1 tablespoon dried parsley flakes
1 teaspoon dried dill
1 teaspoon seasoning salt (more to taste as desired)

Steps:

  • Peel & slice cucumbers in 1/2 in thick slices. Then half ea slice & transfer all slices to a lrg mixing bowl (See note).
  • Roughly dice red onion & add to the bowl.
  • Quarter tomatoes, remove seeds, rough dice the tomato "meat" & add to the bowl.
  • Thinly slice 1/2 green pepper, cut slices in 1 in strips & add to the bowl.
  • Toss prepared "veggies" to achieve a good distributional mix.
  • Add last 6 ingredients to bowl, mix well & refrigerate at least 2 hrs (stirring at least once to redistribute ingredients).
  • Notes: The cucumber cut is esp important. If thinly sliced, most cucumbers wilt & do not retain their crunch. -- When all ingredients have been combined, the mixture will appear dry & lack a creamy texture or appearance. DO NOT PANIC - that will begin to change almost immediately.
  • Note added 7/24/06: In response to reviewer comments, the amt of salt has been reduced by half. If you reduce further, you will likely lose any salt component in the mix.
