KITTENCAL'S BEST DEVILED EGGS
These have been a favorite for years, when I serve these at my get togethers or make them for socials and large events they are always the first to go and everyone wants the recipe, I suggest to use large, extra large or even jumbo eggs for this, I like to make the yolk filling a day ahead and refrigerate this will blend the flavors --- for a nice presentation place each egg half in a colored paper muffin liner --- all ingredient amounts may be adjusted to taste --- see my recipe#259573

Steps:
- Slice the eggs in half lengthwise; remove the yolks, and set whites aside.
- In a small bowl, mush yolks well with a fork, leaving no small lumps.
- Add next 10 ingredients (adjusting to suit taste) mix well to combine.
- Spoon or pipe egg yolk mixture evenly into the whites.
- Sprinkle with paprika.
- Cover tightly with plastic wrap.
- Store in the refrigerator until ready to serve (if not making the yolk mixture a day ahead it is best to prepare the eggs and refrigerate for about 5 hours before serving this will give the flavors a chance to blend and intensify).

KITTENCAL'S CHEDDAR DEVILED EGGS
This is another great recipe I make these often for get togethers and they are always a big hit! The ingredients may be adjusted to taste, start with amounts listed and increase to suit taste, but be careful with the mustard amounts as it can be overpowering!. To serve a crowd, the complete recipe may be doubled. Cooking time does not include boiling the eggs. Try to use jumbo eggs for this, if you don't have a food processor just mix the filling with a hand mixer until smooth. Adjust the seasoning salt, garlic powder and all other ingredients to taste.

Steps:
- Carefully remove the egg yolks from the whites and set the whites on a large plate.
- Place the yolks in a food processor along with all the remaining ingredients except the grated cheddar cheese and black pepper (start with 1/4 cup mayonnaise adding in just a tablespoon more if too dry) pulse until blended and smooth.
- Season with more seasoned salt and black pepper to taste.
- Using a spoon mix in 1/2 cup finely grated grated cheddar cheese to the yolk mixture (you can use more if desired) mix until well blended.
- Pipe or spoon into the egg whites holes.
- Sprinkle the remaining 1/4 cup grated cheddar cheese on top of each egg slice (you may use more cheese if desired).
- Dust very lightly with paprika.
- Cover lightly with plastic wrap.
- Chill until ready to serve.

MEXI SALSA DEVILED EGGS
I have made these many times, they are so good! ---start with the amounts listed and add in more to suit taste. If you don't have a food processor you can use a hand mixer to mix the yolks. Plan ahead the prepared eggs must chill for at least 4 hours before serving to blend flavors. I boil 14 or 15 eggs as I like to have more yolk filling, but you can use just 12 eggs if desired. You will *love* these I promise!

Steps:
- Drain the salsa over a fine strainer (push the liquid through the strainer with a spoon to speed up the process) set aside.
- Using a sharp knife slice the hard-boiled eggs in half.
- Carefully remove the yolks from 14 eggs and place into a food processor (save the whites from 2 eggs or just eat them lol!).
- Place the 24 egg whites halves on a plate or serving platter.
- Add in all remining ingredients except finely shredded cheddar cheese, seasoned salt and pepper; process for about 10 seconds or until smooth.
- Add in seasoned salt and pepper to taste, and process again.
- Transfer the mixture to a bowl.
- Add in 1 cup finely grated cheddar cheese and mix with a spoon until blended.
- Spoon or pipe about 1 tablespoon (or more if desired) into the egg white halves.
- Sprinkle each top of egg with some grated cheddar cheese, then sprinkle with a small amount of paprika.
- Cover the eggs with plastic wrap and refrigerate for a minumum of 4 hours before serving.

CHILE-CHEDDAR DEVILED EGGS
Steps:
- Mash 6 hard-boiled egg yolks, 2 teaspoons chopped chives, 2 teaspoons chopped chipotles in adobo sauce, 2 tablespoons mayonnaise, 2 tablespoons sour cream, 1/4 cup shredded cheddar cheese and 1/4 teaspoon paprika. Season with salt. Spoon into the egg whites; top with more chives.

DEVILED EGGS
I make these for every family dinner and for most other parties and barbecues as well. Mine are a bit spicier than others - the key ingredient is the cumin. Don't leave it out, because it's what makes these so delicious. For the seasoning salt, I like to use Herbamare or Tony Chachere's, and for the mayo, Duke's or Hellman's is preferred. Regarding the eggs - for my hard boiled eggs, I use eggs that are a week old. There is nothing wrong with week-old eggs (provided they have been kept refrigerated), and they have the delightful quality of being peelable, unlike their fresher sisters. NOTE: if you plan on filling these by using a cake decorating tip, make sure the pickle and green onions are very finely minced - you might want to run them through a food processor or blender to get them fine enough. Otherwise, they could clog up the tip. Also, the garnishes listed below are all optional, so use at your own discretion. Most people don't use caviar unless they're trying to out-fancy someone else. I personally prefer chives. Ladies and Gentlemen, get out your deviled egg plates!

- Peel & halve hard boiled eggs.
- Put yolks into a bowl, mash & mix well with mayonnaise, mustard, cream cheese, sugar, cumin, pepper, garlic powder, onion powder, green onion & pickles.
- Taste mixture before adding seasoning salt. You may need less than 1/4 teaspoon. Season to taste with seasoning salt & tabasco.
- Stuff egg white halves with yolk mixture. You can do this with a spoon, or you can put the yolk mixture into a quart-size plastic bag & snip off one corner to act as a pastry bag. Or if you want to get really fancy you can use an actual pastry bag with a fancy cake decorating tip on the end.
- Squeeze yolk mixture into egg white halves. Refrigerate before serving to allow yolk mixture to set. Don't garnish until just before you are ready to serve (especially if you are using paprika).

KITTENCAL'S FAMOUS CAESAR SALAD
I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is *that* good! --- although I do think the dressing is better with the anchovy it can certainly be made without them. In a pinch I have even substituted buttermilk for the half and half cream, just use about the same amount --- this dressing gets stronger with refrigeration time so a small amount of fresh garlic goes a long way! ---- usually one recipe without doubling is perfect for one large romaine lettuce, if you are serving a large crowd of people you might want to double -- salad dressing will not work for this use *only* mayonnaise, I find Hellman's brand mayonnaise works the best and for the perfect companion to this salad see my recipe#125034-------------LOWER-FAT OPTION use reduced fat mayonnaise and fat-free half and half or low-fat milk --- also see my recipe#66596

- In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
- Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
- Adjust seasonings to taste.
- Thin with buttermilk (or milk) for a thinner consistency if desired.
- Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
- Toss desired amount of dressing with Romaine lettuce and croutons.
- Sprinkle with more grated Parmesan cheese if desired.

Steps:
- Place 6 eggs in a pot, cover with water. Bring to a boil then continue cooking 10-12 minutes.
- Remove eggs and rinse in cold water.
- Crack the shells, gently, with the back of a spoon. Do not remove shells.
- Add 2 cups of water and a 4-5 drops of black food coloring to a bowl and submerge eggs. Refrigerate for 2 hours.
- Remove eggs from water and carefully de-shell, revealing spider-web-looking eggs.
- Cut eggs in half lengthwise. Slip out yolks and mash in a small bowl. Stir in mayonnaise, mustard, salt and pepper. Pipe or spoon filling into each egg half.
- Cut a whole olive in half lengthwise. Put one half on mashed yolk for the spider's body. Thinly slice the other half for the spider's legs. Place four legs on each side of the body.
