FOOLPROOF BABY BACK RIBS

Foolproof Baby Back Ribs image

These are done completely on a gas grill and is the first recipe I have found that result in tender ribs without having to boil/steam/ or bake them first. Don't lift the lid for at least an hour while grilling! That is the secret to these ribs that end up tender and delectable. Uses simple ingredients with your favorite barbecue sauce to finish off the recipe and you will be in rib heaven.

Categories     Pork

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon paprika
1 tablespoon garlic powder
salt & fresh ground pepper
3 lbs pork baby back ribs
1 cup barbecue sauce

Steps:

  • Preheat gas grill for high heat.
  • In a small bowl, combine cumin, chili powder, paprika, garlic powder and salt and pepper Mix well.
  • Trim off the membrane sheath from the back of each rack.
  • You can do this by running a small, sharp knife between the membrane and snip or"shimmy" off the membrane as much as possible.
  • Don't skip this step because it prevents the ribs from being chewy.
  • Sprinkle or "throw" as much of the rub onto both sides of the ribs as desired.
  • Do not rub the spices in, because the ribs will turn too dark and spicy.
  • You may have some spices leftover, depending on your taste.
  • Place aluminum foil on lower rack to capture drippings and prevent flare-ups.
  • Brush grate with oil, and lay ribs on top rack of grill.
  • Reduce heat to low, shut grill, and leave undisturbed for 1 hour.
  • Do not lift lid at all during this time period!
  • After one hour check for doneness, depending on your grill you may need to continue cooking for another 10-15 minutes (our grill takes one hour exactly). Brush ribs with barbecue sauce and grill an additional few minutes until sauce is slightly absorbed and a little brown around the edges.
  • Serve ribs as whole rack or cut between bones and pile individual ribs on the platter.

KITTENCAL'S BEST AND EASIEST BABY BACK RIBS

Kittencal's Best and Easiest Baby Back Ribs image

Plan ahead these ribs need to marinate 8-24 hours, you can also cook these on the outdoor grill, punch a few holes on top of the foil to allow steam to escape and to absorb the smoke flavor --- use your own favorite BBQ sauce Sweet Baby Ray's good to use, the honey needs to be added into the BBQ sauce to tenderize so do not omit, the best thing about this is there is easy clean-up! --- and yes you can also make them on the grill

Number Of Ingredients 4

2 racks of baby-back pork ribs
1 (8 ounce) bottle barbecue sauce (or one 18-ounce bottle)

Steps:

  • Spray the inside of each piece of foil liberally with non-stick cooking spray.

BAKED BABY BACK RIBS

Baked Baby Back Ribs image

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

Provided by Food Network Kitchen

Categories     main-dish

Time 3h20m

Yield 4 servings

Number Of Ingredients 13

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

KITTENCAL'S OVEN-ROASTED BEEF SHORT RIBS

Kittencal's Oven-Roasted Beef Short Ribs image

This recipe will produce the most tender tasty short ribs,. I use rendered bacon fat for this that I store in my freezer for extra flavor in place of the oil, you may increase the beef broth and wine for more sauce if desired and add in some crushed red pepper flakes for some heat, I most always increase the broth and wine and serve this with hot cooked pasta, the sauce is delicious and don't forget to pass the Parmesan cheese at the table ---and if you find you have lots of sauce left over just freeze it and use it the next time you make this recipe again :)

Provided by Kittencalrecipezazz

Categories     Vegetable

Time 2h30m

Yield 4-6 serving(s)

Number Of Ingredients 12

5 -6 lbs short rib of beef
2 cups all-purpose flour (or more or less)
1 1/2 teaspoons seasoning salt
1/2 teaspoon fresh ground black pepper (to taste)
1/2 teaspoon garlic powder
oil, as needed for browning sauce
6 garlic cloves, finely chopped
2 medium onions, chopped
2 teaspoons dried thyme, rubbed between fingers to release flavor (or to taste)
2 cups beef broth
1 cup dry red wine
8 ounces small white button mushrooms (optional)

Steps:

  • Set oven to 350 degrees F.
  • Heat bacon fat (or oil if using, can use both) in a large Dutch oven over medium-high heat.
  • In a shallow dish mix together flour, seasoning salt, black pepper and garlic powder.
  • Dredge the short ribs in the flour mixture to coat, shaking off any excess flour on ribs.
  • Brown the ribs in the Dutch oven working in batches until lightly browned on all sides; remove to a plate.
  • Pour off all but about 2-3 tablespooons fat, and add in the onions, chopped garlic and thyme; saute until lightly browned.
  • Add in broth and red wine; bring to a boil, stirring.
  • Return the ribs to the Dutch oven (if possible in a single layer).
  • Add in the fresh small button mushrooms (if using, no need to saute the mushrooms first).
  • Cover with a lid and simmer for about 2 hours, or until the ribs are desired tenderness.
  • Season with salt and pepper to taste.
  • **NOTE** this is only optional: remove the ribs to a platter to keep warm and drain the cooking liquid through a sieve, then transfer the liquid to a saucepan to simmer and reduce slightly and thicken, scimming any fat that has accumulated on top, or you can just serve the sauce just as is from the Dutch oven.
  • Pour the sauce over the ribs.

Time 3h35m

Yield 6-8 serving(s)

Number Of Ingredients 13

6 lbs pork baby back ribs
2 cups water
1 cup white vinegar
1/2 cup tomato paste
1 tablespoon dry mustard
1/4 cup packed dark brown sugar
1 teaspoon liquid smoke
3 tablespoons Worcestershire sauce
1 1/4 teaspoons salt
1/2 teaspoon onion powder
2 garlic cloves, minced
1/4 teaspoon paprika
2 teaspoons lemon juice

Steps:

  • Preheat the oven to 350°.
  • Cut the rib slabs in half, leaving 6 to 8 ribs per section. In a large roasting pan, arrange the ribs evenly, then add the water. Cover the pan tightly with a lid or foil to prevent steam from escaping. Bake for 3 hours.
  • About 2 hours into the baking time, make the sauce. In a large saucepan, combine all the sauce ingredients. Simmer over low heat for 1 hour, stirring occasionally.
  • Prepare the coals in a barbecue. Remove the ribs from the roasting pan. Discard the water.
  • Cover the ribs with the sauce, saving about 1 1/2 cups of the sauce for later use at the table. Grill the ribs on the barbecue for about 5 minutes per side, or until slightly charred.
  • Serve with the remaining sauce and lots of paper towels or moist towelettes.
  • ***ALTERNATE SLOW COOKER DIRECTIONS: Place the ribs in a slow cooker, pouring the sauce over. Let cook on low for 6 to 8 hours or on high for 3 to 4 hours until the meat is very tender.

  • My Note: I used Jameson's Irish Whiskey. This sauce is awesome! We'll use it again and again. I followed those cooking instructions and used the dry rub from that recipe, as well. I used this sauce at the end where it calls for using your "favorite bbq sauce." Hands-down, this is our favorite sauce recipe. Can't wait to try it on my grilled whole chicken breasts! Update 2/4/05 I always double the recipe. One new tip: I use a mini food processor to mince the onions, but you still get small pieces in the sauce. It's great that way, but this time, after fully cooking the sauce, I let it cool and blended it in a regular blender. Awesome smooth texture, terrific flavor! Now we have two options.

PAT MOULD'S CAJUN FRIED BABY BACK RIBS

Pat Mould's Cajun Fried Baby Back Ribs image

I am definitely lacking in grill skills, so when I threw my first back-yard party of the year, it was burgers, hot dogs, and these ribs. Easy, easy, easy and delicious!

Provided by Pinay0618

Categories     Pork

Time 4h20m

Yield 10-12 serving(s)

Number Of Ingredients 4

8 (1 3/4 lb) racks baby back ribs
1 cup cajun marinade, like Cajun Injector, divided
3 gallons peanut oil, such as LouAna
prepared barbecue sauce

Steps:

  • Take two gallon-sized resealable plastic bags, and place four racks of ribs in each bag. Add 1/2 cup Cajun marinade to each bag. Shake each bag until ribs are well coated. Refrigerate for up to 4 hours. Place perforated racks over sheet pans. Remove ribs from marinade, and place them on the racks to drain.
  • In a deep-fryer or a large, heavy pot, heat the peanut oil to 350°F Depending on how large your deep fryer or pot is, you may be able to fry up to three racks at a time, or you may only be able to fry one rack at a time. Use care, as you do not want the oil to overflow the pot. Lower the ribs into the hot oil, and cook for 18 to 20 minutes. Maintain the oil temperature at 350°F; do not allow the temperature to climb above that.
  • Remove ribs from the oil, and drain on paper towels. Cut ribs into servings, place in a bowl, and toss with barbecue sauce to taste.
