CRISPY BAKED GARLIC PARMESAN CHICKEN WINGS
CRISPY GARLIC PARMESAN CHICKEN WINGS - baked instead of fried but they are still as crispy and delicious as ever! The perfect party appetizer or game day treat!

Steps:
- Preheat oven to 400°F.
- Add chicken to a large bowl. Pat chicken dry.
- Drizzle with canola oil, 1 teaspoon of sea salt, and 1 teaspoon of black pepper. Gently toss to coat all the chicken.
- Place chicken on a wire rack lined baking sheet. (if you don't have a wire rack, use parchment paper)
- Bake for 40 minutes, flipping the chicken after 20 minutes.
- Turn the Broiler on to HIGH.
- Place chicken under broiler for 8-10 minutes, until browned.
- In the meantime, heat a medium sauce pan to medium heat. Add butter and 2 tablespoons of olive oil to the pan. Melt the butter down.
- Once butter is melted add the garlic to the pan. Let cook in the liquid for 2-3 minutes, or until fragrant.
- Next add in 2 tablespoons of parmesan cheese, smoked paprika, red pepper flakes, salt, & pepper to taste. Stir to combine. Let the sauce cook for another 2 minutes.
- Remove chicken from oven. Place in a large bowl, pour the garlic parmesan sauce over the chicken wings. Using a pair of tongs, toss the wings to coat all of them with the sauce.
- Serve. Top the wings with an additional 2 tablespoons of parmesan cheese.
- Optional: add chopped chives for garnish.
OVEN BAKED GARLIC PARMESAN CHICKEN WINGS
The trick to making the BEST garlic Parmesan chicken wings is to bake them like crispy salt and pepper wings FIRST, then toss them in a decadent garlic Parmesan butter sauce!

- Preheat your oven to 400°.
- Line a large rimmed baking sheet with a metal baking rack. IF you don't have a rack, you can still make these, they won't be as crispy but they will be delicious!
- Pat the wings dry with a paper towel. Toss in the cornstarch until they are LIGHTLY COATED. You just want a dusting of cornstarch! Season with the salt and pepper.
- Place the wings in a large bowl and toss with the oil until coated.
- Place the wings onto the rack, making sure they don't touch, and bake until golden and crispy, about 50 minutes.
- Place the butter into a small saucepan and melt over medium high heat. Add in the garlic and sautee until browned. Remove from the heat.
- Stir in the parsley and Parmesan.
- Place the the baked, hot chicken wings into a large bowl, then pour the sauce on top. Toss until the wings are completely coated in the sauce.
- If desired, sprinkle with extra Parmesan cheese and serve with Ranch or Caesar dressing!

Steps:
- Preheat oven to 300ºF (150°C).
- In a large bowl, mix together the salt, pepper, Italian seasoning, and cumin. Pour chicken wings into the bowl and coat with the spice mixture.
- Transfer wings on to a baking sheet, bake for 20 minutes. Then increase the oven temperature to 425ºF (220°C) bake for 15 more minutes.
- While the chicken is baking, mix together the parmesan cheese, garlic, oil, and fresh chopped parsley.
- When the chicken is cooked through, toss the wings with the garlic/cheese/olive oil mixture. Serve immediately

Cook's Country just published an excellent technique for super-crispy baked chicken wings but their sauce choices didn't appeal to me. I wanted something garlicky and not sweet. This is what I came up with, and it was pretty tasty!

- Adjust oven racks to upper-middle and lower-middle positions and heat oven to 250 degrees. Set wire rack in aluminum foil-lined rimmed baking sheet. Pat wings dry with paper towels and transfer to 1-gallon zipper-lock bag. Combine baking powder and salt, add to wings, seal bag and toss to evenly coat.
- Arrange wings, skin side up, in single layer on prepared wire rack. Bake wings on lower-middle oven rack for 30 minutes. Move wings to upper-middle rack, increase oven temperature to 425 degrees, and roast until wings are golden brown and crispy, 40 to 50 minutes longer, rotating sheet halfway through baking. Remove sheet from oven and let stand for 5 minutes. Transfer wings to bowl with wing sauce, toss to coat, and serve.
- For the wing sauce, mix together the melted butter, garlic, oregano, basil, seasoned salt, and grated Parmesan.

- The Sauce:.
- Place the garlic cloves and 2 tablespoons of olive oil in a small glass pan covered with aluminum foil.
- Bake at 350* for 20 to 25 minutes.
- Remove from oven and let cool for 5 minutes.
- Press through a garlic press or using the side of a knife.
- Combine garlic and all remaining sauce ingredients.
- Refrigerate for 2-3 hours to pull the flavor together. (Not required but makes it taste a lot better).
- The Wings:.
- Set oven to 250°F.
- Place a rack onto a large baking sheet and spray with non-stick oil. (Makes Clean up easier or cover with aluminum foil).
- In a large bowl, toss the wings with the baking powder and salt.(You don't need much baking powder or salt it's just too lightly cover and help dry them out).
- Place wings on the rack in a single layer and bake for 30 minutes.
- After the first 30 minutes flip them, raise the heat to 425°F (Flipping them every 15 minutes) and bake until brown and crispy, 40-50.

- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.
- Combine water, vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary in a large stockpot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for 15 minutes.
- Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
- Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.
