KISHKA CHICKEN ROLL UP
Chicken breast stuffed with kishke is then breaded and baked with a very special secret ingredient that makes it even more amazin.

Steps:
- 1. Preheat your oven to 375˚. 2. In a shallow bowl, pour Gold's Duck Sauce. 3. Fill a second shallow bowl with seasoned breadcrumbs. 4. Working with one cutlet at a time, coat both sides in Gold's Duck Sauce and then lay in breadcrumbs, gently pressing into the crumbs so they adhere to the cutlet on one side. 5. Take one slice of kishka and form into a torpedo shape. Place the kishka on one end of the cutlet and roll up the cutlet around the kishka like you would a jellyroll. 6. Place seam side down on a lightly greased baking pan - large enough to hold all the rolls without touching. Repeat with remaining cutlets. 7. Spray the rolls with cooking spray. 8. Bake at 375˚ for about 25 to 35 minutes.

This is traditionally stuffed inside intestines and then cooked on top of a cholent. Nowadays most roll it up in foil or baking paper. Definate unique taste. See instructions to learn about cholent. I am also posting a cholent recipe.

Steps:
- Put first four ingredients in food processor and process with steel knife until consistency of thick paste.
- Remove to bowl.
- Add last 4 ingredients and mix well.
- Shape into a log on a large piece of foil or baking paper.
- Roll the foil down to seal.
- Freezes great at this point.
- Ideally placed in the top of a pot of cholent (a special stew that is prepared before the Sabbath and cooks for approx 20 hours and is eaten with lunch).
- This is pulled out and served separately.
- Can also be made in a pie dish and baked at 350 for 45 minutes, but it definately won't have the deep rich color and taste.

Steps:
- Flatten chicken to 1/4-inch thickness.
- Place a slice of ham and cheese on each piece of chicken.
- Roll up from a short side and tuck in ends; secure with a toothpick.
- In a shallow bowl, mix crumbs, grated cheese and parsley.
- Pour milk into another bowl.
- Dip chicken rolls in milk, then roll in crumb mixture.
- Wrap and freeze roll-ups for up to 2 months.
- To use frozen chicken--completely thaw in the refrigerator.
- Unwrap roll-ups and place on a greased baking sheet.
- Spritz with nonstick cooking spray.
- Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

Steps:
- Grind vegetables twice.
- Grind crackers once.
- Mix both together.
- Melt butter.
- Add to beaten egg.
- Mix all together.
- Shape into 2 long rolls on greased foil.
- Wrap each roll separately inthe foil, air tight.
- Freeze overnight or longer.
- Bake frozen 350 degrees for 1-1 1/2 hours.
- Cut into 1" slices.

- Remove chicken tenders from each chicken breast half, and set aside for another use. Pound chicken cutlets until they are 1/4-inch thick.
- Scoop out 1/3 to 1/2 cup of kishka for each chicken breast half. Roll kishka into a log and place into the center of a flattened cutlet. Repeat with remaining chicken pieces. Roll the cutlets around the kishka, tucking in the ends. You will have some extra kishka.
- Place the kishka stuffed chicken seam side down on a baking pan. Brush each roll with olive oil. Season with salt, and pepper if using.
