2 lbs. lean ground beef
1 medium onion, diced
1 cup bell pepper, diced
dash of salt
1 10 3/4 oz. can cream of mushroom
1 10 3/4 oz. can cream of chicken
1 10 oz. can mild rotel tomatoes, drained
1/4 tsp garlic powder
1/2 tsp chili powder
2 1/2 cups cheddar cheese, grated
10 corn tortillas

Steps:

  • Preheat oven to 350 degrees. Heat a skillet over medium heat and add the beef and onions. When meat has almost cooked all the way add the bell pepper and sprinkle with a dash of salt. When the meat is brown and thoroughly cooked drain the grease from the pan. Heat a medium size sauce pan over low/medium heat. Add the cream of mushroom, cream of chicken, rotel tomatoes, garlic powder and chili powder. Stir and cook until the mixture is warm and then turn off the heat. Tear each tortilla into pieces and dip each piece into the sauce mixture. (Does not have to be well coated in the mixture or you will use it all up and won't have enough for the dish) Place the tortillas down in a large casserole dish. Then top with half of the meat mixture and then half of the sauce. Sprinkle 2 cups of the cheese over the sauce and then repeat the layers finishing with the rest of the cheese. Cook for 40 minutes.

2 tablespoons vegetable oil
1 cup onion, chopped
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
2 tablespoons fresh jalapeno, chopped
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon garlic powder
1 tablespoon chili powder
12 ounces canned evaporated milk
1 can Ro*Tel diced tomatoes and green chilies
1 can condensed beef broth
8 ounces grated Cheddar or Mexican blend cheese
12 corn tortillas

Steps:

  • Add oil to large heated skillet and sauté onion, peppers and jalapeno. Mix in all spices and cook until onion is translucent. Add milk, tomatoes and broth. Bring to a simmer. Remove from heat. Stir in beef and cheese. Cut tortillas into quarters and placed half into a greased 2 1/2-quart casserole dish. Top with half of the beef mixture. Repeat layers, ending with beef mixture. Bake at 350 degrees F for 30 minutes.

1 cup celery, diced
1 can low-fat cream of celery soup
1 can 98% fat-free cream of chicken soup
1 lb low-fat cheddar cheese
2 cups cooked chicken
1 can rotel tomatoes with green chili
1 clove garlic, minced
2 tablespoons chili powder
1 tablespoon chicken broth
12 corn tortillas, torn in strips

Steps:

  • In a large pan sprayed with cooking spray, saute onion, bell peppers, garlic and celery.
  • Add soups, tomatoes, chiles, spices and chicken broth.
  • Line bottom of 9x13 pan with tortilla strips.
  • Spread half of chicken over tortillas and top with sauce, then half of cheese.
  • Cover with another layer of tortillas, chicken, sauce and cheese.
  • Bake at 350 degrees for 30 minutes or until bubbly.

2 lbs beef chuck, cut in 1 1/4-inch cubes
2 tablespoons cooking oil
4 cups beef broth
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 garlic clove, minced
1 medium onion, sliced
1 -2 bay leaf
1 teaspoon sugar
1/2 teaspoon black pepper
1/2 teaspoon paprika
6 carrots, quartered
1 lb boiling onions
3 medium potatoes, cubed
2 tablespoons flour
1/4 cup cold water

Steps:

  • Brown meat in a large saucepan.
  • Stir in beef broth, lemon juice, Worcestershire sauce, garlic, sliced onion, sugar & spices.
  • Bring to a boil; reduce heat. Cover and simmer until beef is nearly tender, 1 to 1 1/4 hours.
  • Stir in veggies. Bring to a boil, then simmer 30 minutes more.
  • Combine flour and water in jar. Shake until smooth. Stir into stew.
  • Cook and stir until slightly thickened and bubbly. Season to taste.

1 1/2 lbs ground beef
1 onion, chopped
salt & pepper, to taste
garlic powder, to taste
10 corn tortillas, torn in strips
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can evaporated milk
1 cup water
1 (1 1/2 ounce) jar picante sauce
1 (10 3/4 ounce) can green chilies, chopped
1 lb American cheese or 1 lb Velveeta cheese

Steps:

  • Brown meat, onion, salt, pepper and garlic powder.
  • Mix soups, milk, water, picante sauce and green chilies (Note:Some people like less than the whole can, it's ok to add less.) to make a soup mixture.
  • Layer tortillas, meat, soup mixture and cheese twice in casserole.
  • Cover with foil and bake @ 350 degrees for 20 to 45 minutes. (I do about 40) Take off foil for the last 5 minutes.
  • Let cool, and eat :].

Kim says I dont layer this casserole, I just mix it all together and sprinkle the cheese on top and then bake it. It's just as good and quicker. Also, you can use the healthier versions of soups and chips to make it less fattening and nobody will ever know. I found this recipe at Obesity Help. This recipe was posted by kimhouse. My family wasn't crazy over this recipe, but I posted it for safe keeping. When I made this recipe I took Kim's advice and mixed eveything together. I baked my chicken instead of boiling it. I was out of Rotel so I used petite diced tomatoes and a can of green chilies. I used canned chicken broth. I could only find 11 1/2oz bag of corn chips. I felt 16oz of cheese was to much so I used 8oz and mixed this in with everything.

4 boneless skinless chicken breasts
10 ounces cream of mushroom soup
10 ounces cream of chicken soup
15 ounces rotel tomatoes with diced chilies (1 can)
1 cup chicken broth
12 ounces corn chips, crushed in bag (1 large bag, didnt take the whole bag for me)
16 ounces monterey jack & colby cheese (2 packages)

Steps:

  • Boil chicken until done and cut into small chunks. Be sure to save 1 cup broth when chicken has finished cooking or use canned broth.
  • Mix cream of chicken, cream of mushroom, Rotel tomatoes and chicken broth; heat on stove.
  • Layer 1/2 of chicken, 1/2 broth mix, 1/2 of chips, 1/2 of onion, 1/2 cheese and repeat above.
  • Bake 35-40 minutes at 350 degrees in 9 1/2 x 13 inch greased pan.
