3 very ripe bananas, mashed
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

Steps:

  • Preheat the oven to 350 degrees F. In a medium bowl, combine the flour, baking soda, baking powder and salt. In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, oil and cinnamon. Stir in the flour mixture, a third at a time, until just combined.
  • Pour the batter into a 9-by-5-inch loaf pan. Bake for about 1 hour.

These are my adjustments to Ina's banana cake recipe to make it sweeter (without frosting), easier, and have more banana flavor.

5 very ripe medium bananas (mashed)
3/4 cup granulated sugar
2/3 cup brown sugar (lightly packed, dark or light)
1/2 cup vegetable oil
2 large eggs (room temperature)
1/2 cup sour cream (room temperature)
1 tsp pure vanilla extract
3 Tbsp orange marmalade (or grated zest of 1 orange)
2 cups all purpose flour (or 1.5 cups whole wheat flour )
1 tsp Baking Soda
1/2 tsp Salt
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (or toaster oven to 325 degrees F).
  • Grease and flour a 9x2-inch round cake pan.
  • In a large bowl, mix the bananas, granulated sugar and brown sugar until combined.
  • Then, add the oil, eggs, sour cream, vanilla and orange marmalade and mix until smooth.
  • In a medium bowl, sift together the flour, baking soda and salt.
  • Add the dry ingredients to the large bowl of wet ingredients. Mix until just combined. Stir in the chopped walnuts.
  • Pour the batter into the prepared pan and bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.
  • Cool in the pan and serve at room temperature. If serving warm, cut the bread first after cooling and warm for 10-15 seconds in the microwave.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Steps:

  • Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.

1 egg
2 bananas, mashed

Steps:

  • Cream butter; gradually add sugars. Beat in egg until mixture is light. Sitr in bananas mashed together with milk. Sift together flour, baking soda and salt and add to banana mixture. Sitr only until combined. Add walnuts.
