KIM'S OVEN BREAKFAST

This is one of my favorite recipes. Great for brunch or special occasions. My mother would prep this on Christmas Eve Day and let it set overnight, then bake it Christmas morning for a simple but decadent dish. This is great for keto or LCHF diets, or you can use turkey breakfast sausage to reduce the fat.

2 pounds breakfast sausage
cooking spray
2 pounds shredded Colby-Jack cheese, divided
12 eggs
1 cup heavy whipping cream

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Coat a 9x13-inch baking dish with cooking spray.
  • Spread a thin layer of Colby-Jack cheese in the bottom of the prepared baking dish. Crack eggs on top of the cheese layer and break the yolks but do not stir. Layer crumbled sausage over eggs and top with remaining cheese. Drizzle cream on top.
  • Cover baking dish and refrigerate, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until set, about 1 hour. Let stand for 10 minutes before slicing.

Non-stick cooking spray
1/2 lb. bulk Italian sausage (no casings)
1 small red onion, diced
1 large russet or Idaho potato, diced
2 large eggs
3 Tablespoons whole milk
2 cups fresh broccoli, diced
3/4 cup sharp cheddar cheese, shredded
2 Tablespoons fresh chives, finely chopped
Sea salt and black pepper, to taste

Steps:

  • Preheat oven to 350°F and spray an 8 x 8-inch baking dish with some non-stick cooking spray.
  • Set a large skillet over medium heat and add the sausage. Cook until slightly browned, breaking up the sausage with a wooden spoon as it cooks, approximately 3-4 minutes.
  • Add the onion and potato and season with salt and black pepper, to taste. Cook, stirring occasionally, until the onion softens and the potatoes become golden brown, approximately 6-7 minutes.
  • In the meantime, whisk the eggs and whole milk in a small bowl and season with salt and black pepper, to taste. Add one-half cup cheddar cheese and stir to combine.
  • Transfer the sausage-potato mixture into the prepared baking dish and stir in the diced broccoli. Spread into an even layer and pour the egg mixture evenly over the top. Sprinkle remaining cheese across the top.
  • Place in the pre-heated oven and bake until the eggs are set and the potatoes are cooked through, around 30-35 minutes.
  • Remove from oven and cool for several minutes before slicing. Top with fresh chives and serve immediately. Enjoy!

This sausage breakfast casserole is an overnight breakfast casserole made with bread, hearty sausage, eggs and cheese, all baked together to golden brown perfection. This easy breakfast casserole is so tasty, it never lasts long in my family. An effortless breakfast or brunch option that's great for feeding a crowd!

6 slices bread (cubed)
1 pound sausage (I use pork) (browned and drained)
8 large eggs
1 (14 ounce) can evaporated milk
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon cloves (optional)
1/4 teaspoon pepper
2 cups shredded cheddar cheese

Steps:

  • Spread the bread evenly into the bottom of a greased 9×13 inch baking dish.
  • Spoon the cooked sausage evenly over the bread.
  • In a medium mixing bowl, combine the eggs, evaporated milk, milk, salt, cloves and pepper. Beat well.
  • Pour the egg mixture evenly over the bread and sausage. Sprinkle the cheese over the top.
  • Cover and refrigerate overnight.
  • Prior to baking, preheat the oven to 350ºF. Bake uncovered for 45-50 minutes, or until set.
  • Cool for 5-10 minutes before cutting into squares. Serve warm and enjoy!
