3 pound(s) extra lean ground beef
1 large yellow onion
2 package(s) taco seasoning mix
1 package(s) yellow corn tortillas
1 package(s) cheddar cheese
1 can(s) la victoria enchilada sauce
2 can(s) black olives
1/2 cup(s) cooking oil

Steps:

  • Start with cooking your ground beef with chopped onions after it's cooked well add taco seasoning as directed on pkg.add chopped olives setting some aside to top later. Then after meat is done set aside leaving on warm .
  • Grade chedder cheese set aside or refrig. till needed. Heat oil in pan and cook corn tortillas just till soft place on paper towel I make a dozen I pkg. now warm your enchilada sauce.Preheat oven now 350
  • Begin filling each tortilla with meat mixture adding cheese and roll up lining them up in baking dish after there all rolled up pour sauce over top of them covering them all and add the remaining cheese and olives.Place in oven covered lightly in foil don't press foil down or all your cheese will stick to it when you uncover so cover loosly try not to press down on your cheese. for about 45 min, then uncover for about 15 min, take out cool for 15 min or so then serve.I always have refried beans or more spanish rice with ours .

3 cups beef, shredded
1 small onion, diced
3 tablespoons canola oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
2 cups water
4 ounces tomato paste
1/2 teaspoon cumin
1 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 teaspoon salt
1/4 teaspoon sugar
1 dozen corn tortilla
1 cup oil, for frying tortillas
4 cups cheddar cheese, shredded
1 (4 ounce) can black olives, sliced, drained
1 cup sour cream, for topping (optional)

Steps:

  • In a medium size mixing bowl, add shredded beef and diced onions, mix well and set aside.
  • In a medium size sauce pan, add the oil, flour, and chili powder. Turn to medium heat and whisk the ingredients together.
  • Continue to whisk as the mixture begins to boil for one minute, then whisk in the water, tomato paste, cumin, garlic powder, and cayenne pepper until smooth. Allow the sauce to come up to a simmer. Once it reaches a simmering boil it will begin to thicken slightly after about 20 to 30 minutes.
  • Add salt to taste and 1/4 teaspoon sugar, mix to combine and then add about 1/4 cup of sauce to the shredded beef mixture and stir to combine. Set aside remaining sauce for enchiladas.
  • In a small size skillet, add oil to medium-high heat. Gently add one tortilla at a time and fry to a semi soft stage. Dab each tortilla with paper towels to remove excess oil.
  • As each tortilla is fried and dabbed with paper towels, stack them to keep them soft for rolling.
  • Preheat oven to 350 degrees F. Grease or spray with a nonstick cooking spray a 9x13 baking dish. Set aside.
  • Lay (one at a time) fried tortilla on a flat surface, add about 2 tablespoons shredded beef mixture to the middle of the fried tortilla and top with about 1 teaspoon shredded cheese.
  • Roll the tortilla tightly and place in the baking dish (seam side down). Repeat until all 12 tortillas are filled. (For best results, line the enchiladas into two rows of 6).
  • Pour the enchilada sauce evenly over the top of the filled tortillas, and then add remaining shredded cheese evenly to the top of the sauce and top with the sliced olives.
  • Cover baking dish with foil and bake in preheated oven for 35 to 40 minutes, or until bubbly and hot. Serve with sour cream, optional.
  • Makes: 6 servings.

2 pounds ground beef
1 tablespoon black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 bunch fresh cilantro
1 cup all-purpose flour
1 cup vegetable oil
1/4 cup beef bouillon
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon black pepper
1/2 teaspoon salt
Nonstick cooking spray, for the griddle
18 corn tortillas
2 cups shredded Cheddar
1 diced onion, optional

Steps:

  • For the filling: In large pot, cook ground beef, black pepper, chili powder, garlic powder and cilantro over medium heat until beef is browned all the way through.
  • For the gravy: In a large pot on low heat, add flour and vegetable oil. Cook, stirring often, for 30 minutes, to make a dark brown roux for the gravy. Add 1/4 cup water, the beef bouillon, chili powder, garlic powder, black pepper and salt. Continue to cook until you have the consistency for the gravy, another 5 minutes.
  • For the enchiladas: Heat a griddle or grill on medium heat. Spray cooking spray or put oil on griddle. Place tortillas on griddle until pliable for folding, about 15 seconds.
  • Place tortillas on a flat surface. Add meat to a tortilla and roll up, keeping the seam side down. Place on a microwave/oven-safe plate. Repeat until all tortillas are used.
  • Spoon gravy over enchiladas until covered. Top with Cheddar and place in microwave or oven until cheese melts. Top with onions, if using.

1 medium onion, chopped

1 (14 1/2 ounce) can stewed tomatoes
4 -6 cloves garlic, minced
1/3 cup margarine

1 teaspoon sage
1/2 teaspoon salt
1 dash garlic powder
10 large flour tortillas
2 (8 ounce) cups shredded cheddar cheese or 2 (8 ounce) cups Mexican blend cheese

Steps:

  • In saucepan, cook beef or turkey and onion until browned; drain.
  • Add flour and seasonings.
  • Mix well.
  • Stir in tomatoes and bring to boil.
  • Reduce heat, cover, and simmer 15 minutes.
  • In another saucepan, saute garlic in butter.
  • Stir in flour until blended.
  • Gradually stir in broth and bring to boil.
  • Cook and stir for 2 minutes until bubbly.
  • Stir in tomato sauce and seasonings and heat through.
  • Pour 1 1/2 cup sauce in 13x9 inch pan.
  • Spread about 1/4 cup beef mixture down center of tortilla and top with 1-2 Tbsp cheese.
  • Roll up tightly and place seam side-down over sauce in pan.
  • Repeat with remaining tortillas and top all with remaining sauce.
  • Cover with foil and bake at 350 degrees for 30-35 minutes.
  • Sprinkle with remaining cheese and bake uncovered for 10-15 minutes until cheese melts.

1 (1 1/4 ounce) packet taco seasoning
12 large flour tortillas
1 (16 ounce) can refried beans
1 (11 ounce) can canned corn niblets
cheddar cheese or colby-monterey jack cheese
2 (10 ounce) cans red enchilada sauce
olive (optional)
salsa (optional)
cilantro (optional)
green onion (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook the ground beef in a skillet until brown.
  • Add the taco seasoning and water (according to package instructions) and cook until beef is well coated, and sauce is thickened.
  • Pour a bit of the enchilada sauce in the bottom of a 9x13in pan and spread evenly.
  • Set up an assembly line: Tortillas, refried beans, taco meat, corn, any of the above optional ingredients, and lastly cheese.
  • Assemble enchiladas: Smear a line of refried beans from the top of the tortilla to the bottom, then top beans with the remaining assembly line items.
  • Fold in the sides of the tortilla to close the enchilada, then place in pan, side by side, until pan is full (pan should hold 6 enchiladas).
  • Top each enchilada with enchilada sauce, then cover with cheese, and optional ingredients, if desired.
  • Place assembled enciladas into the oven and heat through.
  • Repeat process to make the next batch.

1 onion, chopped
1/2 bell pepper, chopped
2 garlic cloves, minced
2 serrano peppers (optional) or 2 jalapeno peppers, minced (optional)
1 1/4 ounces taco seasoning mix
4 ounces cream cheese, softened
2 cups enchilada sauce, divided
8 ounces monterey jack cheese
12 flour tortillas, softened (6 inch)

Steps:

  • Brown beef, onions, peppers and garlic in large skillet over medium-high heat until browned and veggies are soft.
  • Add taco seasoning and 1/2 cup of enchilada sauce, stirring until combined. Turn off heat and add cream cheese. Stir until cream cheese has melted into mixture.
  • Spread 1/2 cup of enchilada sauce into the bottom of a greased 13x9 casserole dish. Spoon about 1/4 cup of meat mixture down the center of each warmed tortilla and roll up. Place enchiladas seam side down in dish.
  • Top enchiladas with remaining 1 cup of enchilada sauce. Then top with monterey jack cheese.
  • Bake for 20 minutes at 350 degrees or until cheese is melted. Serve with rice and beans if you so desire!

BEEF AND BEAN ENCHILADAS

This recipe is from a friend of mine who made a family cookbook of their favorite recipes. We have really enjoyed the cookbook and I will be posting more of her recipes. For the enchiladas, I have made them with the original recipe (listed below) and then last night I didn't have all the right ingredients, so I used a can of RoTel that had the lime and cilantro in place of the can of green chilies. I also used recipe #66591 instead of a packet from the store (I didn't have any on hand). I also always use the flour tortillas that you can buy at Costco that you cook yourself. These enchiladas have a bit of spice to them. They might be too spicy for some and not enough for others, they are perfect for us!!
