SHEET PAN ROASTED KIELBASA AND CABBAGE DINNER
This One Pan Roasted Kielbasa and Cabbage Dinner comes together in minutes and is full of flavor and comfort. An easy weeknight dinner!

- Preheat the oven to 400ºF. In a small bowl whisk together the olive oil, red wine vinegar, mustard, crushed garlic, salt, and freshly cracked pepper for the vinaigrette. Set the vinaigrette aside.
- Slice the kielbasa into 1/4-inch thick rounds. Wash the potatoes well and slice them into 1/4-inch rounds as well. Place the kielbasa and potatoes on a large baking sheet and drizzle with 1 Tbsp olive oil. Toss the kielbasa and potatoes in the oil until they are well coated and the surface of the baking sheet is also covered in oil. Sprinkle a pinch of salt and pepper over top.
- Remove any dirty or damaged leaves from the cabbage. Cut the stem off the cabbage, then cut it in half. Reserve one half for a different recipe. Slice the remaining half into 1-inch wide slices. Cut each slice into two pieces. Place the cabbage pieces on the baking sheet with the kielbasa and potatoes, nestling them down so that they are laying flat on the baking sheet.
- Brush the remaining 1 Tbsp olive oil over the surface of the cabbage pieces and add a final pinch of salt and pepper to each.
- Roast the kielbasa, potatoes, and cabbage in the preheated oven for 20 minutes. Remove the baking sheet from the oven and carefully flip the kielbasa, potatoes, and cabbage pieces. The cabbage may fall apart a bit as it's flipped, which is okay. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the cabbage is tender and the edges are slightly brown and crispy. The kielbasa and potato slices should be well browned.
- Remove the baking sheet from the oven and top with fresh chopped parsley and a drizzle of the mustard vinaigrette. Serve warm.

- Preheat oven to 400 degrees F (200 degrees C).
- Remove and wash outer leaves from cabbage; line a 13x9-inch baking dish with the leaves to cover the bottom entirely. Shred remaining cabbage.
- Mix shredded cabbage, potatoes, and smoked sausage in a bowl; spread atop the cabbage leaves in the baking dish.
- Whisk milk, eggs, salt, and pepper together in a bowl; add bread cubes. Set aside until bread absorbs some liquid, 1 to 2 minutes; pour over the cabbage mixture. Top with butter slices.
- Bake in preheated oven until the potatoes are tender and the top is lightly browned, about 45 minutes.

SHEET PAN KIELBASA CABBAGE AND POTATOES

- Preheat the oven to 400℉. Line a large baking sheet with parchment paper or a silicone baking mat.
- Place potatoes, onion, garlic, and cabbage on the baking sheet, being careful not to separate the leaves of each cabbage wedges. Drizzle with oil. Gently toss the potatoes, onions, and garlic with oil and carefully rub the oil over the surface of the cabbage wedges.
- Turn potatoes cut-side down. Arrange kielbasa over potatoes and onions. Sprinkle all with salt and pepper and nestle thyme sprigs into the veggies. If using dried thyme, sprinkle over the veggies along with the salt and pepper.
- Place pan in preheated oven and bake 45-55 minutes, rotating pan halfway through the baking time, or until potatoes are tender and golden brown on their undersides.
- Remove from the oven, serve with mustard if desired.

Steps:
- Slice the potatoes into approximately 1-2 inch pieces.
- Put these in a large pot and cover in water with about an inch over the potatoes.
- Let the potatoes cook alone for 20-25 minutes at medium heat it will stay on that for the entire cooking process.
- Slice cabbage into eighth and add to the pot with the potatoes.
- Let these two cook together for 10 minutes.
- Cut kielbasa into about inch thick slices and again -- add to the pot.
- Let the three cook for another 20 minutes.
- Tada! It is done, turn off the heat and let it sit for about five minutes as it will be hot.

KIELBASA, POTATO AND CABBAGE SOUP

- Heat the oil in a large Dutch oven over medium-high heat, add the kielbasa and brown. Remove the kielbasa to a paper towel-lined plate. Add the potatoes, paprika, coriander, allspice, carrots, celery, garlic, onions and some salt and pepper. Cook, partially covered, 5 to 6 minutes. Then wilt in the cabbage and season with a little nutmeg. Deglaze the pan with the beer. Add the stock and passata, then slide the kielbasa back in the pot and simmer to combine flavors, 15 minutes. Cool and store for a make-ahead meal. Reheat over medium heat. Finish the soup with the creme fraiche, herbs and lemon juice; serve in shallow bowls.

- Slice and brown the kielbaa in skillet on the stove top. (I sauteed my kielbasa in butter in the crockpot and added the onions and potatoes).
- Add to the slow cooker along with the remaining ingredients. Stir.
- Cover and cook on low 6 hours without opening the lid during the cooking time.
- Stir and serve.
