3 -4 slices bacon
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon white pepper
3 cups chicken broth
1 lb fresh collard greens, cut into 2 inch pieces

Steps:

  • Heat oil in large pot of medium high heat. Add bacon, cook until crisp and remove from pan. Crumble and return to pan.
  • Add onion and cook with bacon until tender, about 5 minutes.
  • Add garlic and cook until fragrant.
  • Add collard greens, cook until they start to wilt.
  • Add chicken broth, salt, and pepper.
  • Bring to boil, reduce hit, and simmer for about 45 minutes (until greens are tender).

Steps:

  • Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
  • Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.

3 smoked turkey wings
12 bunches collard greens, washed and cut
1/2 cup diced white onion
1/2 cup diced green bell pepper
1/2 cup diced roasted red bell pepper
1 tablespoon butter-flavored oil
1/2 tablespoon salt
1/2 tablespoon sugar
1 teaspoon garlic powder
1/2 teaspoon smoke flavoring
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Boil the smoked turkey wings in a large stock pot with 1 gallon of water for 20 minutes at medium heat. Add the collard greens to the pot and let them cook down for 10 to 15 minutes. Add the onions, green peppers, roasted red peppers, oil, salt, sugar, garlic powder, smoke flavoring, black pepper and cayenne pepper and stir. Cook over medium heat until the collards are tender, about 1 1/2 hours.

Give me a bowl of collards with some of that tasty pot liquor and a slice of cornbread and that's a meal in my book! You can use other meats to season if you like, but to me there is nothing...

2 lb collards, cleaned, stems removed and shredded
2 Tbsp olive oil
1 small onion, sliced
2 clove garlic, minced
3 Tbsp apple cider vingar
1 Tbsp sugar
salt to taste.
1/2 tsp red pepper flakes, optional
1 (32-oz) carton of chicken broth (if you have fresh chicken stock, use that)
1 leftover smoked ham bone, or a nice ham hock

Steps:

  • 1. If using bunches of collards, clean good, remove stems and shred. I used packaged shredded collards I found in the produce section of Walmart. Even though the packaging says the collards I purchased had been washed 3 times, I still rinsed them real good before cooking.
  • 2. Over medium heat in a large pot saute onions and garlic in olive oil until tender. Pack greens in pot and add remaining ingredients. Occasionally turn greens as they wilt bringing wilted greens to top of pot. Once it comes to a boil, reduce heat to simmer. Simmer 45 minutes; taste test the pot liqour and add additional seasoning if desired. Continue simmering another 15 minutes.

Stewed greens are a Southern staple in many kitchens. They are easy to make, economical, delicious and freeze wonderfully. This is a very general recipe - everyone does it differently...but here's the basics of how I make my version. Feel free to experiment with seasonings and don't forget to freeze some to have later - it always makes more than you think. Oh, and do try it with a mixture of greens - buy one bunch of each kind available and mix them all together - yum!

4 bunches fresh greens (turnip, collard, mustard, kale or cabbage sprouts)
1 -2 ham hock
2 medium turnips, peeled and diced
1 quart water (plus more as needed)
3 tablespoons vegetable seasoning (I use "Reunion Foods" Extra Spicy Vegetable Seasoning Mix)
nonstick cooking spray

Steps:

  • Spray the bottom of your largest stock or soup pot with non-stick spray and brown the ham hocks for a few minutes over med-high heat.
  • Add the water to pot and scrape up any brown bits - but leave them in the pot for flavor.
  • Add the diced turnips.
  • Wash the greens to remove any dirt or sand and chop coarsely (removing large or tough stems.).
  • Add greens to your pot - you can do this as you chop them and turn heat to medium-low. Stir the greens occasionally and add more water as neccesary.
  • Season to taste with your greens seasoning mix. Appx. 1-3 tablespoons per pound of fresh greens.
  • Let simmer, covered, for at least one hour - the longer, the better. Greens should be completely wilted and any stems should be very tender.
  • Remove ham hocks from pot, let cool for a few minutes and then remove fat and bone.
  • Chop the meat into small bits and add back to the pot.
  • Adjust seasonings to taste.
  • Serve with hot pepper vinegar to splash over the top.
  • ***if a ready-made greens seasoning is not available - try using salt, pepper, garlic powder, dehydrated onions, paprika, etc. - or your favorite seasoning blend.
  • ***this can also be a vegetarian dish - just leave out the ham hocks - but you might want to add a bit of "Liquid Smoke" to get that smoky flavor.

1 bunch fresh collard greens
4 clove garlic, peeled and sliced thin
1 small onion, diced
2 Tbsp knorr's tomato flavored chicken broth
4 slice thick bacon
3 c water
1 Tbsp garlic powder (optional)

Steps:

  • 1. Rinse collard greens thoroughly in cold water. Remove stalk, tear leaves into large pieces, set aside. Rinse again and drain.
  • 2. Cook bacon until crisp. When it's cool to the touch, crumble into chunks. Save drippings
  • 3. In a large pot add olive oil over medium heat, add garlic and saute until garlic is light golden color. Add collard leaves and toss until wilted, stirring constantly. Add bacon drippings and you may add garlic powder if you like, and keep tossing until all the leaves are wilted and dark green color.
  • 4. Add 2 tablespoons of Knorr's Tomato flavored Chicken broth which you can usually find in the Latin section of most grocery stores.
  • 5. Add 3 cups of water, diced onions, and bacon crumbles. Cover pot and bring to a slow boil, then reduce heat and cook until done, the leaves will be a dark olive green in color.
