BUTTERY RITZ HADDOCK ON THE GRILL
This was an accidental discovery when there was no marinade or bread crumbs on hand. The result was a new favorite way to grill fish! You could also do this in the oven, I'm sure.

Steps:
- Rinse fish with cold water, pat dry.
- Add parsley, dill, garlic powder and parmesan cheese to Ritz cracker crumbs, mix.
- Brush heavy duty foil with some of the melted butter.
- Dip fish into beaten egg, then into crumb mixture.
- Set onto prepared foil.
- Drizzle fish with remaining melted butter.
- Put foil / fish onto medium heat grill, close cover and grill for 4-5 minutes.
- With a spatula, VERY carefully flip each piece of fish, trying not to break the pieces.
- Continue to cook about another 3-4 minutes, or until white and flakes easily with fork. (The total cooking time will depend on the type and thickness of fish).
HEALTHY MEDITERRANEAN BAKED HADDOCK
Haddock is a mild-tasting, flaky white fish similar to cod. Here it is baked to perfection atop a sweet cherry tomato sauce spiked with salty capers and olives. Pair it with some crusty bread to soak up the juices.

- Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
- Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper. Nestle the fillets into the sauce in the baking dish. Bake until the sauce is bubbling around the edges and the fillets are cooked through and easily flaked with a fork, 15 to 20 minutes.
- Meanwhile, mix the remaining 1 garlic clove with the olive oil, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Brush both sides of each slice of bread with the oil mixture and place onto a baking sheet. Bake until the bread is toasted, 5 to 7 minutes.
- Serve the fish on plates with the sauce and bread on the side.
BAKED HADDOCK, ELLIDA STYLE
Steps:
- Preheat the oven to 350 degrees F.
- Grease a baking dish with nonstick spray. Arrange the fish fillets in the prepared baking dish to cover the bottom. In a bowl, combine the bread crumbs with melted butter, crabmeat, and artichokes. Slice the tomato thinly and arrange the slices over the fish. Spread the cheese over the tomatoes. Top with the buttered crumb mixture. Bake for 20 to 25 minutes, or until fish is white and flaky.
HONEY HADDOCK
Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place 1/2 cup butter in a shallow microwave-safe bowl. Heat in the microwave until melted, about 30 seconds. Mix crushed crackers into the melted butter.
- Place haddock a shallow baking dish and cover with butter-cracker mixture.
- Bake haddock in the preheated oven until flesh flakes easily with a fork, about 25 minutes.
- Place remaining 1/4 cup butter in a small microwave-safe bowl. Heat in the microwave until melted, about 15 seconds. Stir in honey and parsley until blended.
- Remove haddock from the oven; drizzle honey butter on top. Continue baking until top is browned, about 5 minutes more.

This is a traditional New England classic made with the perfect combination of fresh bread crumbs and Ritz crackers for the topping. A little bit of Parmesan adds a great flavor and you wouldn't even be able to guess that it's there........it just doesn't get any better than this. - Preheat the oven to 400 degrees.
- Mix all ingredients together in a bowl except for the butter and fish. Use a food processor or your hands to make an evenly consistent bowl of crumbs.
- Place the fish in a cooking dish(es), cover with a good handful of crumbs and sprinkle with drawn butter.
- Place two tablespoons of water around the bottom of the fish.

- Preheat the oven to 375F, line a roasting pan with parchment.
- Lay fish fillets in a single layer on the bottom of the dish, then top with scallops and shrimp.
- Pour the white wine and lemon juice overtop of the seafood.
- In a bowl, toss butter, cracker crumbs, garlic powder, black pepper and lemon zest.
- Sprinkle over the seafood.
- Bake 15 minutes, then turn the broiler to HI and broil 2 minutes, until browned.

BAKED STUFFED HADDOCK FILETS
I was given this recipe at least 30 years ago and have yet to find anyone that doesn't love it. (Providing they like seafood) I always use haddock as I'm from Maine. Fresh is expensive right now but as far as I'm concerned there's no better tasting white fish. Can use frozen haddock or another white fish . Simple to make but soooo yummy...Don't worry about the mayo..I Promise you will not taste it.

Steps:
- Heat oven to 350 degrees.
- Rinse and pat dry the filets.
- Lay in single layer in baking dish.
- Spread a thin layer of mayonnaise over fish (I put it on a little thicker. You will not taste it).
- In small bowl, combine bread crumbs with next 5 ingredients.
- Sprinkle evenly over fish.
- Top with crushed Ritz Crackers.
- Bake 5 minutes.
- Remove from oven and pour melted butter over crackers.
- Return to oven, bake 15 more minutes or until filets flake.
- Try not to overcook
- (Total bake time about 20 minutes).
