THE ULTIMATE JERK CHICKEN

The Ultimate Jerk Chicken image

Provided by Tyler Florence

Categories     main-dish

Time 9h20m

Yield 4 servings

Number Of Ingredients 18

2 teaspoons allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 onion
8 cloves garlic or 1 whole head
1 (1-inch) piece fresh ginger, sliced
3 scallions, sliced
3 limes, juiced
Splash low-sodium soy sauce
1/4 cup extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
6 sprigs fresh thyme, leaves picked
1 Scotch bonnet pepper, halved, plus more to taste
1/4 cup packed light brown sugar
1 whole free-range chicken (about 5 pounds), cut into 10 pieces
Limes, for garnish
Parsley, for garnish
Smoking chips, soaked in water for 15 minutes

Steps:

  • Begin by making the jerk marinade. Combine all the marinade ingredients in a blender and process until you have a smooth puree.
  • Add chicken pieces into a large resealable plastic bag and pour in the marinade. Put the bag into a baking dish and let marinate in the refrigerator overnight.
  • Preheat grill to high.
  • Prepare a table-top smoker or take a roasting tray, line it with foil and add some soaked wood chips to the bottom. Place a wire rack over the top, upside down, and lay chicken pieces over the chips on the rack. Cover with foil and grill over high heat. Smoke for 10 minutes.
  • Preheat oven to 300 degrees F.
  • Transfer the chicken pieces to a baking sheet and drizzle with extra-virgin olive oil. Bake in the oven "low and slow" until chicken is tender, about 1 hour. Remove the chicken from the baking sheet to a serving platter and garnish with limes and parsley before serving.

LYNN'S FAVORITE JERK CHICKEN

Lynn's Favorite Jerk Chicken image

This recipe came from my brother-in-law with a few variations from me. Wonderful and flavorful with very few carbs. If you like your jerk chicken spicey, add more crushed red pepper flakes and cayenne pepper. Cooking time does not reflect marinating time.

KICKIN' CHICKEN BAKE

Kickin' Chicken Bake image

This delicious twist on the chicken & broccoli crescent ring was a contest winner submitted on one of Emeril's Cooking with Kids specials. A little boy named Noah came up with this version, which I tried immediately and loved. I added jalapenos and more garlic to mine. I use leftover rotisserie chicken, skinned and boned or freshly poached chicken breast meat in this. Also NOTE: The original version called for only 1 can of crecsent rolls and made 1 wreath. However, I found there was a lot of filling, enough for 2 wreaths. I made 1 wreath and saved the extra filling to bake as a separate casserole (bake for the same amount of time and serve with crusty rolls on the side).

Categories     Chicken

Time 40m

Yield 2 wreaths, 16 serving(s)

Number Of Ingredients 13

2 cups cooked chicken, diced
1/4 cup green onion, chopped
1 cup broccoli floret, chopped (lightly steamed-still very crisp, but slightly fork tender)
1/4 cup yellow bell pepper, chopped
1/4 cup red bell pepper, chopped
2 tablespoons jalapeno peppers, seeded, minced (optional)
1/2-1 teaspoon garlic, minced
1 1/2 cups Mexican blend cheese, shredded
1 cup sour cream
2 teaspoons emeril's southwest seasoning
2 (8 ounce) cans crescent roll dough (these can be skipped if not making into wreaths)
1 egg, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, combine all ingredients, except the crescent rolls and egg wash.
  • IF MAKING INTO A WREATH: Divide crescent rolls into 8 equal triangles.
  • Arrange triangles on lightly greased round baking sheet (or pizza stone)in a circle with the skinny pointed ends facing out (like a sun).
  • Spoon chicken mixture around the ring, mainly on the wider parts of the dough, leaving the points exposed.Fold the pointed ends over the chicken mixture, pressing the points down to seal (so it now looks like a wreath).
  • Brush with egg wash then proceed with the baking instructions.
  • IF MAKING AS CASSEROLE:.
  • Sprread filling into a lightly greased casserole dish, cover with foil.
  • TO BAKE EITHER TYPE: Bake for 25 minutes until golden brown, removing foil from casserole in the last 5 minutes.

JERK CHICKEN

Jerk Chicken image

If you like hot-n-spicy, this is the recipe for you. It uses Scotch bonnet chilies, which are very hot. If you'd like to lower the heat, you can use jalapeno peppers instead of Scotch bonnet. The longer you marinate, the more flavorful and spicy the chicken. This recipes serves a lot. Feel free to adjust amounts to suit the number you are serving. Time does not include marinating. From Food & Wine. *The jerk marinade can be made and refrigerated overnight.* A mango or pineapple salsa would be lovely atop this chicken. The Caribbean is only a grill away....

white wine (enough to to fully immerse all of your chicken)
1 yellow bell pepper (Brunoise)
1 orange bell pepper (Brunoise)
1 red bell pepper (Brunoise)
1 yellow onion (Finely chopped)
2 jalapeno peppers
2 serrano peppers
spring onion (chopped)

  • Mix together the spices with the following proportions: 35% salt, 10% pepper, 5% Cayenne pepper, 20% Garlic Salt, 15% Crushed Red Pepper, 13% Tony's, and 2% Paprika. Blend evenly together.
  • PRODUCE: If you buy them pre-chopped, you will be able to skip most of the prep work.
  • Sauté all of your peppers and onions in olive oil until crisp and aromatic.
  • As soon as you finish sautéing the produce, remove container with chicken from the fridge and the lid. Add a generous amount of butter on top of the chicken and then empty your freshly sautéed produce into the container, secure the lid, and place back into the refrigerator for about 30 minutes.
  • After about 30 minutes in the fridge, Preheat oven to 350, remove container from the fridge. Pull out individual chicken breasts, removing all chopped peppers or onions that are stuck to it, season with the mixed spices and place on a hot pan with olive oil.
  • Cook until a nice sear has been achieved on both sides and remove from heat.
  • Pour the ingredients in the container (Wine, peppers and onions, etc) into the frying pan and place the frying pan on the middle rack of the oven for 15-20 minutes. (If you are only cooking one 2 breast halves, pour the entire container into the pan, otherwise, pour until the chicken is half immersed).
  • After 15-20 minutes in the oven, remove pan and allow chicken to rest for about 5 minutes.
  • Pour a portion of the white wine mixture from the pan over the chicken when you plate it for a little extra flavor as well as some of the peppers and onions. Chicken SHOULD be cooked perfectly every time, but ALWAYS check before eating.
