Number Of Ingredients 11

Ingredients

1 (15-ounce) can black beans, drained
2 plum tomatoes, seeded and chopped
1/4 red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
1 clove garlic, finely chopped
1 lime, juiced
Salt
A few dashes hot sauce, to your taste
Chopped cilantro leaves, optional
1 bag (5 ounces) plantain chips (recommended: Goya brand)
1 bag root vegetable chips (recommended: Terra Chips, any variety)

Steps:

Mix first 8 ingredients and garnish with cilantro, optional. Serve with plantain chips and root veggie chips for scooping.

2 cans (15 ounces each) black beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 jar (7 ounces) roasted sweet red peppers, drained and diced
2 plum tomatoes, chopped
1 medium red onion, finely chopped
4 green onions, finely chopped
1/3 cup minced fresh cilantro
2 garlic cloves, minced
1/3 cup orange juice
1 teaspoon ground cumin
1 teaspoon grated orange zest
1/8 teaspoon coarsely ground pepper
Tortilla chips

Steps:

In a large bowl, combine the first 13 ingredients. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.

2 15 oz Cans Black Beans (no-salt-added, drained, rinsed)
2 Cups Grilled Corn Kernels (about 2 cobs, see notes)
2 Cups Chopped Roma Tomatoes
1 Cup Chopped Red Bell Pepper
1 Cup Diced Red Onion
1/2 Cup Chopped Fresh Cilantro
1 TB Diced Green Chiles (or more, to taste)
1/4 Cup Fresh Lime Juice
2 TB Extra Virgin Olive Oil
1 Tsp Minced Garlic
Salt (to taste)

Steps:

Chop and prep all your ingredients. Grill the corn and slice off the kernels if needed, following these instructions.
Add all ingredients to a large serving bowl and toss.
Serve right away or chill and allow the salsa to marinate in the fridge for a few hours or overnight.
