BURGER SLIDERS WITH SECRET SAUCE
These sliders are super easy to put together and are always a hit! I love that they are "fast food" without having to go to a restaurant. - Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. Bake until a thermometer reads 160°, 15-20 minutes., Meanwhile, without separating rolls, cut rolls in half horizontally. Spread 1/4 cup of dressing evenly over bottom halves of rolls., Blot meat with paper towels to remove excess fat; top meat with cheese and return to oven. Bake until cheese has just melted, 2-3 minutes. Place meat on bottom halves of rolls; spread with remaining 1/4 cup dressing. Layer with pickles, remaining 1/4 cup minced onion and shredded lettuce; replace with top halves of rolls. Brush butter on top of rolls; sprinkle with sesame seeds. Serve immediately.

KICKED UP BBQ SAUCE
This is the best BBQ sauce I have every eaten. No kidding! Slightly sweet with some HEAT. Perfect for pulled pork. I actually came up with this recipe after overcooking a pork roast. I wanted an amazing sauce to cover up the fact the meat was dry and stringy. Did the trick. :)

- Bring to a boil, stirring occasionally.
- Reduce heat and simmer for 5 minutes.

KICKED UP BURGER/SLIDER BBQ SAUCE
This recipe was created by my son Kegan O'Killion. It was inspired by a common condiment found in Utah.... Fry Sauce. Fry Sauce is a simple combination of ketchup and mayo. Some call it Thousand Island dressing...maybe! We fooled around with this basic concept and came up with a really tangy BBQ sauce that was presented to his 30 friends at work and they all raved about it.

- Mix the BBQ and mayo together and then mix all the rest of the ingredients together. You may want to play with the amount of garlic and lime juice. Also, I've made this with adobo sauce for extra heat and it came out great.

Steps:
- Melt butter in frying pan and cook onions until soft and translucent.
- In a saucepan combine all ingredients, bring to a boil, reduce temperature and simmer for 30-45 minutes.
- Remove from heat and let cool to room temperature before using.
KICKED UP MARINARA SAUCE
I've made this for years in the kitchen, usually in 3 gallon batches or more. It freezes well and is a good base for meat sauce if you want to add equal portions of browned, ground beef and Italian sausage

Steps:
- Pour 2 of the canned tomates into large bowl and mash into pieces with hands.
- Purree contents of third can and add.
- Dice all the vegetables and garlic and saute in the oil with bay leaf until just tender.
- Add all remaining spices except sugar.
- Stir for one minute.
- Add all remaining ingredients.
- Simmer on low heat in large, non-reactive pot (uncovered) for at least one hour.

KICKED UP SWEET AND SOUR SAUCE
When you dont have time for 'from scratch' cooking and need a great sauce with just a little zip. The list of things you can dip into this sauce is only as limited as your imagination! I have made this using both store bought sweet and sour (duck) sauce and homemade. Good either way but I do like it better with homemade!

- To make the onion rings: in a shallow bowl or pie plate combine flour, salt, pepper, garlic powder, onion power, and paprika. In a bowl add the sliced onions and buttermilk, toss the onions until they are well coated with buttermilk. Remove each onion slice from the butter milk and roll it in the flour. Set onto a plate.
- Add oil to a deep pan, just enough to cover the onion rings. You can also use a deep-fryer for this if you would prefer. Heat oil to 360 degrees and fry the onion rings in batches until golden brown, about 4 minutes. Drain on a plate lined with paper towels. Set aside.
- Line a baking sheet with parchment paper. On the baking sheet, shape the ground beef into a rectangle that is slightly larger than the slider buns. Season on top with salt and pepper.
- Cut the buns in half lengthwise. Take the bottom and top half of the buns and spread a thin layer of butter onto the cut sides.
