KHUBZ (BAHRAIN)

Khubz (Bahrain) image

This recipe Is from week 20 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Bahrain is my 20th stop. Khubz is a kind of pita bread that is traditionally cooked in a clay oven, but this version can also be made in your home oven.

Categories     Breads

Time 3h10m

Yield 6-8 pitas

Number Of Ingredients 6

2 1/2 teaspoons dry active yeast
1 1/4 cups lukewarm water
1 pinch sugar
3 3/4 cups bread flour
1/2 teaspoon salt
2 tablespoons vegetable oil

Steps:

  • Dissolve the yeast and the sugar in about a half cup of the lukewarm water. Let stand until frothy.
  • Sift the flour together with the salt and add the yeast mixture. Knead by hand until the dough is soft, adding water as necessary. Add the oil and keep kneading until the dough becomes elastic and is no longer sticky, which should take about 15 minutes.
  • Now form the dough into a ball and rub all over with a little bit of olive oil, to prevent it from drying out. Cover with a damp cloth and let rise in a warm place until the dough has doubled in size, about 1 to 1 1/2 hours.
  • Punch down and knead for another five minutes or so. Now break the dough into tennis-ball sized portions. Turn out onto a lightly floured surface and roll flat, until each ball is about a quarter inch thick. Dust with flour and transfer to a lightly floured surface, leaving a few inches between each one to allow for rising. Let rise for another 30 to 60 minutes.
  • Oil two large baking sheets. Preheat your oven to 500 degrees. About 10 minutes into the preheating, put the sheets in the oven. Leave them there for another 10 minutes.
  • Now open your oven and quickly transfer the dough balls onto the baking sheets.
  • Bake for 6 to 10 minutes. When the breads are lightly browned, take them out. Let cool.
  • Each piece should have formed a pocket while baking.

MOROCCAN WHITE BREAD RECIPE - KHOBZ

Moroccan White Bread Recipe - Khobz image

A traditional recipe for homemade Moroccan bread or khobz, a Moroccan flatbread served at nearly every meal. This version is for white bread but you can mix in wheat, semolina or other flours.Yields 2 8" loaves.

Provided by Christine Benlafquih | Taste of Maroc

Categories     Bread

Time 1h50m

Number Of Ingredients 7

4 cups white flour (preferably high gluten or bread flour )
2 tsp salt
2 tsp sugar
1 tbsp yeast
2 tbsp oil (olive oil or vegetable oil)
1 1/4 cups water (warm (not hot))
oil, semolina or cornmeal (optional (for preparing the pan))

Steps:

  • Prepare a large baking sheet by lining it with parchment paper OR lightly oiling it OR dusting it with semolina or cornmeal. Set aside.
  • Combine the flour, salt and sugar in a large bowl. Make a well in the center and add the yeast.
  • Add some of the water to the yeast in the well and lightly stir with your fingers to dissolve the yeast (see Recipe Notes below). Add the rest of the water and oil to bowl and stir to combine all ingredients.
  • Knead the dough (in the bowl if it's large enough or on a floured work surface) for 5 to 10 minutes until smooth and elastic. While kneading, work in a little flour or water as needed to ensure the dough is soft and pliable but not sticky.
  • Divide the dough into two smooth mounds and place well apart on the prepared pan. Cover with a towel and leave to rest for 10 to 15 minutes.
  • After resting, pat the mounds of dough into flat, round loaves about 1/4" thick. Cover again with a towel and leave to rise for about an hour (longer in a cold room), until the dough springs back when pressed lightly.
  • Preheat your oven to 435°F (225°C). When the oven is hot, lightly score the top of the bread with sharp knife or poke in several places with a fork.
  • Bake the khobz in the preheated oven, rotating the pan if necessary, for about 20 minutes or golden brown. The loaves should sound hollow when tapped.
  • Transfer the khobz to a rack or towel-lined basket to cool.

KHUBZ MAR OOK - SOFT BREAD SHEETS

Khubz Mar Ook - Soft Bread Sheets image

This recipe comes from Lebanon. It makes those lovely large soft bread sheets. Would be good alone, in a roll with meat and cheese, with dinner or served with a stewed dish from middle east or Africa. Think or another way to use it!!!!

Provided by Ambervim

Categories     Breads

Time 17m

Yield 4-6 20 inch sheets

Number Of Ingredients 3

pita bread, dough (Arabic bread dough or ABM, Pita Pocket Bread (Bread Machine))
flour
oil (for wok)

Steps:

  • Make the dough in your bread machine.
  • Pinch off 3 inch diameter piece of dough.
  • Place on floured surface and roll to 12 inches.
  • Place the back of your hands under the dough and stretch by rotating the dough over both hands. Pull and stretch carefully to increase diamter to about 20 inches.
  • Let it rest 10 minutes.
  • Invert a well-cleaned wok over a medium high heat.
  • Lightly oil the outside of the wok.
  • Heat until a drop of water sizzles.
  • Place the large dough circle on the hot wok and cook until the dough is browned underneath.
  • Turn and brown lightly on the other side.
  • The bread will be soft and floppy.
  • Fold the hot bread and place in a plastic bag.
  • Serve warm or cool in bag and refrigerate.
  • If you prefer baking, the best is to use a stone with a little cornmeal on top and you will have to limit your size to a little less than the size of your stone. You could cook it on your oven floor.
  • Bake in preheated 450F oven. Move up under the broiler to brown just a little if you want.
  • Prep time does not include making of dough in bread machine.

KHUBZ ARABI (PITA OR FLAT BREAD)

Khubz Arabi (Pita or Flat Bread) image

These are Excellent! This recipe takes some time to accomplish, but the end result is a little magic in the kitchen and so satisfying as a cook! The cooking time is per batch - this makes 24 and you'll probably have to do at least 4 batches in your oven depending on the size (of your oven). At least, much of the prep time is inactive time while waiting for the dough to rise. All in all, they are pretty easy to make (if not on a time schedule).
