One 3-ounce package lime flavored gelatin
1 1/3 cups granulated sugar
2 cups sifted all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cups vegetable oil
3/4 cup orange juice
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
5 large eggs, slightly beaten
1/2 cup key lime juice (from about 25 small key limes or 4 large regular limes)
1/2 cup confectioners' sugar
1/2 cup (1 stick butter), room temperature
One 8-ounce package cream cheese, room temperature
One 1-pound box confectioners' sugar

Steps:

  • For the cake: Preheat the oven to 350 degrees F and grease and flour one 9-by-12-by-2-inch cake pan.
  • In a large mixing bowl, mix the gelatin, granulated sugar, flour, salt, baking powder and baking soda. Stir to mix well. Add the oil, orange juice, lemon juice, vanilla, and eggs. Mix until well combined. Pour the batter evenly in the pan and bake for 35 to 40 minutes. Test for doneness by lightly touching the tops or inserting a toothpick. Cool the cake in the pan for 5 minutes then turn out onto a cooling rack.
  • For the glaze: While the cake is still hot, mix the lime juice and confectioners' sugar together well. Pierce the cake with a fork to allow the glaze to soak in better and pour it over the cake on the cooling rack. Allow cake to cool completely as you prepare the icing.
  • For the icing: Cream the butter and cream cheese. Beat in the confectioners' sugar until mixture is smooth and easy to spread. Spread the icing on the top and sides of the cake.

1 (8 ounce) package cream cheese, softened

Steps:

  • Preheat oven to 325°.
  • Spray a 9 x 13-inch baking pan with non-stick cooking spray or grease and flour lightly.
  • In a large mixing bowl, add the cake mix, water, lime juice, lime zest, jello, vegetable oil and eggs.
  • With an electric mixer, blend ingredients together until well combined, about 3 minutes.
  • Pour into prepared pan and bake in preheated oven for 30 to 35 minutes or until a toothpick inserted off center comes out clean.
  • For the frosting, combine the butter, cream cheese and vanilla with electric mixer.
  • Add confectioners sugar and blend until smooth and creamy.
  • Add milk to reach the desired spreading consistency.
  • Spread frosting over cooled cake and garnish with lime zest.

Steps:

  • Preheat oven to 350 degrees.
  • Place dry ingredients (except powdered sugar) into mixing bowl.

3 oz package lime flavored gelatin
1 1/2 c granulated sugar
2 c sifted all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda

1 Tbsp lemon juice
1/2 tsp vanilla extract

CREAM CHEESE ICING:
1/2 c butter, room temperature
1 - 8 oz package cream cheese, room temperature
16 oz box confectioners' sugar

Steps:

  • 1. Preheat oven to 350 degree and flour 3 9-inch-round cake pans. In a large bowl, mix gelatin, sugar, flour, salt, baking powder, and baking soda. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide batter evenly among the 3 pans and bake for 35 to 40 mins.Test for doneness,cool layers in pan for 5 mins., then turn onto racks. While layers are still hot, mix the lime juice and confctioners' sugar and pour over the layers on the racks,. You can pierce the layers with a fork and allow the glaze to soak in better. Let layers cool completely before icing.
  • 2. Cream butter and cream cheese, beat in confectioners' sugar until mixture is smooth and easy to spread. Spread icing between layers and on top and sides of cake. Cream cheese icing is optional. Cake is beautiful and taste great with just the glaze. I prefer icing the cake.

My mile high altitude requires a longer cooking time, so you may have to adjust the timing on this.
