These Keto Skillet Green Beans are a quick and easy side dish made with fresh greens, butter, garlic, salt and pepper and ready in just 15 minutes.

Number Of Ingredients 9

1 lb fresh green beans (washed, dried & ends trimmed)
2 tablespoons avocado oil OR olive oil
2 cloves of garlic
1/3 teaspoon fine sea salt or more to taste
1/4 teaspoon freshly cracked black pepper or more to taste
1/8 tsp onion salt (we use the one from Trader Joe's , optional but so delicious)
1/4 cup water
1/4 cup toasted chopped pecans
1/4 cup toasted sliced almonds

Steps:

  • Heat the oil in a large skillet over medium-high heat until shimmering.
  • Add the trimmed green beans and cook, stirring often, until the beans are bright and glossy and slightly brown.
  • Add the garlic and season with salt, black pepper and optional seasonings. Cook, stirring constantly, until the garlic is fragrant, about 30 seconds.
  • Add water and cover with lid. Cook for another 1-2 minutes until the beans are bright green and crisp-tender.
  • Season to taste as needed and serve with toasted nuts and lemon wedges, if desired.

Keto Smothered Green Beans image

These garlic-seasoned green beans are sauteed until crisp-tender, then topped with cheese and bacon for a delicious keto side dish. Use your favorite seasoning on the beans, or try a different cheese for variety. I like to shred my own cheese as I find it melts better than the bagged variety.

6 ounces center-cut bacon, cut into small pieces
1 tablespoon butter, or as needed
1 pound fresh green beans, trimmed
salt and ground black pepper to taste
½ teaspoon garlic powder
3 tablespoons water
2 cups shredded sharp Cheddar cheese

Steps:

  • Cook bacon in an oven-proof skillet over medium-high heat until brown and crispy, 5 to 6 minutes. Remove with a slotted spoon to a paper towel-lined plate, reserving bacon grease in the skillet. Reduce heat to medium and add enough butter to equal 2 tablespoons of fat in the skillet.
  • Add green beans to the skillet and season with salt and pepper to taste. Sprinkle with garlic powder, toss to coat, and saute for 3 to 4 minutes. Add water to help steam the beans. Continue cooking until water has evaporated and beans are crisp-tender or cooked to your liking, 3 to 4 more minutes.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Top beans with shredded Cheddar cheese and sprinkle with cooked bacon.
  • Place skillet under broiler until cheese has melted, about 1 minute. Serve immediately.
