Instant Pot Cabbage Stew with Ground Beef image

Instant Pot Cabbage Stew with Ground Beef is low-carb, hearty, filling, and made with a few basic ingredients. Perfect for weeknight dinners!

2 tablespoons olive oil
1 sweet onion (diced)
4 cloves garlic (minced)
1 1/2 lbs ground beef
2 tablespoons tomato paste
1 15 oz can fire-roasted tomatoes
1/8 teaspoon red pepper flakes
1 tablespoon sweet paprika (or smoked paprika)
1/2 teaspoon cumin
1 teaspoon oregano
1 green cabbage (medium to large, core removed and roughly chopped)
2 cups beef broth (or chicken broth)
salt and pepper (to taste)

Steps:

  • Turn on the Saute function wait for it to display Hot and add the olive oil. Add the onion once the oil is hot and cook, stirring for 3-4 minutes.
  • Add the garlic and stir for 30 seconds. Add the beef and brown it, breaking it with a wooden spoon, until no longer pink and with brown bits, about 5-7 minutes.
  • Add the rest of the ingredients and stir to combine.
  • Close and lock the lid, point the valve to Sealing and Pressure Cook for 10 minutes, followed by a 5 minutes NPR.
  • Once the pressure was released open the IP, give the stew a good stir and serve.

Keto Instant Pot Cabbage Beef Stew is an easy to make, healthy, budget-friendly, low carb, gluten-free recipe with a paleo & Whole30 option.

1 ½ cups cauliflower florets
1 lb ground beef
1 tbsp olive oil
3 cloves garlic (minced)
¼ cup diced yellow onion
3 cups beef broth
½ cup no sugar added tomato sauce
½ medium-sized head green cabbage (chopped (about 4 cups))
2 tsp sea salt
1 ½ tsp garlic powder
1 tsp paprika
1 tsp dried parsley
1 tsp dried oregano
1 tsp freshly ground black pepper
¾ cup shredded Mozzarella cheese * optional (omit for Paleo & Whole30)

Steps:

  • Add the cauliflower florets to a food processor and pulse until a rice texture forms. Set aside.
  • Select Saute on the Instant Pot and add olive oil. Once the pot is hot add onions and garlic and saute for about 4 minutes or until onions are translucent.
  • Crumble and add ground beef to the pot and saute until browned and the meat is not pink anymore.
  • Add tomato sauce, sea salt, garlic powder, paprika, parsley, oregano, and black pepper and stir to combine.
  • Add the riced cauliflower, beef broth, and cabbage. Gently stir.
  • Cover, lock the lid and flip the steam release handle to the Sealing position. Select Pressure Cook (Manual) on High Pressure and set the cooking time for 15 minutes.
  • Once cook time is complete, let the pressure release Naturally for 10 minutes then Quick release the remaining pressure.
  • Spoon stew into serving bowls, sprinkle each with an optional 2 tbsp mozzarella cheese and serve hot.

3 pounds cubed beef stew meat
salt and ground black pepper to taste
1 (32 ounce) carton no-salt-added beef broth
1 pound sliced fresh mushrooms
3 bay leaves
1 ½ pounds cabbage, diced, or more to taste
1 (15 ounce) can diced tomatoes
2 medium onions, chopped
1 (6 ounce) can tomato paste
2 stalks celery, sliced

Steps:

  • Season beef with salt and pepper. Heat a large skillet over medium-high heat. Cook beef in batches until browned on at least 2 sides, about 5 minutes per batch. Avoid overcrowding the skillet so beef browns and doesn't steam.
  • Add browned beef, broth, mushrooms, and bay leaves to a large pot. Cover and simmer until beef is tender, at least 1 hour and up to 2 hours.
  • Add cabbage, diced tomatoes, onions, tomato paste, and celery. Cook for at least 1 hour more.
