1/2 cup chopped cooked bacon
1/2 cup Original Bisquick™ mix
6 green onions, thinly sliced, whites and greens separated
1 egg
1 teaspoon barbecue seasoning
1/4 cup barbecue sauce
3 slices (1 oz each) sharp Cheddar cheese, quartered

Steps:

  • Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
  • In large bowl, stir beef, bacon, Bisquick™ mix, green onion whites, egg and barbecue seasoning until well mixed. Divide mixture among muffin cups, pressing evenly into cups.
  • Bake 14 to 17 minutes or until meat thermometer inserted in center of loaves reads 160°F. Brush loaves with barbecue sauce. Top with cheese. Bake 1 to 2 minutes longer or until cheese just melts. Top with green onion greens.

1 lb ground beef
2 eggs
1/2 cup diced onion
1/4 cup ketchup
1 teaspoon garlic powder
1 teaspoon onion powder
37 saltine crackers, crushed
1 lb bacon

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl mix ground beef, eggs, diced onions, ketchup, garlic powder, and onion powder. Mixing with your hands is best. Mix it real well.
  • Crush the crackers. I always crush the crackers while still in their sleeve.
  • Pour crushed crackers into beef. Mix the crackers into the beef mixture well.
  • Form into a loaf shape and set to the side.
  • Take the bacon and divide it into even amount.
  • Take 1 half of the bacon and lay side by side long ways.
  • Fold every other bacon strip in half.
  • Lay 1 of the other half of the reserved bacon strips across.
  • Unfold the half folded bacon strip.
  • Fold the other every other bacon strips that were not folded in the previous step.
  • Lay a slice of bacon across and then unfold.
  • Repeat until you run out of room.
  • Start on the other half of the bacon strip until you have made a weave.
  • Pace the loaf shaped beef mixture into the center on your bacon weave.
  • Wap the weave around the beef loaf shaped mixture.
  • Flip the bacon wrapped meat loaf upside down,making the ends of the bacon tuck under the loaf.
  • Place the loaf in the center of the oven on a cookie sheet.
  • It takes about an hour to cook.
  • To make sure it is cooked all the way through, I sometimes use a meat thermometer but that isn't really needed. Sometimes I leave it in for 15 more minutes if I am worried it isn't cooked all the way.

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
2 yellow onions, finely chopped (11/2 cups)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
1 tablespoon brown sugar
2 pounds coarsely ground chuck, preferably 85 percent lean
1 large egg, lightly beaten
1 1/2 cups grated cheddar
8 slices (6 ounces) bacon

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
  • Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. Add onion and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until onion is softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together 1/2 cup ketchup and brown sugar for glaze; set aside. In a large bowl, combine onions with ground chuck, 1 egg, 1/2 cup reserved breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined. Gently fold in cheddar.
  • Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with 1/2 of glaze, then top with bacon, overlapping slices slightly. Brush remaining glaze over bacon. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes.

Steps:

  • Preheat oven to 350° F. Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon.
  • In a medium-sized bowl, mash together beef, onions, bell pepper, garlic, Worcestershire sauce, eggs, oats, salt and pepper.
  • Spread 2 tablespoons of glaze over the bacon in the loaf pan.
  • Then press the meatloaf mixture into the pan.
  • Fold any overhanging bacon over the top of the loaf pan. Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Carefully wrap the ends of the meatloaf with bacon as well, tucking the strips into the other pieces of bacon so it's tight.
  • Bake meatloaf at 350° F for 50 minutes. Remove meatloaf, brush with ketchup glaze and return to oven for another 15-20 minutes. Finished meatloaf should have crispy bacon edges and reach an internal temperature of 165° F in the center of the meatloaf.
  • Let meatloaf rest for 10 minutes before slicing and serving.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) .
  • Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.

  • Preheat oven to 350 degrees F. MEATLOAF: Line your muffin tin with the bacon so that each tin is circled by one strip. Mix together the beef, bread crumbs, onion, egg, salt, pepper, tomato paste, sugar, mustard, and Worcestershire sauce. Form the meat into 12 equally sized balls and place them into the bacon-lined muffin tins. Fold the top of the bacon over, if needed. Pop them into the oven for 45 minutes to 1 hour, or until the meat is cooked through and the bacon is crisp. POTATOES: While the meatloaf is cooking, prepare your mashed potatoes. 1 cup peeled coarsely grated carrot
1/2 onion, finely chopped
1 garlic clove, minced
1/2 lb extra lean ground turkey
1 egg, lightly beaten
1/4 cup finely chopped fresh parsley
1/4 cup seasoned dry bread crumb
2 tablespoons chili sauce
4 slices smoked bacon

Steps:

  • In a large non-stick skillet, heat oil over medium-high heat. Cook carrots and onion until tender and golden about 5 minutes. Stir in garlic and cook 1 minute. Set aside to cool.
  • In a bowl, use your hands to combine the turkey, egg, parsley, breadcrumbs, chili sauce and the cooled onion mixture until just blended. Do not overwork or the mixture will become tough when cooked. Divide into 4 equal portions and shape into thick patty, about 3-inches across. Wrap a slice of bacon around the edge of the each patty. To freeze, wrap individual patties in plastic wrap and store in a resealable plastic freezer bag.

1 large yellow onion, sliced
8 oz. sliced mushrooms
1/2 tsp salt
2 lbs ground beef, 80/20 or 85/15
1/2 yellow onion, diced
3 cloves garlic, minced
1 cup bread crumbs
2 tbsp olive oil
2 eggs
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 tbsp BBQ sauce, plus more for brushing
pinch salt
1 tsp black pepper
1 cup cheddar cheese, cubed or shredded
8-10 slices bacon

Steps:

  • Melt butter over medium heat in large saute pan. Add sliced onions, mushrooms and salt. Stir to combine.
  • Once onions have softened, turn heat down to medium low and let onions and mushrooms caramelize, stirring occasionally until deep golden brown. Remove from heat and set aside.
  • Preheat oven to 375 F. Line a baking sheet with aluminum foil and place a cooling rack on top.
  • In a large bowl combine ground beef, diced onion, garlic, breadcrumb, olive oil, eggs, Worcestershire, Dijon, BBQ sauce, salt and pepper. Mix gently with your hands until fully incorporated, being careful not to over mix!
  • Take half of the meat mixture and form into a rectangle loaf shape on clean surface. Make a indent in the middle and fill with caramelized mushrooms, onions, and cheddar cheese. Take the remaining half of meat mixture and gently seal the edges while smoothing the loaf.
  • Carefully transfer the meatloaf onto the prepared cooling rack-lined backing sheet. Brush loaf generously with BBQ sauce. Wrap bacon slices around the loaf, slightly overlapping and tucking the overhang under the loaf to prevent shrinking. Brush loaf again with BBQ sauce.
  • Bake for 1 hr or until internal temperature of meat is 160 F. (If bacon isn't crispy, turn broiler setting on, and cook additional 2 minutes or until bacon is crispy.)
  • Remove and let cool 10 minutes before serving.
