EASY KETO BUNS
These keto buns are soft, fluffy, and with a tender crumb, you won't believe them to be low carb! Simple ingredients and perfect for hamburgers, sliders, and more!

Steps:
- Preheat the oven to 200C/400F. Line a large baking tray with parchment paper and set aside.
- In a microwave safe bowl, add the shredded cheese and cream cheese. Microwave in 20 second spurts, until the cheese is mostly melted. Remove and whisk together, until combined and smooth. Let the mixture cool slightly.
- Transfer the warm cheese mixture into a food processor. Add the dry ingredients, along with the eggs, and pulse until a thick dough remains.
- Lightly dust a kitchen surface with almond flour. Transfer the dough onto it, and, using slightly wet hands, knead it several times. Once the dough is smooth, divide it into 6 portions. Roll the portions of dough into balls and place them on the lined tray. Press down onto each one into a thinner burger bun shape. Brush the tops with the remaining egg (whisked), before sprinkling the sesame seeds on top.
- Bake the buns for 14-17 minutes, or until golden brown on top. Remove from the oven and let cool for 5 minutes, before slicing in half and serving.

KETO HAMBURGER BUNS (VERSION 2)
The most delicious keto hamburger buns! You can barely taste the difference between these and real ones. All gluten and grain free!

Steps:
- In a mixing bowl, whisk together your dry ingredients, including the instant yeast.
- Slowly pour in the warm water and whisk until incorporated. You should have a thick cake batter type consistency.
- Use wet hands to take a chunk of the dough and form a ball, just slightly bigger than a golf ball.
- Place the dough balls onto a greased/floured sheet pan or make sure it is lined with parchment paper.
- Put the sheet pan into a warm area, away from drafts and let the buns rise for 45 minutes to an hour.
- (I brought my oven up to 50°C, then turned it off and placed the dough in the oven to rise. NOTE: they will rise some more in the oven)
- Once the dough has risen. Spritz with a little bit of water so that the buns won't immediately burn.
- Bake at 375°F / 175°C for 10 minutes or until nicely brown on top.
- Take out and let cool.
- Cut in half and use as a bun for a hamburger!
LOW CARB HAMBURGER BUN
This is a low carb version of a hamburger bun or sandwich roll. Only 3 net carbs per roll. I got this recipe from http://lowcarbeating.com and it's pretty tasty.

Steps:
- Mix together and put in a the microwave and nuke for 1 minute or until center is set. Leave it in the bowl for another minute then turn it out on a cooling rack and let it cool.
- Once it has cooled take a long bread knife and slice the bun in half and make your hamburger as usual.
