This Easy Keto Broccoli and Cheese Casserole is a favorite comfort-food side dish you'll love on a low-carb, gluten-free, ketogenic diet.

8 cups broccoli florets (about 2 large heads)
8 oz cream cheese, softened
1/4 cup sour cream
1 1/2 cups cheddar cheese
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • Preheat the oven to 350F. Prepare a casserole dish with non-stick spray.
  • In a large pot of boiling water, boil the broccoli florets for 4-5 minutes, until crisp-tender. Drain, and set aside.
  • In a large mixing bowl, stir together the softened cream cheese, sour cream, 1 cup of cheese, garlic powder, salt, and pepper. Mix well until combined. Add the broccoli, and stir to coat.
  • Spoon the broccoli into a casserole dish, and top with the remaining 1/2 cup of cheese. Bake in the oven for 15 to 20 minutes, or until bubbly and lightly browned on top.

Broccoli cooked in a creamy garlic butter sauce and topped with cheese and bacon. This flavorful creamy dish is a delicious keto side or a whole meal on its own!

1/2 cup raw bacon (about 4-6 slices) (chopped into small pieces (optional))
1 tablespoon butter
4-5 cloves garlic (minced or crushed)
3 cups broccoli florets
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper (optional)
salt and pepper (to taste)
1 cup heavy cream (or light cream or half & half)
1/2 cup shredded mozzarella (or cheddar, or your favorite melting cheese)
1/4 cup parmesan cheese (optional)

Steps:

  • Pre-heat oven to 400F. In a large pan over medium-high heat, cook chopped bacon for 2-3 minutes or until almost crispy.
  • Remove bacon from pan and to the same pan, add the butter, garlic, broccoli, garlic powder, crushed red pepper and a dash of salt and pepper. Sautee for 2-3 minutes or until the garlic is fragrant. Add the heavy cream, cheese, and cooked bacon.
  • Transfer to preheated oven and cook for 12-15 minutes or until the cheese is bubbly and the broccoli is cooked to desired doneness. Serve as a side or eat as a main meal!

These keto-friendly bites are filled with vegetables and protein thanks to an abundance of broccoli and almond flour, but they are straight-up indulgent when served with ranch dipping sauce that is also keto-friendly. We keep the cayenne optional here but be sure to include it if you want the bites to have a little kick.

Number Of Ingredients 19

2 medium broccoli crowns (about 12 ounces), cut into medium florets and any excess stalks sliced 1/4-inch thick (about 4 heaping cups)
2 cloves garlic, lightly smashed
1 small scallion, thinly sliced (about 2 tablespoons)
1/4 cup fresh flat-leaf parsley leaves
1 large egg plus 1 large egg yolk
1/4 teaspoon cayenne pepper, optional
1 teaspoon paprika
Kosher salt and freshly ground black pepper
3/4 cup almond flour (about 3 ounces)
1 cup finely shredded sharp Cheddar (about 3 1/2 ounces)
Nonstick extra-virgin olive oil cooking spray
1/2 cup sour cream
1/3 cup keto-friendly mayonnaise
2 tablespoons distilled white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Kosher salt and freshly ground black pepper
1 tablespoon fresh dill, finely chopped
1/4 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • Put the broccoli, garlic and 1/4 cup water into a medium heat-safe glass bowl. Wet a paper towel and lay over the broccoli. Microwave until bright green and crisp-tender, about 3 minutes, depending on your microwave. Carefully remove the paper towel, transfer the mixture to a food processor (leaving any water behind in the bowl) and allow to cool for 5 minutes. Clean out the glass bowl and set aside.
  • Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment and set aside.
  • Add the scallion and parsley to the food processor. Pulse until the broccoli mixture is finely chopped and similar to the texture of rice. Transfer to the reserved bowl along with the whole egg, egg yolk, cayenne (if using), paprika, 1 1/2 teaspoons salt, a couple grinds of black pepper, almond flour and 3/4 cup of the Cheddar. Use your hands to mix everything together until well combined.
  • Scoop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them evenly apart, for about 28 total. Lightly wet your hands, then roll each mound into a round ball, re-wetting your hands as needed. This helps keep your hands from becoming sticky and makes rolling the mix much easier to do. Spray the balls with the cooking spray and sprinkle the tops with the remaining 1 cup Cheddar, pressing it gently onto the tops to help it adhere.
  • Bake in the oven until the bites are light golden brown and cooked through, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
  • Meanwhile, combine the sour cream, mayonnaise, vinegar, garlic powder, onion powder, a large pinch salt, several grinds of black pepper, dill and parsley in a small bowl. Whisk to combine and season with more salt and pepper as desired.
  • Transfer the broccoli cheese bites to a platter and serve the ranch dipping sauce alongside.

1/2 cup heavy cream
2 tsp butter
1/2 tsp Dijon mustard

1/4 tsp onion powder

1/4 tsp freshly ground pepper
3 oz (1 cup) grated cheddar cheese

Steps:

  • Place 1 inch of water in a large pot, and bring it to a rolling boil. Add the broccoli, cover with a tight-fitting lid, reduce the heat to low, and simmer until the broccoli is bright green and tender, 8 to 10 minutes. Drain the broccoli and set aside.
  • Meanwhile, in a medium pot, bring the cream and butter to a simmer on medium-high heat, stirring often, until the mixture slightly reduces and thickens, about 5 minutes. Stir in the mustard, garlic powder, onion powder, salt, and pepper. Remove from the heat and slowly whisk in one-quarter of the cheddar cheese at a time, whisking until the mixture is smooth between additions.
  • Divide the steamed broccoli among 4 plates, season with salt and pepper, top each with one-quarter of the cheese sauce, and enjoy.

Cheddar Cheese Sauce, recipe follows
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
Kosher salt and freshly ground black pepper
1 cup grated sharp Cheddar

Steps:

  • Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
  • Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.
  • Melt the butter in a medium saucepan over medium heat until foamy. Spoon the flour over the butter and cook, while stirring, until the flour becomes pasty. Pour in the milk while whisking and season with salt and pepper. Bring to a boil, reduce the heat to a medium simmer and cook for 5 to 8 minutes. Slowly add the cheese by handfuls and stir with a wooden spoon until melted and smooth.
