ALMOND FLOUR KETO BLUEBERRY BREAD RECIPE
Keto lemon blueberry bread is like a low carb blueberry muffin loaf! With just 10 minutes prep in ONE BOWL, almond flour blueberry bread tastes just like the coffee shop, right at home.

- Preheat the oven to 350 degrees F (176 degrees C). Line a 8x4 loaf pan with parchment paper, with the paper hanging over at least the two long sides.
- In a large bowl, stir together the dry ingredients - almond flour, sweetener, baking powder, xanthan gum (if using), and sea salt.
- Stir in the almond milk, melted butter, eggs, and vanilla, until smooth. Stir in the lemon zest (no juice). Fold in the blueberries.
- Transfer the batter into the lined loaf pan. Press evenly to make a smooth top.
- Bake for 40 minutes. Tent the top with foil, then continue baking for 10-15 minutes, until an inserted toothpick comes out clean. Let the bread cool completely before moving out of the pan.
- In a small bowl, make the glaze by whisking together 1 tablespoon lemon juice (15 ml) and powdered sweetener. If glaze is too runny, add more sweetener a bit at a time until you get the consistency you want. Once the bread has cooled, drizzle the lemon glaze over it.

This banana bread is one of the best low carb bread I've ever made. It's moist and doesn't taste healthy or low carb at all. You would be making this every week and will surely blow you away!

- Preheat the oven to 355 degrees F. Line loaf pan with parchment paper all the way to the sides.
- Mash 1 banana in a large size bowl (do not mash the other half, we are going to use it for decoration). Add in eggs, vanilla extract and melted butter. Stir well with a hand whisk until combined.
- In another bowl, mix together almond flour, stevia, cinnamon, and baking powder. Add to the bowl of the banana mixture and stir to combine. Fold in blueberries.
- Transfer banana mixture to the prepared loaf pan, spread the top evenly using an offset spatula. Add the banana on top and sprinkle with crushed walnut all over the top.
- Bake for 40-45 minutes or until the toothpick comes out clean. Start checking at minute 30. Remove from the oven and let it completely cool before taking out of the pan.

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
- Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.
